Herb Garlic Red Potatoes image

Absolutely mouth watering! Delicious as a side dish to any beef, pork or poultry dish.

Number Of Ingredients 9

15 small red potatoes, apprx. 2 lbs.
1/3 c butter
1/4 c dried or fresh parsley
2 Tbsp chives, minced (dried or fresh)
1 tsp dried tarragon
3 clove garlic, minced
5 slice bacon, fried and crumbled
1/2 tsp salt
1/4 tsp pepper

Steps:

  • 1. cut the potatoes in half and place in a saucepan; cover with water and bring to boil. Cook until tender, approximately 15 minutes and drain well
  • 2. In a large skillet, fry bacon until brown on both sides, remove from skillet and drain on paper towels. Drain all but about 2 tablespoons of the bacon grease out of the skillet, Crumble bacon and add to skillet along with all remaining ingredients. Add potatoes to skillet and cook until heated through and potatoes are coated with butter and herb mixture. Serve warm.
