A simple way to treat SMALL duck - and it's a HUGE hit! It's like having steak. Use the breasts, save the rest of the bird for a stew or stock.

¼ cup Worcestershire sauce
2 tablespoons olive oil
½ teaspoon hot sauce
2 tablespoons minced garlic
¼ teaspoon black pepper
8 skinned, boned duck breast halves

Steps:

  • Stir together the Worcestershire sauce, olive oil, hot sauce, garlic, and pepper. Add the duck breasts, and toss well to coat. Cover, and marinate in the refrigerator for at least 30 minutes to overnight.
  • Preheat a grill for medium-high heat.
  • Grill the duck to desired doneness, about 5 minutes per side for medium-well, depending on the size of the breast, and the temperature of the grill.

2 wild ducks (1 pound each), split in half
1/4 cup butter, cubed
1/2 cup ketchup
1/2 cup chopped onion
1 garlic clove, minced
5 teaspoons lemon juice
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon hot pepper sauce

Steps:

  • Place ducks in a 13-in. x 9-in. baking dish. Cover and bake at 350° for 1-3/4 to 2 hours or until tender. , Meanwhile, combine the remaining ingredients in a saucepan; bring to a boil. Reduce heat; cover and simmer for 5 minutes. Baste ducks with sauce during the last 30 minutes of baking time.

1 duck, split in half
1/2 lb butter
1/2 cup ketchup
1 tablespoon sugar
1/2 cup ketchup
1 1/2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
pepper
1 teaspoon salt
1 clove pressed garlic
1 small onion, chopped
1/2 teaspoon Tabasco sauce

Steps:

  • Split duck in half.
  • Flatten and place on rack in shallow pan.
  • Bake in a 375°F oven.
  • Cook all ingredients for sauce for 5 minutes before using.
  • Bast with barbecue sauce every 10 minutes while baking.
  • Cook ducks until cooked through.

8 - 10 ducks
1 stick butter
1 bottle (20 oz.) ketchup
juice of 2 lemons
2 Tbsp vinegar
1 Tbsp prepared mustard
2 1/2 c chopped tomatoes (may use canned)
1 can(s) (10 3/4 oz.) mushrooms
4 celery ribs, chopped
1 medium onion, chopped
1 dash(es) hot sauce

Steps:

  • 1. Parboil and cook duck breasts in pressure cooker until tender.
  • 2. Skin, debone, and set aside.
  • 3. Combine remaining ingredients; simmer slowly 2 hours to make sauce; add hot sauce.
  • 4. Add duck pieces.
  • 5. Great with wild rice.
