I followed the recipe and changed nothing and it was so delicious I could not believe it was the same recipe she used. What was lacking is, is that she did a lot...

1 c sugar
1/2 c half & half (light cream)
1 tsp vanilla

Steps:

  • 1. Preheat oven to 350 Cream butter and sugar, add egg and beat well, add apples Combine dry ingredients and add to cream mixture. Bake in greased 8 by 8 baking dish at for about 45 minutes.
  • 2. Sauce: Heat butter, sugar and cream on low heat for 15 minutes, stirring until slightly thick, add vanilla. Serve over warm pudding.
  • 3. I heat the sauce until hot and then set the timer for 15 minutes and stir constantly until the timer goes off. I also, spoon this all over the top of the warm pudding (it soaks in as it cools) and then wait for it to cool until warm to serve it. I think it taste the best at room temp. Cover loosely or it will stick to the cover. I refrigerate it (if it makes it there) but let it get room temperature before serving it.

BAKED APPLE PUDDING

Another delicious recipe by Lucy Waverman, Food and Drink! Steamed puddings have fallen out of fashion but try this oven-baked pudding - a light, apple-based dessert that will be enjoyed by young and old as a grand finale to Christmas dinner, or any dinner for that matter. With it, you can serve a caramel sauce and a crème anglaise or just plain old-fashioned ice cream.
