2 bananas, mashed
1 egg
1/4 cup oil
1/3 cup low-fat milk
1/2 teaspoon vanilla
3/4 cup sugar
2 medium apples, chopped into small pieces
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 3/4 cups oats
3 teaspoons baking powder
1 pinch cinnamon
1/4 cup raisins or 1/4 cup dried cranberries
1/4 cup walnuts (optional)

Steps:

  • Preheat oven to 350F degrees. Grease a 1/3-cup muffin pan or line with paper cups .
  • In a bowl combine bananas, milk, oil, sugar, vanilla and egg. In another bowl whisk together dry ingredients - flours, oats, cinnamon and baking powder. Add dry mixture to wet mixture, mix well. Dust apples, raisins, and walnuts (if using) lightly to cover with flour, then fold inches.
  • Spoon the mixture evenly into muffin cups. Bake for 20-25 minutes or until tester comes out clean.
  • Make sure you remove muffins immediately after they are done. Let them cool on a wire rack.

Just trying something different. Hope it turns out well. After making this, I believe it would be better to just make one loaf as two were not very big. I changed the directions to accommodate this. If you think you have too much batter for one loaf, make a couple of muffins with the excess.

preheat oven to 375 degrees f.
2 ripe bananas mashed
1 large. fully ripe red delicous apple (or two medium) diced or chopped
1 c sugar
2 eggs beaten
1/2 c margarine softened
2 c self rising flour
1 c uncooked rolled oats ( i used quaker old fashion)
1 tsp ground nutmeg powder
1/2 Tbsp ground cinnamon powder
1/2 c chopped pecans

Steps:

  • 1. Place mashed bananas and chopped/diced apples in a large mixing bowl.
  • 2. add sugar, eggs, margarine and stir mixture until well combined.
  • 3. add flour, rolled oats, pecans and spices and mix well.

1 c boiling water
1/2 c unsalted butter, softened
1 c sugar
1 c brown sugar, lightly packed
2 eggs
1 banana, smashed
1 tsp vanilla extract
1/2 c buttermilk
1 1/2 c diced, apples
1 1/2 c flour
1 1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp nutmeg
FROSTING
4 oz cream cheese, softened
6 Tbsp butter, softened
1 Tbsp milk or cream
1 tsp vanilla extract
1/2 tsp cinnamon
3 c confectioners' sugar

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour and 9 x 13 pan. Set aside. Pour boiling water over oats in a bowl. Leave sit for 20 minutes.
  • 2. In a large bowl, beat butter with sugar and brown sugar until light and fluffy. Add oats, buttermilk and smashed banana. Blend well. Add eggs and vanilla. Beat to incorporate.
  • 3. Sift flour with baking soda, salt, nutmeg and cinnamon. Add to the batter and stir just until dry ingredients are no longer visible. Stir in apples.
  • 4. Spread batter into prepared pan. Bake for 35 to 45 minutes, or until a pick comes out clean.
  • 5. Remove cake from oven. Cool completely in pan.
  • 6. While cake cools, make frosting. Beat cream cheese with butter until smooth and creamy. Add milk, vanilla and powdered sugar. Beat until frosting is smooth and spreadable. Frost cake and enjoy! I frost as I serve.
