SAUTEED BEEF FILETS WITH WILD MUSHROOMS image

Number Of Ingredients 11

4 beef filets, about 6 oz. each
2 t. vegetable oil
2 T shallots, chopped
1 T butter
2 c. wild mushrooms, chopped
1/2 c. heavy cream
2 T parley, minced
Sauce:
1 c. red wine
1 c. balsamic vinegar
Boil until reduced to 1/2 cup

Steps:

  • Heat saute pan on high, add oil, then add beef. Let brown very well for at least 2 minutes per side. Remove meat and place on baking sheet. Bake at 400~ for about 5 minutes for medium rare. Let rest 2 minutes. Using the same pan meat was browned in, saute shallots 1 minute. Add mushrooms and butter, saute 3 minutes or until no liquid is left in the pan. Add cream and cook down 3 minutes or until thickened. Add parsley, season. Cut filets in half. Place bottom half on plates, top with mushrooms, top with other half of filet. Serve with sauce.
