OLIVE GARDEN ALFREDO SAUCE
This is one of the best recipes to make your own version of Olive Garden's famous Alfredo sauce. This recipe is for a large dinner party. Please feel free to scale the recipe down for a small family. Note: Make sure you whisk in the flour early while you are melting the butter with the garlic to avoid a "floury" flavor. The flour is important to avoid a thin sauce. This sauce is very versatile. Add grilled marinated chicken for a great Chicken Alfredo. Add sautéed shrimp and scallops with Old Bay Seasoning, white wine, shrimp stock, and chopped green onions for Seafood Alfredo. Extra sauce can be frozen for later use.

- Whisk in the heavy cream until hot.
- Slowly add the freshly grated cheeses into the hot cream mixture. Finally add the salt and pepper. Stir often to make sure no cheese settles at the bottom.
- Simmer until all the cheeses are melted and the sauce reaches the desired thickness. Do not let this sauce boil, or it will begin to separate and the cheeses will become grainy.
- Serve with pasta and garnish with freshly grated pecorino romano cheese (used by restaurant), if desired.

ALFREDO SAUCE
This is my son's favorite meal. I make it with shrimp for him for his birthday every year. GREAT for company because it is so easy and yet taste wonderful! I cook this in the microwave, but I'm sure you could do it on the stove too. Times are what work in my microwave. Please use your own good judgment on times to use in your microwave. (In my quest to eat healthier, I now make it with light butter, light cream and reduced fat Parmesan cheese. It still tastes wonderful, but there isn't any guilt!) PLEASE NOTE! This is an "authentic" Alfredo sauce recipe! Real Alfredo sauce *only* contains butter, cream, Parmesan cheese and pepper. It will be thin and there is no garlic in it! If you want a thicker sauce or one with garlic like modern restaurants serve, please look elsewhere! Recipe #52892 and Recipe #8596 are two good places to start.

What is Alfredo Sauce?
Alfredo sauce is a creamy white sauce used in Italian cuisine. The sauce is made from butter, Parmesan cheese, heavy cream and garlic. It has a rich, velvety texture and a delicate, buttery flavor. Alfredo sauce was invented by Alfredo di Lelio, an Italian restaurateur in Rome in the early 1900s. Since then, the sauce has become a popular accompaniment to pasta dishes. There are many variations of the basic Alfredo sauce recipe, each with its own unique ingredients and flavors.
History of Alfredo Sauce
Alfredo di Lelio, the creator of Alfredo sauce, was an Italian restaurateur who owned a restaurant in Rome. He invented the sauce in the early 1900s when his wife was pregnant and had lost her appetite. To entice her to eat, he came up with a simple recipe of pasta, butter, and Parmesan cheese. It became so popular that he decided to add it to the restaurant’s menu. The dish was called Fettuccine Alfredo, and it became an instant hit with customers. It was soon imitated by other restaurants in Rome, and it spread throughout Italy and eventually the world.
Types of Alfredo Sauce
Traditional Alfredo Sauce
The traditional Alfredo sauce recipe consists of heavy cream, butter, Parmesan cheese, salt and pepper. The ingredients are combined and cooked over low heat until the sauce thickens. Traditional Alfredo sauce is very rich and creamy and is perfect for pasta dishes such as fettuccine Alfredo.
Light Alfredo Sauce
Light Alfredo sauce is a healthier alternative to the traditional sauce. It is made with milk instead of heavy cream and has a lower calorie count. The sauce is still creamy and flavorful but is lighter in texture and taste. It is perfect for those who want to enjoy the taste of Alfredo sauce without the guilt.
Spinach Alfredo Sauce
Spinach Alfredo sauce is a variation of the traditional sauce. It has an earthy flavor and is perfect for those who are looking for a twist on the classic sauce. Spinach Alfredo sauce is made by adding finely chopped spinach to the traditional Alfredo sauce recipe. The spinach gives the sauce a subtle green color and a healthy boost of nutrients.
Mushroom Alfredo Sauce
Mushroom Alfredo sauce is a rich, earthy sauce made by adding sautéed mushrooms to the traditional Alfredo sauce recipe. The mushrooms give the sauce a meaty flavor and a slightly grainy texture. Mushroom Alfredo sauce is perfect for meatless pasta dishes or as a topping for steaks and chicken dishes.
Roasted Red Pepper Alfredo Sauce
Roasted red pepper Alfredo sauce is a flavorful sauce made by adding pureed roasted red peppers to the traditional Alfredo sauce recipe. The sauce has a slightly sweet taste and a bright red color. Roasted red pepper Alfredo sauce is perfect for pasta dishes such as penne with roasted vegetables.
Tips for Making Alfredo Sauce
Making Alfredo sauce is easy and can be made in just a few minutes. Here are some tips to help you make the perfect Alfredo sauce:
Use Fresh Ingredients
Make sure to use fresh ingredients when making Alfredo sauce. Fresh garlic, butter, heavy cream and Parmesan cheese will all add to the flavor of the sauce.
Use Heavy Cream
Heavy cream is the key ingredient in Alfredo sauce. It adds richness and a creamy texture to the sauce. Don’t substitute it with half-and-half or milk as it will affect the final texture and taste.
Don’t Overcook the Sauce
Overcooking the sauce can cause it to become too thick or curdled. Cook it over low heat and stir it constantly to prevent this from happening.
Add the Cheese Gradually
Add the Parmesan cheese to the sauce gradually, stirring constantly until it melts into the sauce. Don’t add it all at once, as it can clump and ruin the texture of the sauce.
Season the Sauce Properly
Season the sauce with salt and pepper to taste. You can also add other ingredients, such as herbs or spices, to give the sauce more flavor.
In Conclusion
Alfredo sauce is a classic Italian sauce that has become a favorite around the world. Its simple ingredients and rich, creamy texture make it the ideal accompaniment to pasta dishes. There are many variations of the basic Alfredo sauce recipe, each with its own unique ingredients and flavors. By following the tips above, you can make the perfect Alfredo sauce that will delight your taste buds and impress your guests.
Valuable Tips When Making Alfredo Sauce Recipes
Alfredo sauce is a rich and creamy Italian sauce that has become popular worldwide. It is a flavorful sauce that complements pasta dishes, grilled chicken, and seafood. Making Alfredo sauce is easy, but it requires care and attention to detail. Below are valuable tips when making Alfredo sauce recipes:
1. Use quality ingredients
The quality of the ingredients you use will directly affect the quality of your Alfredo sauce. Use high-quality butter, heavy cream, and Parmesan cheese. Avoid using pre-shredded cheese as they often contain additives that affect the texture and flavor of the sauce. Instead, use freshly grated Parmesan cheese for the best result.
2. Cook the garlic properly
Gently cook the garlic in butter until fragrant but not browned. Burnt garlic can ruin the flavor of the entire dish. The key to flavorful garlic is to cook it slowly over low heat until it is soft and aromatic.
3. Don't overcook the cream
Cream can quickly separate when overcooked, leaving a grainy or curdled texture. Once you've added the cream to the pan, cook it until it simmers and begins to thicken. Avoid boiling the sauce, as it can cause the cream to curdle. Turn off the heat once the sauce reaches the desired consistency.
4. Use the right ratio of cheese to cream
The balance of cheese and cream is crucial to the texture and flavor of your Alfredo sauce. Use one cup of heavy cream for every ½ cup of Parmesan cheese. Adding too much cheese can thicken the sauce too much, resulting in a stiff and sticky texture. On the other hand, adding too little cheese can make the sauce too thin and bland.
5. Season the sauce correctly
Seasoning plays a significant role in bringing out the richness of the sauce. Add salt and pepper to the sauce to taste. Be careful not to overdo it, as both seasonings can quickly overpower the flavors of the other ingredients. A touch of fresh grated nutmeg can also add depth and complexity to the sauce.
6. Incorporate the cheese slowly
When adding the cheese, do it gradually and stir constantly to ensure it melts evenly into the sauce. Adding the cheese too quickly can cause it to clump and become grainy, making the sauce unpleasantly lumpy. Stirring the cheese slowly into the sauce over low heat allows it to melt smoothly, giving you a silky-textured sauce.
7. Adjust the consistency with pasta water
If your Alfredo sauce is too thick, add a little pasta water to adjust its consistency. The water from the cooked pasta contains starch, which can help thin the sauce without diluting the flavors. Add a tablespoon of pasta water at a time, stirring constantly, until you reach the desired consistency.
8. Serve the sauce immediately
Alfredo sauce is best served immediately after it is made. If left standing, the sauce can thicken and become less creamy. If you need to hold the sauce, cover it and keep it warm without boiling.
Conclusion
Alfredo sauce is an easy recipe that is versatile and delicious. Follow these valuable tips when making Alfredo sauce recipes, and you'll have a rich, creamy, and flavorful sauce that is sure to impress your family and friends.
