2 garlic cloves
2 teaspoons olive oil
4 small zucchini, sliced (4 cups)
1 tablespoon of fresh mint, snipped or 1 tablespoon fresh basil
1/4 teaspoon salt
1 dash black pepper
2 tablespoons romano cheese or 2 tablespoons parmesan cheese, finely shredded

Steps:

  • In a large skillet heat the oil.
  • Cook whole garlic cloves in hot oil until lightly brown, then discard the garlic.
  • Add zucchini, dried mint (if using), salt and pepper to oil in skillet.
  • Stirring occasionally, cook, uncovered, over medium heat for about 5 minutes or until the zucchini is crisp-tender.
  • To serve, sprinkle with cheese and fresh mint (if using).

2 cloves garlic
1 tablespoon olive oil
4 cups sliced zucchini
1 teaspoon dried mint or dried basil, crushed, or 1 tablespoon snipped fresh mint or fresh basil
1/4 teaspoon salt
Dash pepper
2 tablespoons finely shredded Parmesan or Romano cheese

Steps:

  • In a large skillet cook whole garlic cloves in hot oil until lightly brown; discard garlic. Add zucchini, dried mint or basil (if using), salt, and pepper to oil in skillet. Cook, uncovered, over medium heat about 5 minutes or until zucchini is crisp-tender, stirring occasionally. To serve, sprinkle with Parmesan cheese and fresh mint or basil (if using). Makes 6 servings.

6-8 cherry tomatoes, halved (optional)

Steps:

  • In a large skillet, heat oil and add garlic until just starting to "speak" - about 1 minute.
  • Add zucchini, salt and pepper. Cook uncovered over medium heat for about 5 minutes, until zucchini is crisp-tender, stir occasionally.
  • To serve, sprinkle with cheese and torn fresh basil. Optional - toss and serve with halved cherry tomatoes.
