½ cup butter
2 cups Parmesan cheese
1 cup chopped fresh chives
1 ½ cups cream cheese
½ medium head garlic, peeled and minced
1 pinch salt and pepper to taste

Steps:

  • Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain and return to stove over low heat to dry for 1 to 2 minutes.
  • Add butter, Parmesan cheese, chives, cream cheese, garlic, salt, and pepper. Use a potato masher to mash until smooth, and serve.

Who doesn't love potatoes? I mean, come on. Fry 'em, dice 'em, slice 'em, or bake 'em, there's nothing better than a well-seasoned iteration of a potato. This time, we're mashing 'em. And not only are we mashing them, we're loading 'em up with all sorts of tantalizing flavors to give you, what we proudly call, the Ultimate Mashed Potato. It's an experience, trust us.

2 lb yukon gold potato
½ cup whole milk
½ cup heavy cream
8 cloves garlic, crushed
½ cup unsalted butter, cubed, cold
2 teaspoons kosher salt
freshly ground black pepper, to taste
chive, finely chopped, for serving

Steps:

  • On a cutting board, peel the potatoes. Place the potatoes in a large bowl of cold water after peeling to avoid discoloration.
  • Cut the potatoes into 1-inch (2 cm) cubes.
  • Add the potatoes to a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat to low and simmer for 12 minutes.
  • In a small saucepan, bring the milk, heavy cream, and garlic to a simmer over low heat.
  • Remove the pot from the heat and strain the cream through a fine mesh sieve.
  • Drain the potatoes in a colander and transfer back to the pot.
  • Mash the potatoes with a potato masher, potato ricer, or by pushing through a fine mesh sieve with a spatula.
  • Add the cubed cold butter and salt. Stir to combine.
  • Gradually add the cream mixture to the potatoes, little by little, until fully incorporated.
  • Top with freshly ground black pepper and sprinkle with chives and serve.

3 1/2 cups mashed potatoes (hot or cold, can use a little less)
1 (8 ounce) package cream cheese, softened to room temp
1/2 teaspoon onion powder (or to taste, or use 1/3 cup chopped yellow onion)
2 eggs, slightly beaten
2 tablespoons all-purpose flour
salt and pepper
3 tablespoons butter, melted (see note) (optional)
1 (3 1/2 ounce) can French-fried onions

Steps:

  • Preheat oven to 300 degrees F.
  • Grease a 9-in square baking dish.
  • In a large bowl, mix mashed potatoes with cream cheese, onion, eggs and flour.
  • Beat at medium speed until well blended, then at high speed until light and fluffy.
  • Add salt and pepper.
  • Spoon into prepared baking dish.
  • Top evenly with canned onions.
  • Bake uncovered for 30-35 minutes.
  • NOTE: if the potatoes don't already have butter mixed in with them, add 3 tbsp melted butter, along with all the other ingredients.

6 strips bacon
Fresh breadcrumbs from 10 slices white bread
Nonstick cooking spray
2 cups milk
4 tablespoons unsalted butter
5 pounds russet potatoes, peeled and cut into chunks
Kosher salt
1 cup shredded Cheddar
4 ounces cream cheese, at room temperature
Freshly ground black pepper
3 tablespoons chopped fresh chives

Steps:

  • In a large skillet over medium heat, cook the bacon until crisp. Drain on brown paper. Remove all but 1 tablespoon of fat from the pan. Place the bread slices in a food processor and pulse until coarse crumbs are formed. Reserve 1 cup breadcrumbs for Round 2 Recipe, Fried Potato Cakes. Add the remaining breadcrumbs to the skillet and cook until they are lightly toasted, about 5 minutes. Set aside
  • Preheat the oven to 350 degrees F. Spray a 9 by 13-inch baking dish with nonstick spray.
  • In a small saucepan over low heat, warm the milk and butter.
  • Place the potatoes into a large pot, cover with cold water, add a generous pinch of salt, and bring to a boil over medium-high heat. Cook until tender and they crumble when pressed with a fork, 15 to 20 minutes. When the potatoes are cooked through, drain them well, put them back into the pot, and mash them.
  • Slowly mix in the warm milk and butter mixture until incorporated. Mix in the grated cheese and cream cheese. Don't over mix or the potatoes will become gummy. Season, to taste, with salt and pepper. (Reserve 2 cups mashed potatoes for Round 2 Recipe).
  • Put the potatoes into the prepared baking dish, crumble the bacon over the top, and sprinkle evenly with the breadcrumbs. Bake until heated through and golden brown on top, 25 to 30 minutes. Serve garnished with chives.
