This is a slightly modified version of the classic Weight Watchers recipe that using the spaghetti as the crust! It's yummy and great with a side salad. Enjoy!

6 ounces spaghetti, cooked and drained (do not rinse)
1/4 cup fat free egg substitute
1 tablespoon butter (yes butter!)
1 tablespoon reduced fat parmesan cheese, grated
1 teaspoon dried parsley flakes or 1 tablespoon fresh parsley, chopped
1 lb extra lean ground beef
2 teaspoons olive oil
1 cup bell pepper, diced (use your favourite kind)
1/2 cup scallion, chopped (green onions are fine)
1/2 cup tomato sauce
1/2 teaspoon dried basil
1/2 teaspoon fennel seed, crushed
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
2 1/2 ounces reduced-fat mozzarella cheese, grated

Steps:

  • In large bowl, toss together spaghetti, egg substitute, 2 teaspoon olive oil, Parmesan cheese and parsley; set aside.
  • In large nonstick frying pan, heat last 2 teaspoons of oil; add beef and saute for 2 minutes, breaking up chunks. Add bell pepper and scallions. Cook, stirring, 4-5 minutes, until vegetables are tender and beef is no longer pink. Stir in remaining ingredients except mozzarella cheese; simmer 5-6 minutes, until sauce thickens. Remove from heat and stir in 1 ounce of the mozzarella.
  • Preheat oven to 350°F Spray a 10" pie plate with nonstick spray; spread spaghetti mixture on plate, lining bottom and pressing up sides to form the crust. Cover with foil and bake 30 minutes. Uncover, sprinkle with remaining mozzarella cheese; bake 15 minutes longer. Let stand 10 minutes before serving.

6 ounces uncooked spaghetti
1 pound lean ground beef (90% lean)
1/2 cup finely chopped onion
1/4 cup chopped green pepper
1 cup undrained canned diced tomatoes
1 can (6 ounces) tomato paste
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon sugar
2 large egg whites, lightly beaten
1 tablespoon butter, melted
1/4 cup grated Parmesan cheese
1 cup (8 ounces) 2% cottage cheese
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. Cook spaghetti according to package directions for al dente; drain., In a large skillet, cook beef, onion and green pepper over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Stir in tomatoes, tomato paste, seasonings and sugar., In a large bowl, whisk egg whites, melted butter and Parmesan cheese until blended. Add spaghetti and toss to coat. Press spaghetti mixture onto bottom and up sides of a greased 9-in. deep-dish pie plate, forming a crust. Spread cottage cheese onto bottom; top with beef mixture. , Bake, uncovered, 20 minutes. Sprinkle with mozzarella cheese. Bake until heated through and cheese is melted, 5-10 minutes longer. Let stand 5 minutes before serving.

Think of this pie as a vehicle for leftovers or those stray vegetables you have in your fridge! You could add cooked mushrooms or frozen peas or leftover cooked sausage or chicken. We use spaghetti here, but any long shape of pasta will work just as well.

Kosher salt
3 tablespoons extra-virgin olive oil, plus more for brushing
8 ounces spaghetti
2 large eggs, beaten
1/2 cup plus 2 tablespoons grated Parmesan cheese
1 small onion, chopped
1 small zucchini, chopped
2 cloves garlic, chopped
1 pound ground beef (85% lean)
1 teaspoon dried oregano
Pinch of red pepper flakes
2 tablespoons tomato paste
1 8-ounce can tomato sauce
1 cup fresh ricotta cheese (about 8 ounces)
1 cup grated low-moisture mozzarella cheese (about 4 ounces)

Steps:

  • Position a rack in the lower third of the oven and preheat to 425˚ F. Bring a large pot of salted water to a boil. Brush the bottom and sides of a 9-inch deep-dish pie plate with olive oil.
  • Add the spaghetti to the boiling water and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain the spaghetti and shake the colander to remove the excess water. Put the spaghetti in a large bowl and toss with 2 tablespoons olive oil and 1 teaspoon salt. Add the beaten eggs and 1/2 cup Parmesan, then toss.
  • While the spaghetti cooks, heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add the onion and zucchini and cook until softened, about 5 minutes. Add the garlic and cook until softened, 1 more minute. Crumble in the beef, season with 1/2 teaspoon salt and cook, breaking it up with a wooden spoon, until browned, 3 to 4 minutes. Stir in the oregano and red pepper flakes, then clear a spot in the center of the skillet and add the tomato paste. Let it toast for 30 seconds, then stir into the beef mixture. Add the tomato sauce, 1/2 cup of the reserved cooking water and 1/4 teaspoon salt, then bring to a simmer and cook until very thick, 3 to 5 minutes. Season with more salt to taste.
  • To assemble the pie, transfer the spaghetti mixture to the pie plate and press to form a crust with a flat bottom and slightly higher sides. Spread the ricotta in the spaghetti crust, leaving a border around the edges. Spoon the meat sauce on top, then sprinkle with the mozzarella and the remaining 2 tablespoons Parmesan. Bake until the bottom and sides of the pie are golden and the cheese is browned, about 25 minutes. Transfer to a rack and let cool 5 minutes before slicing.

This is my new favorite and my family goes ga-ga for it. A dinner pie made from a spaghetti/Parmesan pie crust filled with meat and cheese. YUMMY. It's the cottage cheese that makes it great. For some reason my husband hates cottage cheese but loves this. I got this recipe from an OAMC cookbook.

12 ounces dry spaghetti noodles
4 tablespoons butter
1 cup parmesan cheese
4 well beaten eggs
1 lb ground beef
1/2 cup chopped onion
1 (16 ounce) can undrained Italian-style stewed tomatoes
2 (6 ounce) cans tomato paste
2 teaspoons sugar
1 garlic clove (to taste)
2 cups cottage cheese
1 cup shredded cheese

Steps:

  • Cook spaghetti al dente , drain.
  • stir butter into hot noodles.
  • stir in Parmesan cheese and eggs.
  • Use mixture to form crust on bottom of two buttered pie tins or one 9x13 buttered casserole dish.
  • Cook brown meat and onions until meat is browned. Drain.
  • Add tomatoes, tomato paste, suger, and garlic. (plus any other spices you would like for taste).
  • heat.
  • Spread cottage cheese over spaghetti crust.
  • top with meat mixture.
  • Sprinkle grated cheese on top.
  • Bake covered for 35-40 minute at 350. ( if you want to freeze to eat for a later date, just skip baking, wrap with aluminum foil and freeze. when ready to cook, thaw first and then follow baking directions).
  • Remove foil and bake 5 more minutes or until cheese is lightly browned.

I found this in the paper quite a few years back. I believe it's a Mr. Food recipe, but it obviously was printed with errors, because my first attempt was a bomb. I fooled around with it and this is what I have. Feel free to add any additional herbs to the ricotta, are any other ingredients you may like, but this does make a nice meat-free entree. A sald and some crusty bread and you're all set!

8 ounces spaghetti, cooked and drained
2 tablespoons butter
2 large eggs, well-beaten
1/2 cup parmesan cheese, plus
2 tablespoons grated parmesan cheese
1 cup ricotta cheese
1 cup prepared spaghetti sauce, of your choosing
3/4 cup shredded mozzarella cheese

Steps:

  • Toss hot spaghetti in large bowl with the butter.
  • Combine eggs and 1/2 cup grated Parmesan in a small bowl and stir into spaghetti.
  • Pour spaghetti mixture into a lightly greased 10 inch pie plate and form into a crust.
  • Bake approximately 10 minutes in a 350* oven.
  • Remove from oven and spread ricotta evenly over crust, but not to the edge.

  • Top with with shredded mozzarella,and bake until cheese melts - about 5 minutes longer.
  • Remove from oven and sprinkle with remaining 2 tablespoons of Parmesan cheese.
