1 whole roasting chicken, cut into pieces
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon thyme
1/4 teaspoon paprika

Steps:

  • Preheat oven to 375.
  • Prepare the spice blend by combining the ingredients in a small bowl.
  • Place the chicken pieces onto a baking sheet, skin side up. Bake for 20 minute Remove the chicken from the oven and cool for 5-10 minute.
  • When you can handle the chicken, remove the skin, sprinkle the entire surface with a light coating of the spice blend and replace on the baking sheet. Bake 10 min more or until done.
  • 5 Points per serving (6 ounces).

MERMAID'S TENDER ROAST CHICKEN

This is one of my newly adopted recipes. This is Mermaid's original description: The most tender, juicy chicken anywhere. My mom has made this for years. Great with baked potatoes and veggie.

4 lbs whole chickens
2 garlic cloves
3 tablespoons butter
1 onion
2 tablespoons vegetable oil
salt and pepper

Steps:

  • Preheat oven to 325.
  • Place 1 tablespoon oil on the bottom of glass pan.
  • Thoroughly clean chicken, removing all excess from cavity.
  • Put 1 tablespoon oil on a paper towel and lightly rub the chicken down with oil Salt and pepper the skin.
  • Insert 1 tablespoon butter, garlic and some chopped onion into cavity.
  • Place the chicken on it's back and insert one tablespoon of butter between the skin and the breast, for each breast.
  • (You have to kind of pull the skin a little to get the butter underneath it. This is what causes the chicken to be so tender and juicy.) Cook for approx 2 hours, basting every 30 minutes if possible.

Based on a recipe from the November 28-December 4, 2010 WeightWatchers weekly reader. It says, "The chicken is tender and juicy and the sauce has a great salty-savory thing going on. A nice, easy recipe any time of year." My DH and I both love the caper and lemon flavor combination. Yields 2 chicken thighs, ¾ cup string beans, and about 1 ½ tablespoons sauce per serving.

cooking spray, 1 spray
1/4 cup all-purpose flour
1/4 teaspoon black pepper
1 1/4 lbs boneless skinless chicken thighs, about 8 thighs
1 cup canned chicken broth
2 tablespoons fresh lemon juice
1 1/2 tablespoons capers
3 cups string beans, steamed (or roasted)

Steps:

  • Spray a 12-inch nonstick skillet with cooking spray and set over medium-high heat.
  • In small bowl, whisk together flour with pepper. Coat chicken with flour.
  • Brown chicken in a single layer in prepared skillet until golden on bottom, about 6 minutes. Turn chicken and brown on the other side, about 4 more minutes. Remove chicken from skillet and set aside. Note: you may have to brown the chicken in two batches.
  • Pour broth into hot skillet and scrape up any browned bits with a wooden spoon. Return chicken to skillet, cover, and reduce heat to low. Simmer until heated through, about 3 minutes.
  • Stir in lemon juice and capers and heat for 30 seconds.
  • Serve green beans on the side.

2 teaspoons dark sesame oil
1 lb boneless skinless chicken breast, four 4 oz pieces
1/8 teaspoon table salt
1/8 teaspoon black pepper
15 ounces del monte mandarin oranges in light syrup
1/2 cup reduced-sodium fat-free chicken broth
1 tablespoon low sodium soy sauce
2 teaspoons cornstarch

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat.
  • Season both sides of chicken with salt and pepper; add chicken to skillet and cook until golden, flipping once, about 2 minutes per side.
  • Drain oranges and reserve 1/4 cup liquid.
  • Add oranges with reserved liquid to skillet and simmer 2 minutes.
  • Whisk together broth, soy sauce and cornstarch in a small bowl; add mixture to pan and simmer until sauce thickens and chicken is cooked through, about 3 minutes more.

1/8 teaspoon cayenne pepper
1/8 teaspoon fresh ground black pepper
3 ounces buttermilk
3/4 cup corn flake crumbs
1 lb boneless skinless chicken breast

Steps:

  • Preheat oven to 365º.
  • Lightly coat baking dish or cookie sheet with cooking spray, set aside.
  • Combine flour, salt, peppers in medium-sized bowl.
  • Place buttermilk in separate bowl.
  • Place corn flake crumbs in separate bowl.
  • Place chicken in flour mixture, coating each side evenly.
  • Dip coated breast into buttermilk and then corn flake crumbs.
  • Place coated breasts into prepared baking dish.
  • Bake until chicken is tender and no longer pink (20-25 minutes).
