1 C skim milk
1/2 C uncooked cornmeal
2/3 C packed light brown sugar
2 tsp. lemon zest, zested
1/4 tsp. ground allspice
1-1/4 C flour
6 C blueberries
3 tsp. canola oil
1 Tbl. lemon juice
1 large egg
1-1/2 tsp. baking pwder
1/4 tsp. baking soda
1/4 tsp. table salt

Steps:

  • Preheat oven to 350F. Whisk together milk, cornmeal, and 2 Tbl. of brown sugar in a medium bowl. Set aside for a few minutes to allow the cornmeal to soften. In a 2-qt. (13x9-inch), combine zest, allspice, 2 tablespoons of flour and remaining brown sugar, mix in blueberries and level the mixture. Whisk oil, lemon juice and egg into milk mixture. Add baking powder, baking soda, salt and remaining flour; whisk just until combined. Pour batter evenly over blueberries. ake for 40 minutes, or until the fruit is bubbly and a knife inserted into the center of the topping comes out clean. Cut into 12 pieces and serve.

1 1⁄2 cup fresh blueberries, or frozen, thawed
2 tbsp sugar
1 tsp crystallized ginger, minced
1 tsp lemon zest, grated
1 tsp lemon juice
1⁄4 tsp cinnamon
1⁄2 cup reduced-fat baking mix, such as Bisquick
3 tbsp skim milk
1⁄2 tsp sugar

Steps:

  • Prep 10 min
  • Cook 20 min
  • Ready 30 min
  • Preheat oven to 450 degrees F (230 degrees C). Spray two 6 oz ramekins with non-stick cooking spray.
  • In a bowl, combine blueberries, 2 tablespoons sugar, ginger, lemon zest, lemon juice, and cinnamon. Evenly divide between the ramekins.
  • In a separate small bowl, mix baking mix with with milk in small bowl. Spoon half of the batter into each ramekin on top of the blueberry mixture. Sprinkle with 1/2 teaspoon sugar.
  • Place ramekins on a cookie sheet and bake for 20 minutes or until the topping is golden brown and filling is bubbly. Serve with vanilla ice cream, if desired.
