Beet Soup With Greens, Apple Salad and Cilantro-Walnut Pesto image

15 medium beets, trimmed; greens reserved
10 cups beef broth (see recipe)
1 1/2 teaspoons kosher salt, plus more to taste
Freshly ground pepper to taste
1 1/2 teaspoons fresh lemon juice
1 tablespoon olive oil
Beet greens (see above), stemmed and coarsely chopped
1/2 teaspoon kosher salt
Freshly ground pepper to taste
1 teaspoon fresh lemon juice
1 tablespoon olive oil
2 medium onions, peeled, halved and thinly sliced
1 large Granny Smith apple, peeled, cored and grated
1 1/2 teaspoons walnut oil
1 tablespoon fresh lemon juice
1/4 cup coarsely chopped Italian parsley
1/2 teaspoon kosher salt
Freshly ground pepper to taste
3 cups cilantro leaves
3/4 cup walnuts, toasted
1/2 cup olive oil
3/4 teaspoon kosher salt
1 1/2 teaspoons fresh lemon juice
Sour cream

Steps:

  • To make the soup, place beets and broth in a large pot. Bring to a boil. Reduce heat, cover and simmer until tender, about 1 hour. Drain, reserving broth. When cool enough to handle, slip skins off beets. Set aside 2 beets. Place half of the remaining beets in a food processor. Measure broth and add enough water, if necessary, to make 9 cups. Add half of broth to beets and puree until smooth. Repeat with remaining beets and broth. Combine batches and stir in salt and pepper. Reheat before serving and stir in lemon juice and more salt, if needed.
  • To make the beet greens, heat 1 1/2 teaspoons of olive oil in a large skillet over medium heat. Add the beet greens and saute for 10 minutes. Add 1/3 cup of water, cover and cook until tender, about 10 minutes more. Coarsely grate the reserved beets and stir into the greens with 1 1/2 teaspoons of oil, 1/2 teaspoon of salt, pepper and 1 teaspoon of lemon juice. Set aside.
  • Heat 1 tablespoon of oil in a medium nonstick skillet over medium heat. Add the onions and cook, stirring often, until caramelized, about 15 minutes. Stir in the apple, walnut oil, 1 tablespoon of lemon juice, parsley, 1/2 teaspoon of salt and pepper. Set aside.
  • Place the cilantro, walnuts and 1/2 cup of olive oil in a food processor and process until smooth. Add3/4 teaspoon of salt and 1 1/2 teaspoons of lemon juice.
  • Place the beet green mixture, the apple mixture, the pesto and the sour cream in separate bowls. Ladle the soup into bowls. Serve, passing the condiments separately.

Steps:

  • In a small saucepan, combine the first five ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Cool slightly. Transfer to a blender; cover and process until pureed. Strain., In a large saucepan, melt butter over medium heat. Stir in flour until blended. Gradually whisk in milk. Bring to a boil; cook and stir for 1 minute or until thickened. Gradually stir in pureed mixture. Add cream; heat through (do not boil). Garnish with parsley.

buttercup or kabocha; peeled, seeded and cut into 2-inch pieces
2 medium onions, peeled and quartered
3 garlic cloves, peeled
2 tart, firm apples, peeled, cored and quartered
2 tablespoons extra-virgin olive oil
Salt and red chile powder to taste
4 to 5 cups vegetable broth
Cilantro-Walnut Pesto
1 cup walnut pieces
2 cups cilantro leaves, washed, drained and stemmed
1 green jalapeño pepper, seeded and chopped
1 teaspoon salt, or to taste
2 tablespoons cider vinegar

Steps:

  • 1. Preheat oven to 400 degrees. In a large roasting pan, toss the squash, onions, garlic and apples with the oil to coat. Season well with the salt and chile. Roast, stirring every 10 minutes, until the vegetables are fork tender and lightly browned, about 40 minutes. 2. Put half of the vegetables and 2 cups of the broth in a food processor and purée until smooth. Repeat with the remaining vegetables and broth. Return puréed mixture to the pot. If the soup is too thick, add more broth. Correct the seasoning and heat to a simmer. 3. Serve in warm bowls with dollops of cilantro-walnut pesto. PESTO 1. Put the walnuts in a food processor and grind them fine. 2. Add the cilantro, jalapeño pepper, salt, vinegar and 2 to 3 tablespoons of water and blend. Blend in a little more water if necessary to make a thick sauce. Taste and correct the seasoning, adding more salt if necessary.

2 medium lemons
4 large artichokes
2 tablespoons extra-virgin olive oil
1 medium onion, thinly sliced
1 leek, white and pale green parts only, coarsely chopped
4 heads green garlic,* toughest green part removed and coarsely chopped
1 medium Yukon Gold potato, peeled and cut into 1-inch chunks
4 cups chicken stock or low-sodium chicken broth
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
Nettle-walnut pesto crostini
*Green garlic is young garlic before it begins to form cloves. It resembles a baby leek, with a long green top and white bulb, and has a milder flavor than mature garlic. If you can't find green garlic, mild elephant garlic makes a good substitute. Use 4 large cloves.

Steps:

  • Fill large bowl with ice water and juice from 1/2 lemon, then drop same lemon half into water. Cut off artichoke stems and discard. Using serrated knife, cut top inch off artichokes. Working with 1 artichoke at a time, bend back outer leaves until they snap off close to base. Discard several more layers of leaves in same manner until exposed leaves are pale green at top and pale yellow at base. Cut off green tips. Gently pull open center of artichoke and, using melon baller or spoon, scoop out small, purple-tipped leaves and fuzzy choke. Using sharp paring knife, trim outside of base until no dark green areas remain, then quarter artichoke, rub cut surfaces with other lemon half, and drop into water. Trim remaining artichokes in same manner.
  • In heavy 6-quart pot over moderate heat, heat oil until hot but not smoking. Add onions, leek, and garlic, and sauté, stirring occasionally, until soft, about 8 minutes. Drain artichokes and add to pot along with potato chunks, chicken stock, salt, pepper, and 4 cups water. Bring to simmer, then reduce heat to low, cover, and cook until artichokes and potato are soft, about 20 minutes.
  • Working in 4 batches, purée soup in blender until very smooth, then pour through fine-mesh strainer into clean pot. Set over moderately low heat and stir in juice of remaining lemon. Ladle into shallow bowls and gently place nettle-walnut pesto crostini in center of each.

2 shallots, chopped
3 celery ribs, chopped
1 garlic clove, crushed
2 tablespoons all-purpose flour
2 1/2 cups vegetable stock or 2 1/2 cups chicken stock
1 1/4 cups milk
1 1/2 cups dolcelatte (plus extra to garnish) or 1 1/2 cups gorgonzola, crumbled (plus extra to garnish)
2 tablespoons walnut halves, roughly chopped
2/3 cup plain yogurt
salt & freshly ground black pepper, to taste
celery leaves, chopped (to garnish)

Steps:

  • Melt butter in a large saucepan and saute the shallots, celery and garlic for 2 to 3 minutes, stirring constantly, until softened.
  • Add the flour and cook, stirring constantly, for 30 seconds.
  • Gradually stir in the stock and milk, and bring to a boil.
  • Reduce heat to a gentle simmer and add the crumbled blue Stilton cheese and walnut halves.
  • Cover and simmer for 20 minutes.
  • Stir in the yogurt and heat for 2 minutes without boiling.
  • Season the soup to taste with salt and pepper.
  • Transfer to a warm soup tureen or individual serving bowls, garnish with chopped celery leaves and extra crumbled blue Stilton cheese, and serve immediately.

I got the recipe for this cream soup from a book entitled "Soup: superb ways with a classic dish", edited by Debra Mayhew. Its a great book with some interesting international style recipes. This recipe for walnut cream sounded good, so I decided to try it out. It was great!

2 cups unsalted chicken stock or 2 cups vegetable stock
2 cups skim milk

Steps:

  • Trim the cauliflower and break into small pieces.
  • Combine the cauliflower, onion and chicken stock and bring to a boil.
  • Cover and simmer for 15 minutes until cauliflower is soft.
  • Add the milk and walnut pieces, then puree in a blender until smooth.
  • Add soup back to the pot and season with the salt and pepper to taste. Bring once again to a boil. When serving, sprinkle each serving with paprika and chopped walnuts.

8 cups beef stock
3 tablespoons butter
2 onions, finely chopped

1/4 teaspoon dried mint
1 1/2 teaspoons sweet Hungarian paprika

2 teaspoons tamarind paste, diluted in hot stock (can substitute 4 Tablespoons of lemon juice)

Steps:

  • Bring the meat, in one big piece, to a boil in the stock.
  • Skim off the foam as necessary.
  • Reduce heat and simmer, partly covered, for about 1½ hours.
  • Remove and reserve the meat.
  • When the meat has been cooking for an hour or so, melt the butter in a Dutch oven over medium heat, and stir in the onions.
  • Fry for about 10 minutes, stirring occasionally, until the onions are soft and colored.
  • Stir in the flour and cook, stirring, for about a minute.
  • Add 1/2 cup stock and stir until smooth.
  • Stir in the tomato paste and the tomatoes.
  • Whisk in the rest of the stock, add the rice, and simmer, covered, for about 10 minutes.
  • Add all the rest of the ingredients, except for the fresh herbs, and simmer them until the rice is tender--another 10 to 15 minutes.
  • At this point, you can cut the meat into bite-sized pieces.
  • When ready to serve, remove the soup from the heat, stir in the meat pieces and the 1/4 cup of fresh chopped herbs, cover, and let sit for 10 minutes.
  • Stir in the remaining herbs and ladle into bowls.
  • Serve with hearty bread and butter and a good Georgian red wine.

1 1/2 slabs brown candy (peen tong), about 3 ounces

  • Preheat oven at 350°F. In a large saucepan, bring 1 quart water to a boil over high heat. Add the walnuts and boil, uncovered, 1 minute. Drain well. Spread the walnuts on a cookie sheet lined with aluminum foil. Bake 15 to 20 minutes, or until golden and fragrant. Cool on a rack.
  • Place the cooled walnuts in a food processor or blender with 1/2 cup cold water, and process until almost a smooth paste, scraping down sides of work bowl. Add 1/2 cup cold water and process until almost smooth.
  • In a 2-quart saucepan, whisk the rice flour and 1 cup water until smooth. Whisk in the walnut puree and 2 1/2 cups cold water. Heat over medium-high heat, whisking constantly, until mixture comes to a boil. Cut the brown candy into smaller pieces. Add the brown candy, reduce heat to low, and simmer 10 minutes, whisking occasionally. The soup should be the consistency of a light cream soup. 2 cloves garlic, minced
1 onion, chopped
1 cup white wine
1 quart almond milk
2 teaspoons vegetarian chicken-flavored bouillon granules
1 small head broccoli, chopped

1 tablespoon honey
2 tablespoons soy sauce
2 tablespoons cornstarch
¼ cup cold water
3 tablespoons toasted sesame seeds

Steps:

  • Heat the olive oil in a large saucepan over medium heat, stir in the garlic and onion, and cook until the onion has softened and turned translucent, about 5 minutes. Pour in the wine, and bring to a simmer over medium-high heat. Cook for 3 minutes, then add the almond milk, and return to a simmer.

2 cups vegetable or chicken broth
1 cup toasted walnut halves, plus more for garnish
1 ounce packed fresh basil leaves, plus more for garnish
1 cup plain yogurt
1 teaspoon freshly squeezed lemon juice

Steps:

  • Heat oil in a large saucepan over medium-high heat. When it shimmers, add shallots and cook, stirring occasionally, until golden brown, about 5 minutes. Add thyme and garlic and cook until fragrant. Stir in zucchini, salt, and pepper, reduce heat to medium, and cook, stirring occasionally, until zucchini is very soft, about 10 minutes. Add broth and simmer until zucchini is falling apart, about 20 minutes. Place half of the zucchini mixture and half of the walnuts in a food processor fitted with a blade and process until smooth, at least 2 minutes (use caution when blending hot liquids). (Soup can be made through this step up to 3 days ahead. Store soup and yogurt mixture separate and both covered in the refrigerator.)   • Preheat oven to 350 degrees. Place walnuts on a baking sheet and toast in the oven 15 to 20 minutes. When cool enough to handle, rub walnuts between your hands to remove the skins. Chop walnuts coarsely and set aside.
  • Mix together all the remaining ingredients in a large bowl. Taste for seasoning, adding more salt, pepper and/or lemon juice if desired. Then place anywhere from half to three-quarters of the mixture, depending on how thick or thin you want the soup to be, in the bowl of a food processor and process until very smooth. Return to the original bowl, add walnuts and mix well. Cover the bowl and refrigerate at least 4 hours before serving.

1 tablespoon chopped chives
5 cups chicken stock
2 tablespoons cream sherry

1 medium cauliflower
1 medium onion
2 c chicken or veg. stock
2 c skim milk
3 Tbsp walnut pieces
salt and black pepper
paprika and chopped walnuts for garnish

  • 1. Trim cauliflower and break into florets. Put cauliflower, onion and stock into large saucepan.
  • 2. Bring to boil, cover and simmer for about 15 minutes until soft.
  • 3. Add milk and walnuts, whisk with immersion blender until smooth. (or use food processor)
  • 4. Season to taste, heat, garnish and serve.
  • 5. Variation: use 3 Tablespoons ground almonds instead of walnuts.

I recommend that you make a quick stock with the leek greens, onion and turnips trimmings while you chop the vegetables. Just throw them in a pot with a couple of quarts of water, bring to a simmer, cover partially and simmer 20 minutes. Strain through a fine strainer into a bowl. Kale, which comes from the same botanical family as turnips, makes a complementary garnish and the crunchy walnuts contrast beautifully with the smooth, sweet-tasting soup.

1 tablespoon extra virgin olive oil
1 medium onion, chopped
1 to 2 garlic cloves, minced (to taste, optional)
1 1/2 pounds leeks (4 medium), white and light green part only, sliced
1 pound turnips, peeled and cut in wedges
1/4 pound potatoes, peeled and diced, or 1/4 cup medium grain rice
6 cups water or vegetable stock
1 bay leaf
Salt and freshly ground pepper
6 ounces curly kale, stemmed and washed
1 tablespoon walnut oil
1/3 cup (1 1/2 ounces) toasted walnuts, chopped

Steps:

  • Heat the olive oil over medium heat in a large, heavy soup pot or Dutch oven and add the onion. Cook, stirring, until tender, 4 to 5 minutes. Add the leeks and continue to cook, stirring, until they begin to soften, about 3 minutes. Stir in the garlic and cook, stirring, until the garlic smells fragrant, 30 seconds to 1 minute.
  • Add turnips, potatoes or rice, water or stock, bay leaf, and salt, and bring to a boil. Reduce the heat, cover and simmer 45 minutes to an hour. The turnips should be very tender. Remove the bay leaf.
  • While the soup is simmering, blanch the kale in boiling salted water just until tender, 1 1/2 to 2 minutes, or steam for about 3 minutes. Transfer to a bowl of cold water, drain and squeeze out excess water. Place the squeezed bunch of kale on your cutting board and slice into thin slivers. Toss with the walnut oil.
  • Using a hand blender, or in batches in a regular blender, purée the soup. If using a regular blender fill only half way and cover the top with a towel pulled down tight, rather than using the lid, because hot soup will jump and push the top off if the blender is closed airtight. Strain and return to the pot (turnips are fibrous and the soup will have a better texture if you strain it). Return to the pot and heat through, stirring. Season to taste with salt and pepper. Ladle into bowls and top with a spoonful of greens and sprinkling of walnuts.

Buttermilk Cabbage Soup With Black Walnut

Cabbage is a green you can keep in the root cellar deep into the winter, and it is often sliced thin and sautéed in butter or bacon grease as a sturdy side for a cold-weather supper. This soup pairs it perfectly with tangy buttermilk and the fragrantly earthy black walnuts that fall in abundance in the autumn.

Pesto:
6 tablespoons black walnut pieces
4 teaspoons apple cider
Salt
Soup:
1 small (1 pound) head green cabbage
2 tablespoons butter
1 medium white onion, diced
Salt and freshly ground black pepper
3 cups chicken broth
3 cups whole fat buttermilk at room temperature

Steps:

  • Prepare the pesto:
  • In a small heavy skillet over medium heat, toast the black walnut pieces, shaking the pan, until they just begin to turn golden, about 3 minutes. Be careful not to burn them.
  • Put the toasted walnuts in a blender, add the cider and a large pinch of salt, and pulse until a loose, grainy paste is formed. Remove the pesto from the blender and set it aside.
  • Make the soup:
  • Split the cabbage in half, remove the core, and cut each half into 4 wedges. Slice the wedges into thin strips.
  • Melt the butter in a Dutch oven over medium heat, and sauté the onion until it just begins to soften, about 4 minutes. Add the cabbage and a few pinches of salt, and stir well to coat with the butter.
  • Add the broth and bring to a lively simmer. Cover and simmer for 10 minutes or until the cabbage is tender.
  • Remove the pot from the heat and stir in the buttermilk. Return it to very low heat and warm it slowly, stirring as you do, so the buttermilk doesn't curdle.
  • Serve the soup in individual bowls with a tablespoon of the black walnut pesto in the center of each serving. Pass the salt and pepper for additional seasoning.

5 large cucumbers, peeled,seeded and thinly sliced
2 clove garlic,peeled and minced
1/2 c scallions, minced w/tops
1 lemon, juiced
1 qt buttermilk
1 1/2 c plain nonfat yogurt
1 1/2 Tbsp fresh dill, minced
1 tsp salt
1/4 tsp white pepper

Steps:

  • 1. Preheat oven to 350*
  • 2. Place walnuts on a baking tray and toast them in the oven for 15 - 20 minutes. Remove from the oven, coarsely chop and set aside
  • 3. Combine the remaining ingredients in a large bowl. Transfer half of the mixture to a blender or food processer and puree. Continue with another half. Return puree to the bowl, combining with unprocessed ingredients. Mix in reserved walnuts.
  • 4. Cover the soup and refrigerate for at least 4 hours before serving it.
