I found this recipe in the Las Vegas Review Journal.The Zelzah Shriners are bringing 40,000 lbs. of onions to LV to sell. This was one of the recipes that was printed from Folsom Farms in Glennville, GA.

1 large vidalia sweet onion, thinly sliced
3 tablespoons butter
1 3/4 cups sour cream
1/4 teaspoon salt
3 eggs, slightly beaten
3/4 cup milk
2 cups buttermilk biscuit mix

Steps:

  • Preheat oven to 400 degrees.
  • Grease a loaf pan 12x8x2 inch baking pan.
  • Saute onions in 3 tablespoons butter.
  • When onions cool add sour cream.
  • Set aside.
  • Combine salt, eggs, and milk.
  • Add to biscuit mix and stir until moistened.
  • Lightly fold in sauteed onion and sour cream mixture.
  • Turn into pan and bake for 30-45 minutes, with the time depending on the choice of pan.
  • Serves 8.

I got this out of one of Paula Deen's cookbooks and my mother asks me to make her a batch every time I come home to visit. I gave her the recipe, but she says if she makes it she has to clean up the dishes!

1/2 cup butter
1 large vidalia onions or 1 large other sweet onion, chopped
1 (8 ounce) package cornbread mix (Jiffy bread)
1 egg, beaten
1/3 cup whole milk
1 cup sour cream
1 cup grated sharp cheddar cheese
1/4 teaspoon salt
1/4 teaspoon dried dill weed

Steps:

  • Preheat oven to 450°F.
  • Spray 8 inch square bake pan with cooking spray.
  • In a medium saucepan, melt the butter and sauté the onion until tender but not brown, about 3 minutes.
  • Remove the pan from the heat and pour into Mixing bowl.
  • Add remaining ingredients reserving 1/2 cup of the cheese.
  • Pour into prepared pan.
  • Top with 1/2 cup of cheddar cheese.
  • Bake for 30 minutes until set and a toothpick inserted into the center of the bread comes out clean.

4 large vidalia onions, halved and very thiinly sliced
4 tablespoons butter
1 cup milk
2 large eggs, plus
1 egg yolk
1 teaspoon salt
1/4 teaspoon nutmeg
pepper
chopped chives (to garnish)

Steps:

  • Saute onions in the butter, stirring occasionally, until onions are soft& golden Let onions cool to room temp.
  • Meanwhile whisk the eggs, milk& egg yolk together, add salt, nutmeg& pepper Stir in the cooked onions, mix well.
  • Pour into an oven proof buttered dish (1 1/2 qt size).
  • Bake at 325F for 40-50 minutes or until a knife comes out clean when inserted in the center Sprinkle with chives serve hot.

2 tablespoons butter
1 large vidalia onion, halved and sliced
1 1/2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups milk
1 large egg, lightly beaten
1/2 cup shredded sharp cheddar cheese
1/4 cup shredded sharp cheddar cheese
1 tablespoon poppy seed
1 tablespoon butter, melted

Steps:

  • In large frying pan, melt butter over medium-high heat.
  • Saute onions 10 to 15 minutes or until light golden brown.
  • Set aside 2 tbsp of this mixture for the topping.
  • In large bowl, combine flour, baking powder and salt.
  • Stir in milk, egg and 1/2 cup cheese.
  • Add remaining onions.
  • Pour into a greased 9 inch pie plate.
  • Sprinkle 1/4 cup cheese, reserved 2 tbsp onion and poppy seeds over top of bread.
  • Drizzle with melted butter.
  • Bake at 400F (205C) for about 25 to 35 minutes or until golden brown.
  • Cool slightly, cut into wedges.
