Steps:

  • Add all ingredients in a medium bowl; stir till well blended.
  • Add your favorite piece of meat and marinade for 4 -10 hours.
  • Enjoy.

1/2 cup mirin (Japanese Cooking Wine)
2 tablespoons sugar (adjust according to taste)

Steps:

  • Combine in pan and bring to boil stirring often, let simmer on low heat for 3-5 minutes, let cool in fridge 1 hour before marinading (set some aside to brush meat while cooking) marinate meat overnight,Great for Shishkabobs, Yakitori (Grilled) or Broiling (classic method of Teriyaki).

This is a marinade for pretty much anything, steak, salmon, chicken, etc. This is not a thick sauce so it best for just marinading and for basting while bbq'ing. If you are marinating steak, I suggest for 24 hrs, turning over in 12 hrs.

1/2 cup soy sauce
1/2 cup apple cider vinegar
1/2 cup orange juice
1/2 cup crushed pineapple in juice (from Can)
1/2 cup brown sugar
1 tablespoon instant minced garlic
2 teaspoons ground black pepper
1/4 teaspoon cornstarch (for dipping sauce) (optional)

Steps:

  • Place all contents into sealable bag and thoroughly mix. If you want to make a side-sauce for dipping later, remove 1 cup of the marinade and set aside.
  • Add in meat of choice (Beef, Chicken, Pork, etc) and let marinade for minimum of 3 hours (the longer the better; overnight is preferred). Remove meat from marinade and it is now ready to grill.
  • If you wish to make a sauce, heat contents and bring to a slow boil. Mix cornstarch and a small amount of cool water together before adding mixture to sauce. Simmer for a minute or two and remove from heat and allow to cool.
  • Contents of recipe are easily adjusted to make more/less depending on crowd. Works great on just about any meat as well as basted on fish!

2 tablespoons vegetable oil
2 large yellow onions, thinly sliced
4 boneless, skinless chicken breasts
1/3 cup reduced sodium teriyaki sauce
1/4 cup chicken stock or broth
1 tablespoon minced garlic
1/2 teaspoon onion powder
1 1/2 tablespoon light brown sugar
1 teaspoon cornstarch mixed
2 tablespoons water

Steps:

  • With lid off of the pressure cooker, heat oil on Brown or High until sizzling. Add onion and cook until it begins to caramelize, about 8 minutes. Cover with chicken, teriyaki sauce, stock, garlic and onion powder, toss to fully coat. Secure lid, cook on HIGH 8 minutes, perform quick release, remove lid and set to Brown. Whisk brown sugar and cornstarch into 2 tablespoons of water and add to cooker, stirring into the sauce. Simmer 2 minutes to thicken. Serve chicken smothered with heaping spoonful of the onions and sauce.

1 cup soy sauce
1 cup sugar
1 teaspoon grated ginger, very fine
1 large garlic clove, minced
3 scallions, chopped fine

Steps:

  • Mix soy and sugar in small sauce pan over low heat just enough to dissolve sugar. Remove from heat and add remaining ingredients.
  • Let cool and store in a glass jar in refrigerator.
  • A light inexpensive soy works well for this, just make sure it is real not one with caramel coloring as an ingredient. Tamari is a bit too heavy for this, though will work in a pinch.
  • I use my parmesan cheese grater to grate ginger--comes out well that way.
  • This is also great on noodles, tofu, vegetables, added to stir frys, besides grilled meats and burgers.

1 cup granulated sugar (plus 2 tablespoons)
1/2 cup plus 1 tablespoon cold water
6 tablespoons white vinegar
1 1/2 tablespoons red wine vinegar
1 tablespoon arrowroot
1 tablespoon minced onion flakes
2 1/2 teaspoons Dijon mustard
2 1/2 teaspoons mustard powder
3/4 teaspoon celery salt
3/4 teaspoon fresh onion juice (use a garlic press)
3/4 teaspoon poppy seed
1/2 teaspoon onion salt
1/4 teaspoon garlic salt (plus 1/8 teaspoon)
1/4 teaspoon paprika (plus 1/8 teaspoon)
1/4 teaspoon black pepper (plus 1/8 teaspoon)
1 -2 drop sesame oil

Steps:

  • WHISK sauce ingredients together in a small saucepan (1 cup plus 2 tablespoons granulated sugar, 1/2 cup plus 1 tablespoon cold water, 6 tablespoons white vinegar, 1 1/2 tablespoons red wine vinegar, 1 tablespoon arrowroot powder, 1 tablespoon minced onion flakes, 2 1/2 teaspoons Dijon mustard, 2 1/2 teaspoons mustard powder, 3/4 teaspoon celery salt, 3/4 teaspoon fresh onion juice, 3/4 teaspoon poppy seeds, 1/2 teaspoon onion salt, 3/8 teaspoon garlic salt, 3/8 teaspoon paprika, 3/8 teaspoon black pepper, 1-2 drops sesame oil).
  • BRING mixture to a boiling while whisking constantly.
  • REDUCE heat to low simmer, stirring until thickened and flavorful, about 5 minutes.
  • ALLOW to cool, then refrigerate in a sealed container (keeps indefinitely).
  • SERVE as a dressing for sandwiches or salads and enjoy!

1 cup soy sauce
4 1/2 teaspoons rice vinegar
1 teaspoon sesame oil
1/3 cup sugar
7 garlic cloves, minced
1 tablespoon fresh ginger, minced
1 dash red pepper flakes
black pepper

Steps:

  • Bring mirin to a boil in a saucepan over high heat.
  • Reduce heat to medium-low, and simmer for 10 minutes.
  • Pour in soy sauce, rice vinegar, sesame oil, and sugar.
  • Season with garlic, ginger, pepper flakes, and black pepper; simmer an additional 5 minutes.
  • Store in a tightly sealed container in the refrigerator.
