CHICKEN TORTILLA CASSEROLE image

Yield 8-10 servings

Number Of Ingredients 8

4 chicken breasts (or 1 rotisserie chicken)
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup milk
1 small minced onion
2 small cans chopped green chiles
3 cups cheddar or mexican blend cheese, grated
1 dozen corn tortillas, cut in 1" wide strips

Steps:

  • Cook chicken in oven, wrapped in foil so it doesn't dry out, at 425 for 30 minutes. Tear into chunks while still hot. Mix soups, milks, green chiles, & diced onion together. Layer a casserole with: tortilla strips chicken chunks soup mixture cheese Repeat layers as often as necessary depending on dish. Bake at 300 covered for 45 minutes. remove cover & bake an additional 45 minutes uncovered. May make a day ahead & reheat.
