Vegan bread pudding is easy and simple to make, and you probably have all or most of the ingredients in your cupboard or refrigerator already.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Place bread cubes in a 9-inch baking pan. Stir soy milk, raisins, sugar, almonds, vanilla extract, and cinnamon together in a separate bowl and pour over the bread. Mix to combine.
- Bake in the preheated oven until golden brown and heated through, about 30 minutes.

- Preheat oven to 350 degrees and grease a 9 x 5 loaf pan with softened margarine. Place cubed bread in a large bowl.
- In a small bowl whisk together ½ cup soy milk and the arrowroot powder till no lumps remain. Add 1½ cups soy milk, maple syrup, vanilla, cinnamon and nutmeg and whisk to combine.
- Pour over cubed bread and stir to coat every piece. Allow to sit for at least 15 minutes for liquid to soak into bread. Depending on what kind of bread you use and how stale it is, add more soy milk (¼ cup at a time) and allow more soaking time till every piece of bread is saturated and there's a little bit of extra liquid. Mixture should look mushy and wet.
- Fold in chocolate chips and bananas (using hands is the easiest for this), mashing up a little bit of the bananas.
- Pour mixture into loaf pan, patting down to make an even top.
- Bake 28-35 minutes till top is puffed, slightly browned and feels firm. Allow to cool slightly before slicing and serving. Also pudding can be scooped with an ice cream scoop when slightly cooled.

- Mix the cornflour, soya milk, cinnamon, lemon zest, vanilla and maple syrup together in a pan and whisk until smooth. Set over a low heat and cook, whisking continuously, for 8-10 mins until the mixture has thickened slightly to a thin custard that just coats the back of a spoon.
- Lightly oil roughly 20 x 25cm wide baking dish. Cut the crusts off the bread, if you like, and arrange in the dish, overlapping slightly. Stir most of the dates into the custard, then pour over the bread, pressing the bread into the mixture gently with the back of a spoon to help it absorb the liquid. Leave to soak for 15 mins.
- Heat the oven to 200C/180C fan/gas 6. Scatter the chocolate chips and remaining sliced dates over the bread pudding, and bake for 20-25 mins until golden and crisp at the edges. Leave to rest for 10 mins before serving with a spoonful of vegan plain yogurt or dairy-free ice cream, if you like.

VEGAN RASPBERRY-ALMOND BREAD PUDDING

- Preheat the oven to 375°F. Lightly coat a 9-inch baking pan with oil or cooking spray.
- Cut the bread into 1/2- to 3/4-inch cubes and place in the prepared pan. Combine the almond milk, sugar, and cinnamon in a bowl and pour over the bread. Add the raspberries to the pan and stir until just combined. Bake for 45 to 50 minutes, or until the center is set.

- Almond milk is made from grinding almonds and water. It's easier to buy it, but if you wanted, you could actually make it at home. Unlike cow's or goat's milk, it doesn't have any cholesterol, and it's also free of lactose. It was widely used in Europe, the Middle East, and into Asia in the Middle Ages, for a number of reasons, not least because animal milk wouldn't keep for long without spoiling, so it was usually immediately made into butter or cheese.
CHEF JOEY'S VEGAN BREAD PUDDING
This pudding is delicious and not overly sweet. I used part of a spelt baguette cut up into cubes for this. It was good and stale which your bread should be for this sort of recipe. I topped it off with my Vegan Vanilla Sauce

- Preheat your oven to 350'F.
- Put the margarine in a bowl big enough to accommodate 2 cups of milk.
- Put the sugar, cinnamon and salt into another bowl and mix well.
- Put the milk in a saucepan and heat until just before the boiling point.
- Pour the heated milk into the bowl with the margarine in it. Mix until the margarine is completely melted.
- In a 9x13" oven safe dish add the bread and raisins.
- Mix the egg replacer with water. I use 1 1/2 teaspoons of egg replacer and two tablespoons of warm water. Stir to incorporate.
- Gradually add the egg replacer to the milk mixture.
- Add in the cinnamon, sugar and salt mixture into the milk mixture. Mix this well.
- Pour the milk mixture over the bread and raisins and carefully move the bread around so that ll the pieces are soaked in the milk.
- Put the dish with the prepared bread pudding into a larger dish and put it into the preheated oven.
- Pour the hot water into the outer dish being careful not to get any in the pudding dish.
- Bake for 40-45 minutes.
- The custard should be creamy. Remember you didn't use eggs here so it won't be set exactly the same. As it cools it will firm up a bit.
- Serve either warm or cold, plain or with your favourite sauce.

- In large bowl, beat together milk, vanilla, sugars, and eggs.
- Tear bread into 1 inch pieces and stir into liquid mixture.
- Stir in the apples.
- Pour the batter into an 8x8 baking dish.
- To make a water bath (this is an easy way to ensure even cooking), take a slightly larger pan and pour hot water into it. Place the 8x8 pan into the water bath (water should rise halfway up the pan).

- In a large bowl, whisk together soymilk, sugar, maple syrup and vanilla. Add the bread cubes, let sit about 10 minutes, or until bread is soft and has absorbed most of the milk. Add the raisins and a few sprinkles of cinnamon and gently mix together. Don't over mix it. Scoop mixture into lightly greased 8x8 pan. Lightly sprinkle top with a little more cinnamon.
- Bake pudding in preheated oven for 30 to 45 minutes, or until puffed and golden and milk has been absorbed.

VERY VANILLA TOFU BREAD PUDDING (VEGAN)
I just love the flavor of Vanilla and I was happy to discover a new product called Silken Creations at my local Sunflower Market. It's a starter for smoothies and desserts. I am replacing the eggs and milk in the recipe with this. I used some vegan non-gluten bread I made in this recipe but you can use regular. Just make sure it's stale bread. That always works the best. You can removed the crusts if you wish, but I don't I like them.

- Oil a 9 inch casserole dish.
- Cut your bread into cubes.
- Put the Silk Creations in a large bowl and add your bread, vanilla and raisins.
- Stir well to coat the bread.
