My friends' Vicky and Vilma were having a party for some friends who came from Cuba but they lived in Mexico for about 10 years. So we scouted about for recipes for their "new taste buds" because Cuban food is bland. These nachos were liked by all and not too many of us noticed the heat! I know there are many of you out there that like things even hotter; go ahead doctor it up! Great for Super Bowl Sunday!

1 (13 1/2 ounce) bag large tortilla chips
1 cup refried beans
3/4 cup shredded monterey jack cheese
3/4 cup shredded cheddar cheese
1/2 cup chopped pickled jalapeno chile
1 small jalapeno chile, seeded, ribs removed, and minced
1/2 cup canned sliced black olives
fresh cilantro leaves
chili sauce (optional) or hot pepper sauce (optional)
chopped tomato, for serving (optional)
sour cream, for serving (optional)

Steps:

  • Preheat oven to 400°.
  • Top each chip with about 1 teaspoon beans and 1 1/2 teaspoons cheese; evenly divide chiles and olives among chips.
  • Transfer to an ovenproof serving platter, forming layers; add chili sauce.
  • Bake until heated through and cheese melts, 3 to 5 minutes.
  • Remove, and garnish with cilantro leaves.
  • Serve immediately topped with tomatoes and sour cream, if desired.

12 tortilla chips
1/4 cup refried beans
3 tablespoons shredded Monterey Jack cheese
3 tablespoons shredded cheddar cheese
2 tablespoons canned sliced black olives
12 fresh cilantro leaves
2 tablespoons chopped pickled jalapeno chiles

Steps:

  • Place tortilla chips in a single layer on a microwavable plate or tray. Top each chip with 1 teaspoon beans and 1 1/2 teaspoons cheese. Evenly divide the chiles and olives among the tortilla chips.
  • Microwave on high until the cheese is melted, about 1 minute. Remove, and garnish with cilantro leaves. Serve immediately.

I got this recipe off Martha Stewart's website. It's absolutely WONDERFUL! I love pumpkin, but it's just not in enough things. So here's a good cheesecake for you. Hope you enjoy it! My Notes: I don't use the pecans in the crust, but it's because I'm allergic to some nuts, and I don't like to push my luck. I'm sure they'd be wonderful in there, though. If you don't use them, you could probably just toss a few more cookies worth of crumbs in like I do.

8 ounces gingersnap cookies, crumbled (about 32 cookies)
1/2 cup finely chopped pecans (optional)
4 tablespoons unsalted butter, melted
2 tablespoons sugar
1 teaspoon ground cinnamon
3 tablespoons all-purpose flour
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg (I used ground)
4 (8 ounce) packages cream cheese, room temperature
1 1/2 cups sugar
1 (15 ounce) can unsweetened pumpkin puree
3 tablespoons Bourbon
2 teaspoons pure vanilla extract
4 large eggs
whipped cream, for serving (optional)

Steps:

  • Preheat oven to 325°.
  • Place gingersnaps in the bowl of a food processor, and process until finely ground.
  • Add pecans, melted butter, sugar, and cinnamon.
  • Process just until combined and the mixture holds together.
  • Transfer the cookie mixture to a 9-inch nonstick springform pan, and pat out evenly to make the crust, lining the sides of the pan about 1 1/2 inches of the way up.
  • Bake for 10 minutes. Cool completely on a wire rack.
  • In a small bowl, whisk together flour, ginger, cinnamon, and nutmeg; set aside.
  • In another bowl, beat the cream cheese and sugar on medium speed until light and fluffy, about 2 minutes.
  • Add pumpkin, bourbon, vanilla, and flour mixture. Beat to combine.
  • Add eggs, one at a time, beating to incorporate after each addition.
  • Pour batter into prepared crust.
  • Wrap the outside of the springform pan with a double layer of aluminum foil.
  • Place in a roasting pan. Add enough hot water to come halfway up the sides of the springform pan.
  • Bake until cake is set in the center, about 1 hour and 45 minutes.
  • Remove from water, and cool on a wire rack.
  • Remove foil, and refrigerate for at least 4 hours and up to overnight.
  • Serve with whipped cream, if you'd like.

Despite its traditional game-day look, this glorious spread is nacho average Super Bowl snack. In a huge win for vegetarian sports fans, we swapped ground beef for portobello-mushroom caps stewed with black beans, lentils, and fire-roasted tomatoes.

8 ounces portobello-mushroom caps, chopped (3 cups)
1 tablespoon extra-virgin olive oil
1 red onion, chopped (1 1/2 cups) and divided
3 cloves garlic, minced (1 tablespoon)
1 serrano chile, ribs and seeds removed, finely chopped (2 tablespoons), plus more, sliced, for serving
3 tablespoons chili powder
Kosher salt (we use Diamond Crystal) and freshly ground pepper
1 cup brown lentils, rinsed
1 can (15 ounces) crushed fire-roasted tomatoes
1 can (15 ounces) black beans, drained and rinsed
1 bag (1 pound) tortilla chips
8 ounces cheddar or Monterey Jack, or a combination, shredded (2 cups)
Chopped tomatoes, fresh cilantro leaves, and lime wedges, for serving

Steps:

  • Preheat oven to 375°F. In a medium saucepan, cook mushrooms over medium-high heat, stirring occasionally, until liquid evaporates and they're browned in places, 4 to 5 minutes. Add oil, 1 cup onion, garlic, and chopped chile; cook until softened, 5 to 6 minutes.
  • Add chili powder, 1 3/4 teaspoons salt, and 1/4 teaspoon pepper; cook until fragrant, about 2 minutes more. Stir in lentils, crushed tomatoes, and 3 cups water. Bring to a boil, then reduce heat to low and simmer, partially covered, until lentils are tender and sauce has thickened slightly, 25 to 30 minutes. Stir in beans; cook until warmed through, 1 to 2 minutes. Season with salt and pepper.
  • Spread half of tortilla chips in an even layer on a rimmed baking sheet. Top evenly with half each of lentil mixture and cheese. Repeat with remaining chips, lentil mixture, and cheese. Bake until cheese melts, 8 to 10 minutes. Top with tomatoes, cilantro, remaining 1/2 cup onion, and sliced chile; serve immediately with a squeeze of lime.

2 cups Easy Beef Chili
1 can (15 ounces) drained and rinsed black beans
2 cups shredded cheddar cheese
Sliced radishes and jalapenos, and cilantro leaves, for topping
Sour cream, salsa, and sliced avocado, for serving

Steps:

  • Preheat oven to 425 degrees, with rack in upper third.
  • Spread 5 cups chips in a 12-inch heavy-bottomed skillet (preferably cast iron). Top with 1 cup chili, then half the beans and 1 cup cheese. Layer with remaining 5 cups chips, 1 cup chili, remaining beans, and 1 cup cheese.
  • Bake until cheese is melted and bubbly, 5 to 7 minutes. Top with radishes, jalapenos, and cilantro; serve with sour cream, salsa, and avocado.

KETTLE-CHIP NACHOS

It's hard to improve on this Game Day classic, but we did, by swapping in kettle chips and melted Gouda and blue cheese.

1 bag (8 ounces) kettle potato chips, such as Cape Cod
2 ounces cream cheese
1/2 cup whole milk
1/2 cup crumbled blue cheese
1 1/2 cups shredded Gouda (5 ounces)
Kosher salt and freshly ground pepper
2 teaspoons hot sauce, such as Frank's
1 thinly sliced jalapeno (1/4 cup)
1/2 cup sour cream
2 tablespoons chopped chives (from 1 bunch)

Steps:

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment; spread chips out in a single layer. In a small saucepan, whisk together cream cheese and milk over medium heat until combined, 2 minutes. Whisk in blue cheese and 1/2 cup Gouda. Bring to a boil and cook, whisking constantly, until thickened, 5 minutes. Stir in 1/4 teaspoon salt, 1/8 teaspoon pepper, and hot sauce.
  • Drizzle cheese sauce evenly over chips, then sprinkle with remaining 1 cup Gouda. Bake until bubbly and crisp at edges, 5 to 7 minutes. Top with jalapeno, sour cream, and chives; serve.
