2 tablespoons olive oil
1 large onion, chopped
2 large garlic cloves, finely chopped
3 celery stalks, chopped
2 carrots, diced
1 large red bell pepper, chopped
8 cups (or more) canned low-salt chicken broth
2 cups dried farfalle (bow-tie) pasta
2 cups diced cooked turkey
2 tablespoons fresh lemon juice
2 teaspoons grated lemon peel
1/2 10-ounce package ready-to-use spinach leaves (about 6 cups)
Grated Parmesan cheese

Steps:

  • Heat oil in heavy large pot over medium heat. Add onion and garlic and stir 1 minute. Add celery, carrots and red bell pepper and sauté until vegetables are tender, about 8 minutes. Add 8 cups broth and bring soup to a boil. Reduce heat to medium-low; simmer to blend flavors, about 20 minutes. Add pasta and simmer until pasta is tender, stirring occasionally, about 10 minutes.
  • Mix turkey, lemon juice and lemon peel into soup. Add spinach. Simmer until spinach wilts but is still bright green, stirring occasionally, about 3 minutes. Thin soup with additional chicken broth, if desired. Season soup to taste with salt and pepper.
  • Ladle soup into bowls. Serve, passing cheese spearately.

For the Meatballs:
10 oz 93% ground turkey
2 tbsp seasoned whole wheat breadcrumbs
2 tbsp grated parmesan cheese (Parmigiano Reggiano)
2 tbsp parsley, finely chopped
1 large egg
1 clove garlic, minced
1/8 tsp kosher salt
For the soup:
1/2 tbsp unsalted butter
2 stalks of celery, chopped
1 small onion, chopped
1 large carrot, peeled & chopped
2 cloves of garlic, minced
4 (14.5 oz) cans reduced sodium chicken broth (I used Swansons)
1 small Parmigiano-Reggiano rind (optional)
9 oz refrigerated spinach cheese tortellini (Buitoni)fresh ground black pepper, to taste
3 cups loosely packed baby spinach
fresh grated Parmigiano-Reggiano for topping

Steps:

  • Combine the ground turkey, breadcrumbs, egg, parsley, garlic, salt and parmesan cheese. Using your (clean) hands, gently mix all the ingredients well until everything is combined. Form small meatballs, about 1 tbsp each, you'll get about 20 to 22. In a large nonstick pot or Dutch oven, melt the butter over medium-low heat. When melted, add the celery, onion, carrot & garlic. Cover and reduce heat to low and cook for approximately 8-10 minutes until vegetables begin to soften. Add the chicken broth and parmesan rind and increase heat to medium-high and bring to a boil. When broth boils, season with black pepper to taste. Reduce heat to medium and gently drop in the meatballs. Cook about 4 minutes. Add the tortellini and simmer until cooked according to package directions, about 7 minutes. Once cooked, remove the rind, and add the baby spinach. Stir to combine and serve topped with fresh grated Parmigiano Reggiano.

1 Tablespoon olive oil
1 Tablespoon minced garlic
½ cup diced yellow onion
5 cups chicken broth
Salt/pepper (to taste)
1 pound ground turkey
1 Tablespoon lemon juice
½ teaspoon thyme
3 cups fresh spinach
15.5 oz. Cannellini Beans (drained/rinsed)
¼ cup Parmesan (shaved, to garnish)

Steps:

  • In a large soup pot or dutch oven, heat the olive oil over medium heat. Add the onions and garlic and cook until they are soft and translucent, about 5 minutes.
  • Add the chicken broth to the pot and bring to a gentle boil.
  • Season the raw turkey with desired amounts of salt and pepper. Drop them into the broth in bite-sized pieces. You can roll them neatly or just drop in pieces.
  • Add in the lemon juice and thyme, and let the soup bubble gently for about 15 minutes
  • Reduce the heat to medium-low. When you're ready to serve, add the spinach and Cannellini beans and simmer until the spinach is wilted, about 2 minutes.
  • Top each bowl with Parmesan cheese if desired and serve! (This soup is delicious with crusty bread!)

I started out with a recipe for making Black Bean & Turkey Chili, but what I ended up with was an Italian style turkey spinach soup. I had a container of spinach that needed to be used (no one here really likes it in salads, except me) and this is what I came up with. Sure tasted good on a cold winter evening. This is also WW friendly at 3 points per serving (1 1/2 cups).

1 1/4 lbs ground turkey breast
1 large onion, thinly sliced
2 garlic cloves, minced
1 (6 ounce) can tomato paste
2 (14 1/2 ounce) cans Italian tomatoes
4 cups fat free chicken broth
2 cups water
1 teaspoon dried oregano
1 teaspoon dried basil
2 tablespoons dried parsley
2 ounces gluten-free pasta, shell shaped (can use regular pasta)
6 ounces fresh spinach

Steps:

  • Spray a large dutch oven with cooking spray.
  • Brown turkey, onions, and garlic over medium heat until no longer pink.
  • Add remaining ingredients and stir well.
