TUNA MELTS ON ENGLISH MUFFINS

Tuna with style! That's what mom always said when she made these tuna melts on English muffins for her lady friend gatherings.

¼ stick butter
1 small onion, finely diced
¼ teaspoon minced garlic
½ teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon chopped fresh cilantro
¼ teaspoon onion powder
¼ teaspoon sea salt
¼ teaspoon ground black pepper
2 (5 ounce) cans albacore tuna packed in water, drained
½ cup mayonnaise
3 English muffins, split
1 large vine-ripened tomato, cut into 6 slices
6 slices American cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Melt butter in a small frying pan over low heat. Add onion and garlic and saute over low heat until soft and translucent, 5 to 7 minutes. Stir in seafood seasoning, cilantro, onion powder, salt, and pepper. Remove from heat.
  • Combine tuna and mayonnaise in a bowl. Add the sauteed mixture from the frying pan and blend well with a fork.
  • Place all 6 halved English muffins on a cookie sheet. Spoon on tuna mixture, dividing it evenly between each muffin. Top each with a slice of tomato; add a slice of American cheese.
  • Bake in the preheated oven until cheese is melted, about 5 minutes.

1/2 cup drained canned artichoke heart, finely chopped (optional)
1/4 cup sliced green onion
1 tablespoon lemon juice
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/8 teaspoon cayenne pepper (or to taste)
1 (6 ounce) can albacore tuna in water, lightly drained and flaked
2 English muffins, split and toasted
6 tablespoons grated shredded provolone cheese or 6 tablespoons grated shredded sharp cheddar cheese

Steps:

  • Preheat broiler.
  • Combine first 7 ingredients in a medium bowl.
  • Divide evenly among muffin halves, sprinkle with cheese.
  • Place on a baking sheet, broil 4 minutes or until golden.

This is a great change for fussy tuna eaters. Kids & grown-ups love them. You may want to make extra sauce which you'll find requests for. Also, grate extra cheese to microwave melt over muffins before adding sauce.

2 cups cooked rice, cooled (any variety, sticky white rice holds together better)
1 (170 g) can tuna in water
1 cup cheddar cheese, grated
1 tablespoon parsley
1 tablespoon fresh onion, depending on taste (or more)
1 teaspoon seasoning salt
2 tablespoons milk
2 eggs
1 tablespoon lemon juice
1/2 teaspoon seasoning salt
1/2 teaspoon parsley
1/4 cup melted butter or 1/4 cup margarine

Steps:

  • Mix first eight ingredients together and lightly press into a very well greased muffin tin.
  • Bake at 375 F for 15 minutes. Tops should just start to brown & bubble. Note - baking time will vary with size of muffin tins.
  • Let cool about 5 minutes to allow for easier removal from pans then turn out onto individual serving dishes.
  • Combine sauce ingredients and drizzle over top of muffins.

LOW CARB TUNA MUFFINS

1 tablespoon sugar
2 teaspoons baking powder
½ teaspoon salt
1 (9 ounce) can tuna packed in water, drained
½ cup plain nonfat yogurt
½ cup chopped green onion
¼ cup chopped green olives
1 tablespoon chopped garlic
1 egg
¾ cup skim milk
⅓ cup vegetable oil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease muffin tins.
  • In a medium bowl, stir together flour, sugar, baking powder, and salt. Set aside.
  • Into a separate bowl, flake tuna; then stir in yogurt, green onion, olives, and garlic. Set aside.
  • In a small bowl, whisk together egg, milk, and oil.
  • Stir tuna mixture into flour mixture. Gently stir milk mixture into flour mixture. Spoon tuna salad into the wells of muffin tins.

1 can(s) solid white albacore tuna (6 oz)
1 large egg
2 Tbsp white mushrooms or baby bellas, diced
1 Tbsp onion, minced
2 1/2 Tbsp red bell pepper
3 Tbsp extra sharp cheddar cheese or provolone
1 pinch ground mustard
1 pinch garlic salt
1 pinch fresh cracked black pepper
1/4 tsp herbes de provence
1 Tbsp fresh mint, chopped
GARNISH
shredded cheese
basil, fresh

Steps:

  • 1. Cut up all your veggies. Drain your tuna and place in a bowl and flake the tuna with a fork.
  • 2. Then, add your veggies and seasonings and mix it all together. Now, crack your egg and whisk it well and then add to your mixture.
  • 3. Scoop into a greased muffin pan. Bake for 25 to 30 minutes at 350 degrees. [You could make these into mini muffins and serve as appetizers too.] I am not sure on the time they would have to cook though. Next time, I will try it and add the info here.
  • 4. Remove muffins from tin and add a little more cheese and some herb for garnish.
  • 5. I served my muffins with a cucumber salad.
  • 6. Herbes de Provence: It is a spice mixture that you can buy at most grocery stores. It has rosemary, fennel, savory, thyme, basil, tarragon, dill weed, oregano, lavender, chevril, and marjarom.

2 cups cooked rice
1 cup grated cheese
1 can tuna, drained
1 Tbsp dried minced onion
1 Tbsp dried parsley
1 1/2 tsp seasoned salt
2/3 cup black olives, sliced
2 eggs
2 Tbsp milk
1/4 stick margarine
1 Tbsp lemon juice

Steps:

  • Mix together rice, cheese, tuna, onion, parsley, 1 tsp seasoned salt, and black olives. Beat eggs and milk together and add to other ingredients. Bake at 350° in greased muffin tins. Melt margarine with lemon juice and 1/2 tsp seasoned salt. Drizzle over tops after cooking.

1 (13 1/2 ounce) can coconut milk
450 g tuna in brine
120 g rice vermicelli
1 tablespoon Thai curry paste (any)
3 large eggs
1 tablespoon curry powder
1 red onion
2 garlic cloves (minced)
1 fresh chili pepper
1 teaspoon grated fresh ginger
1/2 cup of chopped fresh coriander

Steps:

  • Fry off the onion, ginger, chilli and garlic.
  • Put rice vermicelli into a large bowl and pour over boiling water - leave until soft then drain. Cut up into small pieces with scissors.
  • In a very large bowl put in the two cans of tuna drained, vermicelli, onions, garlic, chili and ginger, 3 eggs, curry past and powder and finally the coconut milk. Mix all up together.
  • Preheat oven to 200c grease small muffin tin and spoon mixture into each section to the top. Cook until muffin springs back. Ease out of tin and leave to cool. Serve with a bowl of sweet chilli sauce as a dip YUM!

Healthy Tuna Casserole Muffins - just like mom used to make, but in handy little muffin cups perfect for meals on the go, or those little fingers to navigate!

For the muffins:
3 Eggs
2 Seven-ounce cans Chicken of the Sea Solid White Albacore in EZ-Open Cans
3 celery stalks, finely diced
1 medium onion, finely diced
1/3 cup + 1 tablespoon fresh parsley, finely chopped
1 cup frozen peas
1 cup shredded cheddar cheese (I used 50% reduced fat cheddar)
3 tablespoons Parmesan cheese
5 ounces fat free evaporated milk
1 tablespoon lemon juice
3 tablespoons Almond meal (or breadcrumbs if preferred)
1 teaspoon salt
1 teaspoon pepper
1/2 pound elbow macaroni pasta (#35)
Cooking spray
For The Topping:
3 tablespoons Almond meal (or breadcrumbs if preferred)
3 tablespoons Parmesan

Steps:

  • Recipe makes 24 muffins so I recommend cooking in two batches.
  • Preheat oven to 425 degrees.
  • Boil pasta to al dente instructions according to package (I cooked mine 6 minutes).
  • Mix together all the muffin ingredients except for the pasta, cheddar cheese, Parmesan cheese, 1 tablespoon of parsley, milk and cooking spray.
  • Place 1 cup of frozen peas in a strainer and run hot water over them for 30 seconds. Then let them sit.
  • After pasta has cooked, drain and place back into cooking pot with the cheddar cheese, Parmesan cheese, and stir in the milk until cheese has melted. Now fold the cheesy pasta into the veggie and egg mixture.
  • Fold in the thawed peas.
  • Spray a muffin tin pan with cooking spray.
  • Using a level 1/3 measuring cup, fill each muffin tin with the pasta/tuna mixture. Firmly press down on each individual cup and then sprinkle on the topping.
  • Bake at 425 degrees for 15 minutes.
  • Allow tuna bites to cool for 5-8 minutes in the pan, then use a non-stick spatula to loosen the muffins around the edges. Gently scoop each muffin out and serve warm.
  • Garnish with 1-tablespoon parsley and more Parmesan cheese if desired.
