I created this recipe totally as a fluke. Looking for a little extra something when I made my chicken salad, looking in the fridge I saw my flavored Greek Yogurt and had an ah ha moment. It turned out great. You can use and combo of veggies, fruit, and yogurt you choose.

Number Of Ingredients 10

1 - rotisserie chicken, deboned
1 - orange(each slice cut in thrids)
1 - celery stalk(chopped)
2 tablespoon(s) scallions(diced)
1/3 cup(s) toasted pecans(pieces)
1/2 - appled(diced with skin on or off)
2 - carrots, chopped
1 cup(s) greek yogurt(flavored, i used coconut but you can use orange, key lime, etc.
1 1/4 cup(s) mayonnaise dressing(not light, because with the yogurt it will be too watery)
1 pinch(es) salt and pepper

Steps:

  • Skin, debone, and chop chicken in bite size pieces. Place in serving bowl.
  • Cut up all vegetables and fruit as indicated above. Add to chicken.
  • Add salt and pepper to chicken. Mix the yogurt and mayo together and whip until smooth. Add dressing to chicken and lightly toss. chill for 1 hour, and serve.

I play cards with a woman who got this recipe from her Mother's 94 year old friend. She said she has been making this for years. It really is good.

Number Of Ingredients 7

- 1 can ( 12 1/2 oz.) chicken breast, drained well
- 1 can ( 8 oz) pineapple chunks, drained
- 1 can ( 11oz.) mandarin oranges, drained
- 1 stalk celery, chopped
- 1/2 tsp. garlic powder
- 1/3 cup mayonnaise
- 1/4 cup chopped pecans, walnuts, or almonds

Steps:

  • Break up chicken with fork. Combine with all other ingredients except oranges.
  • Stir until well mixed. Add oranges and serve.
