5 stalks lemongrass, root end trimmed, outer layers peeled off and stalk bruised with the back of a knife, thinly sliced (4 inches each, white bulb only)
1 cup fresh cilantro leaves (tightly packed)
1/2 cup fresh mint leaves, tightly packed, plus
2 tablespoons fresh mint leaves, chopped, for garnish
1 cup extra virgin olive oil
2 garlic cloves, peeled
2 jalapenos, halved, seeded and roughly chopped
1 tablespoon paprika
1 teaspoon salt
2 tablespoons sherry wine vinegar
4 (8 ounce) tilapia fillets, skinless (8 oz. each 3/4-inch to 1-inch thick)

Steps:

  • Preheat your oven to 350 degrees F.
  • Place the lemongrass, all but 2 tablespoons of the cilantro, 1/2 cup of the mint, 1/2 cup of the oil, garlic, jalapenos, paprika, and salt in a food processor or blender and process until smooth. Add the remaining 1/2 cup of oil and vinegar and process until smooth. Place the fish fillets in a large baking dish, cover with the mojo and turn to coat. Marinate fish for up to 1 hour.
  • Place 4 (16-inch) long pieces of parchment paper on your work surface with the short half facing you. Crease each down the middle. Place a fillet in the center of the bottom half of the rectangle and pour about 1/4 cup of the mojo over each fillet and sprinkle with the remaining 2 tablespoons of cilantro. Fold the top half of over the fillet so that the top and bottom edges meet. Tightly crimp and fold the edges of the parchment working from 1 end around to the other to seal the package. Place the packets on a baking sheet and bake for 9 to 10 minutes for 3/4-inch thick fillets or up to 12 minutes for 1-inch thick fillets.
  • Place the fish packets on a large serving dish and open the packets tableside. Serve with juices from the packet and sprinkled with the chopped cilantro and mint leaves.

4 tilapia fillets
4 Tbsp extra virgin olive oil
1 Tbsp all purpose greek seasoning, divided
4 slice prosciutto
1/3 c grape tomatoes, chopped
1/3 c zucchini, chopped
10-12 olives, sliced
1 Tbsp capers
1 Tbsp italian parsley, chopped
1 Tbsp mint, chopped
1 Tbsp lemon juice, fresh
1 tsp lemon zest, grated
4 tsp goat cheese
1/2 tsp black pepper
4 sheets reynolds wrap foil, sheets 12x10 . 75

Steps:

  • 1. Preheat oven to 375 degrees. Rub filets with 1/2 of the olive oil and 1/2 of the Greek seasoning. Wrap 1 slice of prosciutto around each filet. Place 1 filet on 1 sheet of aluminum foil.Combine tomatoes, zucchini, olives, capers, parsley, mint, lemon juice & zest and remaining spice blend in a small mixing bowl. Toss. Place equal amounts of tomato mixture on top of each filet. Top with goat cheese and black pepper.
  • 2. Take the 2 opposite ends of foil, bring them together over filet and fold edges 2-3 times down and seal. Fold in 2 remaining open ends and seal. Place aluminum pockets on a large oven proof sheet pan. Bake for 15-20 minutes. Allow to rest for 5 minutes. Unseal and serve.

2 stalks lemongrass, white parts finely diced, long green leaves reserved
2 tablespoons light soy sauce
2 cloves garlic, finely chopped
2 spring onions, sliced
1 long red chile, sliced
One 1 1/2-inch piece ginger, finely chopped
1 whole tilapia, cleaned
1 tablespoon vegetable oil

Steps:

  • Preheat the grill to medium-high heat. Soak the green lemongrass leaves in cold water and set aside.
  • Mix together the diced lemongrass, soy sauce, garlic, spring onion, red chile and ginger in a bowl.
  • Lay the fish on a chopping board. Create a fillet by using a sharp filleting knife to slice from the spine of the fish down to the belly without cutting the fillet off. Just leave it lying open.
  • Now add the lemongrass mixture to the inside of the fish and close the fillet back up.
  • Secure the fish by tying it up with the lemongrass leaves. Brush the fish with the vegetable oil, and then char grill the fish, 10 minute per side. Cut the lemongrass leaves and serve.

2 tablespoons toasted sesame seeds
2 (4 ounce) tilapia fillets
1/4 cup minced red onion
1/4 cup minced potabello mushroom
1 teaspoon olive oil
1/8 teaspoon garlic powder
1/2 teaspoon coriander
1 egg
1 tablespoon water
4 sheets phyllo dough
1/2 cup butter, melted

Steps:

  • Preheat oven to 350°.
  • Place sesame seeds on parchment lined baking pan.
  • Roast in oven about 10 to 12 minutes, until brown.
  • Remove from oven and set aside.
  • Meanwhile, heat 1 tsp olive oil in a skillet.
  • Sear fish in olive oil, until almost cooked through, about 3 minutes per side.
  • Remove from skillet, saute onions and portabello mushrooms until onions are opaque.
  • Fold phyllo dough in half and cut so that you have 8 sheets.
  • Layer the phyllo, brushing each layer with melted butter.
  • Use 4 1/2 sheets for each pocket.
  • Place each piece of fish onto the layer of phyllo.
  • Spread onion and mushroom evenly over each piece of fish.
  • Sprinkle garlic powder and coriander over each piece of fish.
  • Fold the phyllo dough around each piece to form a pocket.
  • Place folded side down on parchment lined baking sheet.
  • Brush each pocket with beaten egg and 1 tbsp water.
  • Sprinkle toasted sesame seeds on top of each pocket.

Four 6-ounce pieces tilapia fillet
1/4 teaspoon kosher salt, plus more for seasoning
1/2 cup light reduced-fat coconut milk
1/2 cup cilantro leaves, plus more for garnish
1 teaspoon peeled chopped fresh ginger
1/2 teaspoon garam masala
2 garlic cloves
1/2 jalapeno pepper, seeded and chopped
3 cups cooked brown rice, for serving

Steps:

  • Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking pan with canola oil spray. Sprinkle the fish with the salt and place it in the pan.
  • Combine the coconut milk, cilantro, ginger, garam masala, garlic and jalapeno in a blender and pulse until fairly smooth. Pour the mixture over the fish. Bake until the fish is just opaque in the center, about 15 minutes. Garnish with more cilantro and serve with the rice.
