My mother made this many summers while I was growing up. She would make large batches of them and freeze them. I have eaten other people's zucchini bread over the years, but none were as moist or yummy as mom's. I dug this recipe out after a recent group discussion and thought I would also post it here. Number Of Ingredients 10

1 stick butter or margarine
1 c sugar
2 eggs
1 3/4 c flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp nutmeg
1 c zucchini (raw, finely grated, unpeeled; packed but not too tightly)
1/2 c walnuts
1 tsp vanilla

Steps:

  • 1. Cream butter and sugar together. Beat in eggs. Combine dry ingredients in a seperate bowl. Stir half of the dry ingredients into the creamed mixture. Stir in the zucchini. Add the remaining dry ingredients. Add nuts and vanilla. Mix well. Pour into a greased loaf pan (9x5x3). Bake at 350 degrees for 50-60 min. Makes one loaf.
