TEXAS CHRISTMAS PICKLES
These spicy/sweet pickles are a Texas tradition. My mother and I have made these delectable pickles for Christmas every year since I was young. We separate each batch into smaller jars and give them as gifts to friends and family. I would hate to think what would happen if we skipped a year!!

- Drain the brine from the pickles and discard. Slice pickles lengthwise, and return them to the jar. Pour in the hot pepper sauce, and add the garlic. Pour in about 1/3 of the sugar. Close the lid tightly. Gently tip the jar back and forth several times to allow everything to mix well. Leave out on the counter at room temperature for about 1 week.
- During the week, add more sugar as the sugar in the jar dissolves. Gently tip the jar back and forth to mix. Continue the process throughout the week, until you have used up all of the sugar. When all of the sugar has been absorbed, pickles will be dark green and crispy. Transfer pickles to smaller sterile jars, and divide syrup between jars. Seal with lids and rings. Store in the refrigerator, and consume within one month.

- Heat oil in a deep fryer or large deep pan until oil sizzles when water drop is placed on top.
- Combine flour, salt, pepper, sugar and cayenne pepper in a large mixing bowl. Whisk to incorporate all the dry ingredients.
- Drain the pickle chips to remove excess water. The pickles do not need to be completely dry as some moisture is needed for the battering process.
- Toss a portion of the pickle chips in the seasoned flour mixture until the pickle chops are well-coated with the flour.
- Transfer the pickle chips to a wire strainer. Shake to remove excess flour from the pickle chips. Carefully place the pickle chips in the hot oil. Cook for 3 to 4 minutes, or until the pickles float to the surface.
- Remove from oil and place on a plate lined with paper towels to drain. Transfer to a serving plate and serve with a dipping sauce of your choice.
JUJUBE SWEET PICKLES - TEXAS STYLE
Also known as the Chinese date or red date, the jujube is a type of tree native to China. The fruit of the jujube tree is typically reddish in color, and oval or globe-shaped. The fruit reaches up to 2 inches in diameter, with smooth skin and a single stone. The fruit is often dried and used in herbal remedies. Research on the nutritional and culinary uses of jujube fruit, done in the Food Science section of Texas A&M's Horticultural Sciences Department in the 1940s by Dr. Homer Blackhurst, revealed a very high vitamin C content. - Cook fruit in syrup until done and steep in syrup overnight in the refrigerator.
- Reheat syrup and fruit to boiling.

PICKLED JALAPENO PEPPERS "TEXAS PICKLES"
These sweet and hot jalepenos are favorite appetizers when poured over a block of cream cheese and served with crackers. Depending on the crop, some peppers will be much hotter one year and mildly hot another. Use the sugar to ajust the overall heat level of the pickles to your taste.

- Slice all of the jalapeno peppers in 1/4" rings and set aside. In a large Dutch oven combine vinegar, water, salt, sugar and pickling spice (tied in cheesecloth) and bring to a boi. Simmer for about 45 minutes. Add peppers and simmer another 30-45 minutes.
- Pack sweet jalapeno peppers and juice into sterile jelly jars or pint jars to within 1/2" of top of jar. Wipe rim of jar well with damp paper towel then seal tightly and process in a boiling water bath for 15 minutes. Remove from water and cool.
- *Note: The more surgar you use - the less heat. For milder pickles, remove seeds before cooking. Fresh peppers are VERY HOT! Use gloves when working with fresh jalapenos. Recipe can be doubled. If making your own Pickling Spice, store ingredients in sealed mason jar.
- Serve on sandwiches, on pizza, in salads, pour over a block of room temperature cream cheese and serve with crackers.

Close the lid tightly. Gentle tip the jar back and forth several times to allow everything to mix well. Leave out on the counter at room temperature for about 1 week. During the week add more sugar whenever all the sugar in jar has dissolved. Gently tip back and forth to mix well. Do this each day until all the sugar has been added. When the sugar has completely dissolved the pickles will be dark green and crispy. Transfer to smaller sterile jars and divide syrup between jars. Seal with lids and rings. Store in refrig and consume in a month. Note: I sometimes buy a quart and reduce the other ingredients accordingly. I place into Ball plastic jars with green screw on tops.

Steps:
- Drain pickles and discard juice. Cut into 1 inch chunks. Put pickles in a large jar.
- Day 1: Add 1 1/4 cup sugar and red hots, pour over pickles, Stir and let sit on counter.
- Day 2: Add 1/2 cup of remaining sugar, stir twice a day, cover and let sit on counter.
- Day 3: Add remaining sugar and tabasco, stir then let sit on counter.
- Day 4: At this point remove from large jar and put into clean smaller jars. Keep in refrigerator. ENJOY!
