MICROWAVE TEXAS BROWNIES
Chocolate Texas Brownies yummy!I used to make these with my daughter when she was younger because we used the microwave to bake them. They are really tasty. It was a lot of fun when she would help me bake. Miss those days.

Steps:
- 1. In a large bowl combine flour and sugar.In a microwave dish combine butter,shortening,coffee,(or water) and cocoa.
- 2. microwave on high for 2 minutes or until boiling. Pour the mixture over the flour mixture.stir and blend together.
- 3. add butter,milk,eggs,baking soda,and vanilla. Mix well
- 4. pour in to microwavable 9x11 dish
- 5. microwave at medium power for 18-20 minutes.Turn dish every 4-5 minutes until brownies test done.They may seem soft on the surface. It does not mean they are not cooked.
- 6. make frosting in microwavable dish. combine butter,cocoa and milk. microwave on high for 2 minutes and stir once while cooking.Take out. add sugar and vanilla blend well. pour warm frosting over warm brownies.cool and cut in to bars.
TEXAS BOILED BROWNIES OR CAKE
This is a different version of the Texas Hot Cocoa Cake. The main difference is heating some of the ingredients in the microwave instead on the stove. Also, it is baked in a larger pan. It could be baked in a 9"x13" pan and cooked 35-40 minutes if desired.

Steps:
- 1. Combine flour and sugar in a large bowl using a wire whip.
- 2. In a microwave safe dish combine cocoa, butter, shortening and coffee. Stir slightly, then microwave on high 2 minutes or until just boiling (note: do not over boil.).
- 3. Pour hot mixture over dry ingredients and beat with a wire whip until smooth.
- 4. In a medium size bowl or 4 cup measuring cup, combine buttermilk, eggs, soda and vanilla. Beat into batter until smooth.
- 5. Heat oven to 400 degrees. Use (a) if you wish to make brownies or (b) if you wish to make a cake.
- (a) Grease with butter a 11"x17.5" pan. Spread batter evenly and bake 18-20 minutes. Do not over bake.
- (b) Grease and flour a 9"x13" pan. Spread batter evenly and bake 35-40 minutes or until toothpick comes out clean from center of cake.
- FROSTING:.
- In a medium microwave safe bowl, combine butter cocoa and milk. Microwave on high 2 minutes or until boiling at the edge of the bowl. Add confectioners sugar slowly in batches, then add vanilla extract. Beat until smooth.
- Cool brownies/cake about 20 minutes then frost.

TEXAS BROWNIES
Steps:
- 1. Combine the butter, shortening, water and cocoa in a microwave safe dish and microwave on HIGH for 2 minutes. Pour mixture over flour and sugar. Stir to blend. Add buttermilk**, eggs, baking soda and vanilla. Mix well.
- 2. Pour into well-buttered 17 1/2 x 11 inch jelly roll pan. Bake at 400° for 20 minutes or until brownies test done. While brownies bake prepare frosting.
- 3. For the frosting combine the butter, cocoa and milk in a microwave safe dish and microwave at HIGH for 2 minutes stirring once. Add powdered sugar and vanilla. Stir to blend. Pour warm frosting over hot brownies. Let cool then cut into bars.
- 4. **If you don't have buttermilk use 1/2 cup of milk plus 2 teaspoons of vinegar or lemon juice to sour the milk. Stir and let set for a couple of minutes.

Steps:
- In a large mixing bowl, combine the flour and the sugar.
- In heavy saucepan, combine butter, shortening, coffee or water and cocoa.
- Stir and heat to boiling.
- Pour boiling mixture over the flour and sugar in te bowl.
- Add the buttermilk, eggs baking soda and vanilla.
- Mix well, using a wooden spoon or high speed on an electric mixer.
- Pour into a well buttered 17 1/2 by 11 inch jelly roll pan.
- Bake at 400F for 20 minutes or until brownies are done in the center.
- While brownies bake, prepare the frosting.
- In a saucepan, combine the butter, cocoa and milk.
- Heat to boiling, stirring constantly.
- Remove from heat and mix in the powdered sugar and vanilla, beat until frosting is smooth.
- Pour warm frosting over brownies as soon as you take them out of the oven.
- Cool.
- Cut into 48 bars.

- In a bowl, beat sugar, eggs, vanilla and salt on medium speed for 1 minute. Add butter; beat until blended. Combine flour and cocoa. Gradually add to sugar mixture; mix well. Stir in walnuts. Transfer to a greased microwave-safe 8-in. square dish. Microwave, uncovered, on high for 3-4 minutes, rotating every 1 minute or until a moist area about 1-1/4 in. in diameter remains in the center (when touched, brownie will cling to your finger while area underneath will be almost dry).
