Another Texas original. When I was a kid my brother and I would take turns turning the hand crank on the ice cream maker.... but it was worth it!

1 1/2 l big red soda
2 can(s) sweetened condensed milk
1 large bag of ice
1 box rock salt
1 4 quart ice cream maker
1 lb diced fresh strawberries (optional)

Steps:

  • 1. In your ice cream container pour 1 1/2 liters Big Red then slowly add the 2 cans sweetened condensed milk, stawberries and stir.
  • 2. Place container in ice cream maker and layer ice and rock salt. Freeze until ready and then place container in freezer for 30 minutes.

Red bean paste can usually be found in Asian markets. Sweetened red beans in a can can be substituted for some of the red bean paste to add more texture. This is a popular ice cream in many Asian countries. Try it, you won't regret it!

3 egg yolks
½ cup white sugar
1 cup milk
1 ½ cups sweetened red bean paste
1 ½ cups heavy whipping cream

Steps:

  • Beat egg yolks and sugar together in a large bowl until pale yellow in color.
  • Bring milk to a boil in a saucepan and remove from heat. Slowly stream milk into the egg mixture while beating with a whisk to integrate completely.
  • Pour milk mixture into the saucepan and place over low heat; cook, stirring constantly, until thickened but not yet boiling, about 10 minutes.
  • Stir red bean paste into the thickened milk mixture; pour into a large bowl and let cool for several minutes. Stir cream into the slightly cooled mixture until smooth.
  • Cover bowl with plastic wrap and refrigerate until ice cream base is chilled completely, 1 to 3 hours.
  • Pour mixture into an ice cream maker and freeze according to manufacturer direction.

This silky, luscious and very classic custard can be used as the base for any ice cream flavor you can dream up. These particular proportions of milk and cream to egg yolk will give you a thick but not sticky ice cream that feels decadent but not heavy. For something a little lighter, use more milk and less cream, as long as the dairy adds up to 3 cups. You can also cut down on egg yolks for a thinner base, but don't go below three. Number Of Ingredients 6

2 cups heavy cream
1 cup whole milk
2/3 cup sugar
1/8 teaspoon fine sea salt
6 large egg yolks
Your choice of flavoring (see note)

Steps:

  • In a small pot, simmer heavy cream, milk, sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
  • Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight. Churn in an ice cream machine according to manufacturers' instructions. Serve directly from the machine for soft serve, or store in freezer until needed.

2 tablespoons extra-virgin olive oil
6 pounds boneless beef chuck or shoulder, cut into 3/4-inch cubes
6 cloves garlic, minced
6 tablespoons chili powder (preferably Gebhardt brand)
4 teaspoons ground cumin
1/2 cup all-purpose flour
2 tablespoons dried oregano
4 14-ounce cans low-sodium beef broth
Kosher salt and freshly ground pepper
1/2 cup masa harina (instant corn flour)
Chopped white onion and sliced pickled jalapenos, for topping

Steps:

  • Heat 1 tablespoon olive oil in a large Dutch oven over medium-high heat. Add half of the beef and cook, stirring, until browned, about 4 minutes; transfer to a plate. Add the remaining 1 tablespoon olive oil to the pot and brown the remaining beef, then return the first batch to the pot. Reduce the heat to medium and stir in the garlic.
  • Combine the chili powder, cumin and flour in a small bowl. Sprinkle over the meat in the pot and stir until evenly coated. Crumble in the oregano with your fingers, then add 3 cans beef broth, 2 teaspoons salt and 1/4 teaspoon pepper; stir to combine. Bring to a boil, then reduce the heat to low; partially cover and simmer until the meat is just tender, about 1 hour, 30 minutes.
  • Whisk the remaining 1 can broth with the masa harina in a bowl to make a creamy paste; stir into the chili. Continue simmering over low heat until the meat is almost falling apart, 30 minutes to 1 hour, adding up to 2 cups water if the chili gets too thick. Divide among bowls and top with onion and pickled jalapenos.

2 cups heavy whipping cream, divided
2 egg yolks
2 cups half-and-half
1 cup cinnamon red hot candies

Steps:

  • Whisk 1 cup cream and egg yolks together in a bowl until smooth.
  • Combine half-and-half, 1 cup cream, and red hot candies in a large saucepan over medium-low; cook, stirring with a wooden spoon, until candies dissolve, 5 to 10 minutes.
  • Pour 1 cup red hot candies mixture into the cream-egg mixture; whisk until mixture is evenly combined. Pour cream-egg mixture into red hot candies mixture in the saucepan. Cook and stir until a film forms on the back of a spoon when dipped into the mixture, keeping just under a boil, about 5 minutes.
  • Pour red hot candies mixture through a sieve into a bowl to collect any undissolved candies. Cover the bowl with a clean towel and cool to room temperature. Refrigerate until chilled, about 1 hour.
  • Pour red hot candies mixture into an ice cream maker and process according to manufacturers' instructions.
