1/2 cup olive oil
1 tablespoon garlic
1/4 cup fresh lime juice
Salt and pepper, to taste
Lime wedges, as needed
4 (6-ounce) fish steaks (swordfish, mahi mahi, or Spanish mackerel)

Steps:

  • Whisk together all the marinade ingredients in a small bowl. Arrange the swordfish, or another strongly flavored fish, such as mahi mahi or Spanish mackerel in a shallow dish or plastic container, pour the marinade over them, cover, and marinate for 12 to 15 minutes. Grill or broil to desired doneness, serve with lime wedges.;

12 garlic cloves
1/3 cup olive oil
6 tablespoons vinegar
1 pinch ground cloves
1/2 teaspoon pepper
1/2 teaspoon cinnamon
1 teaspoon oregano
1/2 teaspoon sugar
1/2 teaspoon salt
1 1/2 lbs swordfish steaks
4 tomatoes, quartered
lime wedge, garnish (optional)

Steps:

  • In a blender chop garlic cloves and then add next 8 ingredients (oil - salt), blending until smooth.
  • Pour mariade over fish and let marinate for 2-4 hours.
  • Discard marinade and grill fish and tomatoes for 5-10 minutes per side.
  • Garnish with lime wedges if desired.

2 lb. swordfish
1/2 c. dry white wine
4 tbsp. olive oil
4 tbsp. lemon juice
2 cloves garlic, minced
2 tsp. dried basil
1/4 tsp. freshly ground pepper

Steps:

  • Rinse fish in cold water; pat dry. Combine ingredients, mix well. Place swordfish in marinade. Refrigerate 2-3 hours, turning several times. Preheat grill; brush the salad oil. Place fish on grill, cook approximately 10 minutes per inch, turning halfway through cooking time. Remove from grill, brush with melted butter, garnish with lemon wedges. Works with salmon, too.

3 Tbsp olive oil
juice of one lime
1 Tbsp water
Finely mince the following:
2 garlic cloves
1 small shallot
Enough cilantro, basil and mint to yield about 1/3 cup after chopping
1/4 Tsp each salt & pepper
Pinch of hot pepper flakes

Steps:

  • Combine chimichurri ingredients in a small bowl. Marinate the fish in about half of it, spreading on both sides, 30-60 minutes - no longer - in the fridge. Grill the fish 10-12 minutes, depending on thickness, and serve with the remaining marinade spread on top.

6 swordfish steaks - (6 to 8 oz ea)
3/4 cup torn basil leaves - (loosely packed)
(or 2 tspns dried basil)
1/4 cup olive oil
1/4 cup fresh lime juice
1/4 teaspoon grated lime peel
3 teaspoons chopped green onion
1/8 teaspoon salt
1 ripe avocado peeled, sliced
1 large tomato seeded, and finely diced
Hot pepper sauce to taste

Steps:

  • Rinse fish steaks and pat dry. Place fish in a single layer in a glass dish. Combine basil, olive oil, lime juice, 1 teaspoon green onion, lime peel, and salt in a food processor. Pulse 10 times or until basil is coarsely chopped. Remove 2 1/2 tablespoons of the mixture and reserve for the salsa. Pour the remainder of the marinade over the fish steaks. Marinate fish in the refrigerator for 30 minutes, turning the fish over once. Gently combine the reserved marinade, avocado, tomato, remaining green onion, and hot pepper sauce (to taste) to make the salsa. Place fish on a preheated, well-oiled grill. Cook fish approximately 10 minutes per inch of thickness. Turn steaks after 5 minutes and cook until fish begins to flake easily. Baste frequently with marinade. Serve with avocado salsa. This recipe yields 6 servings.
