Steps:

  • Combine 1 1/2 pounds chopped peeled sweet potatoes, 1 bunch scallions (cut into 2-inch pieces), 6 crushed garlic cloves and 1 tablespoon fresh thyme in a bowl. Drizzle with 1/4 cup olive oil, season with salt and pepper and toss. Place on a sheet of foil and fold up. Grill over low heat until the potatoes are tender, 20 to 25 minutes.

1 tablespoon olive oil
2 cups chopped broccoli
1 cup chopped onion
2 cloves garlic, minced, or more to taste
2 cups cubed cooked sweet potato
2 cups fresh spinach
6 slices cooked bacon, chopped
10 large eggs
1 cup half-and-half
1 tablespoon chopped fresh sage
½ teaspoon salt
¼ teaspoon ground black pepper
fresh sage leaves for garnish

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Heat oil in a 10-inch, oven-safe skillet over medium heat. Add broccoli and onion. Cook, stirring occasionally, until broccoli is tender and onion is just translucent, about 5 minutes. Add garlic; cook 30 seconds. Stir in sweet potato and spinach; cook until spinach wilts, about 1 minute. Stir in bacon.
  • Whisk together eggs, half-and-half, chopped sage, salt, and pepper in a bowl. Pour mixture over vegetables in skillet. Gently mix to evenly distribute egg mixture.
  • Transfer the skillet to the preheated oven and bake until eggs are completely set but not overcooked, about 25 minutes.
  • Let stand 5 minutes before serving. Garnish with sage leaves.

I made this for Thanksgiving dinner and my family went crazy over it. It is simple, looks great on the table and has already been requested for Christmas dinner! This recipe can be adjusted as you like by adding more or less bacon and onions.

4 pounds sweet potatoes, peeled and cut in 1-inch chunks
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground black pepper
5 slices smoked bacon, chopped
1 pound onions, thinly sliced
1 cup pure maple syrup
2 teaspoons fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
  • Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
  • Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
  • Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.

6 medium sweet potatoes, cubed
1 teaspoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound bacon strips, chopped
4 celery ribs, chopped
1 medium onion, thinly sliced
3 garlic cloves, minced
1 cup beef stock
2/3 cup balsamic vinegar
4 teaspoons paprika
3/4 teaspoon ground cumin, optional
6 green onions, chopped
Minced fresh parsley, optional

Steps:

  • Preheat oven to 375°. Place sweet potatoes in a 15x10x1-in. pan; drizzle with olive oil and sprinkle with salt and pepper. Turn to coat. Bake until tender, 30-35 minutes., Meanwhile, in a large skillet, cook bacon over medium-low heat until crisp; drain. Discard all but 4 teaspoons drippings., Cook celery and onion in drippings over medium heat until tender, 6-8 minutes. Stir in garlic; cook 1 minute. Add beef stock and balsamic vinegar; simmer until liquid is reduced by half, 5-8 minutes. Add paprika and, if desired, cumin; cook 1 minute longer., Pour balsamic mixture over sweet potatoes; add bacon. Toss to coat. Top with green onions and, if desired, minced fresh parsley; serve immediately.

The amounts will vary depending on how flavorful your potatoes are. For this reason, all ingredients are "TO TASTE", whether quantities are specified or not :) Enjoy!

3 sweet potatoes (medium or large)
3 -4 tablespoons butter (split)
1 -2 tablespoon olive oil
1/3 cup milk
salt (I start with 1t)
pepper
sugar (a touch, if needed) or maple syrup (a touch, if needed)
1 cup thinly sliced onion
1 -2 garlic clove, minced
1 shallot, sliced (optional)
2 tablespoons balsamic vinegar
6 slices cooked bacon, crumbled
1/2 cup asiago cheese, grated
2 green onions, chopped

Steps:

  • Cook sweet potatoes at 450 for about 1 hour or until soft.
  • While potatoes are baking, CARAMELIZE ONIONS:.
  • Stirring occasionally, sautee onions, shallot and garlic in 1-2T butter and 1-2T olive oil over medium low heat for about 10-15 minutes or until onions are very soft. (Don't let the garlic burn or it will be very bitter.).
  • Add balsamic vinegar and scrape up any bits that may have formed from caramelized onions.
  • Set aside.
  • Carefully peel and mash baked sweet potatoes(we use a whisk).
  • After tasting, Add 2 tablespoons butter, milk, salt, pepper and sugar.
  • Taste and adjust ingredients.
  • Place sweet potatoes in an 8x8 casserole or a loaf pan and top with balsamic onions.
  • Bake, covered, at 350 for 15-20 minutes. (Increase bake time if casserole is coming from the fridge).
  • Top with crumbled bacon and asiago and bake uncovered for an additional 5-10 minutes.
  • Top with green onions and serve.

Mashed Sweet Potatoes with Bacon image

3 pounds sweet potatoes (4 to 5 medium)
3 slices bacon, chopped
1 tablespoon bourbon or apple cider
1/2 cup heavy cream, warmed
6 tablespoons cold salted butter, cut into pieces
3 tablespoons maple syrup, plus more for drizzling
Kosher salt

Steps:

  • Preheat the oven to 400 degrees F. Pierce the potatoes all over with a fork and place on a baking sheet. Bake until completely soft, about 45 minutes. Let cool slightly. Split the potatoes in half, scoop out the flesh into a medium bowl and set aside. Discard the skins.
  • Cook the bacon in a large saucepan over medium heat, stirring, until crisp, 8 to 9 minutes. Remove with a slotted spoon to a paper towel¿lined plate. Add the bourbon or cider to the drippings in the saucepan and cook until mostly evaporated, about 30 seconds. Add the potatoes, heavy cream, butter, maple syrup and 1 1/2 teaspoons salt; mash with a potato masher until smooth and warmed through.
  • Transfer the potatoes to a bowl; top with the bacon and drizzle with more maple syrup before serving.
