Baked Sweet Potatoes Stuffed with Cranberries, Pears, and Pecans image

8 8-ounce red-skinned sweet potatoes (yams), scrubbed
1 cup dried cranberries
4 tablespoons (1/2 stick) butter
2 large firm but ripe pears, peeled, cored, cut into 1/2-inch cubes
1 cup pecans, coarsely chopped
4 teaspoons minced peeled fresh ginger
4 teaspoons (packed) golden brown sugar
2 teaspoons plus 1 1/2 tablespoons balsamic vinegar
1/2 teaspoon salt

Steps:

  • Position rack in center of oven and preheat to 350°F. Line baking sheet with foil. Pierce potatoes in several places with fork; place on prepared baking sheet. Bake until potatoes are tender when pierced with fork, about 55 minutes. Cool slightly.
  • Meanwhile, place cranberries in small bowl; pour enough hot water over to cover. Let stand 5 minutes to soften. Drain well. Melt 2 tablespoons butter in large nonstick skillet over medium-high heat. Add pears and sauté until tender and golden, about 4 minutes. Stir in cranberries, pecans, ginger, and brown sugar; sauté 1 minute. Mix in 2 teaspoons vinegar and 1/2 teaspoon salt.
  • Cut off top 1/4 of each potato lengthwise; discard tops. Using fork, gently mash pulp inside each potato. Sprinkle with salt and pepper. Melt remaining 2 tablespoons butter in small saucepan over low heat. Whisk in remaining 1 1/2 tablespoons vinegar. Drizzle about 1 teaspoon butter-vinegar mixture into each potato; mix with fork to blend.
  • Mound cranberry mixture in sweet potatoes. (Can be prepared 4 hours ahead. Cover loosely with plastic wrap; let stand at room temperature. Rewarm sweet potatoes uncovered in 350°F oven until heated through, about 20 minutes.)

¾ cup apple juice
½ cup brown sugar
⅓ cup raisins

3 pound(s) sweet potatoes (3 large)
1/2 cup(s) brown sugar, firmly packed
4 tablespoon(s) butter, melted
2 cup(s) cranberries, fresh or frozrn
1/2 cup(s) orange juice
1/2 cup(s) chopped walnuts
2 tablespoon(s) butter, melted
1 tablespoon(s) brown sugar
1 teaspoon(s) cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 9 x 13 inch baking dish with cooking spray.
  • Cook sweet potatoes in microwave until tender. (12 to 15 minutes) Be sure to pierce several times with a fork.
  • Cool slightly then peel and slice potatoes into 1/4 inch thick slices.
  • Arrange half of the potato slices in the prepared dish.
  • Sprinkle with 1/4 cup brown sugar. Drizzle with 2 Tbsp. melted butter and top with half of the cranberries.
  • Repeat layers. Pour orange juice evenly over the casserole.
  • Cover the dish with foil. Bake 40 minutes.
  • While cooking prepare topping as follows: Combine walnuts, 2 Tbsp. melted butter, 1 Tbsp. brown sugar and 1 tsp. cinnamon.
  • Remove the casserole from oven and sprinkle walnut mixture over the top.
  • Return to oven and bake 5 to 10 more minutes or until brown and bubbly.

2 medium to large sweet potatoes (about 1 - 1 1/4 lbs total) peeled and cut into bite-size pieces
1 medium Granny Smith Apple, cored and diced into small (3/4 to 1") pieces
2 tablespoons dried cranberries
1 1/2 tablespoon butter
1 tablespoon brown sugar
3/4 teaspoon salt
1/2 teaspoon cinnamon

Steps:

  • Combine all ingredients in Medium or Large Ziploc Zip'n Steam Bag. Seal bag and shake gently to combine ingredients. Pat ingredients into single layer. Place bag in microwave. Cook on full power for 8 to 9 minutes, or until sweet potatoes are tender. If needed, continue microwaving at 30 second intervals until sweet potatoes are tender. Allow bag to stand for 1 minute before handling. Shake gently to distribute ingredients. Carefully open bag and serve.

3/4 cup(s) fresh orange juice
1/2 cup(s) brown sugar
3/4 teaspoon(s) orange rind
3/4 teaspoon(s) cinnamon

Steps:

  • Boil sweet potatoes in their skins until barely tender. Peel, slice thickly, and arrange in a buttered baking dish.
  • In saucepan mix remaining ingredients. Simmer, uncovered, for five minutes.
  • Pour over sweet potatoes and bake uncovered at 350F for 20 minutes or until glazed and hot.
