SWEET MIXED NUTS
I started out making this just for the holidays makes a nice gift. Brown sugar,cinnamon, allspice, nutmeg and cloves. Its easy enough to do whenever, one batch in the microwave makes 1 1/2 cups.

Steps:
- Slect power high.
- In a 2 quart casserole or microwave safe dish combine sugar, water and spices.
- Heat 1 to 1 1/2 minutes til sugar is melted.
- Stir in nuts.
- Place nuts on a microwave safe plate heat on high for 3 1/2 minutes or until syrupy.
- Becareful to spread the nut mixture evenly on the plate and watch closely not to burn.I find not all microwaves act the same way.
- Place nuts on wax paper to cool completely.
- Break into pieces store in air tight container.

SWEET AND SPICY MIXED NUTS
These are the best of all the recipes I have tried. A couple tips after the first review that I didn't bother to write. Don't pour the nuts onto a cookie sheet. Use a slotted spoon and leave the extra "sauce" in the pan. Use the times suggested, otherwise you will get burnt nuts, not tasty. You may reduce the amount of butter slightly depending on the nuts you use. I use whatever nuts I have on hand. This is a recipe that is sweet to the tongue, then lets out a long slow heat. A beautiful balance. Hope you will try and enjoy.

- Preheat oven to 350 degrees. Butter 2 rimmed baking sheets. Melt 3/4 sup butter in large non-stick skillet over medium heat. Add sugar, 6 tableshppons water, salt, and spices; stir until sugar dissolves.
- Add all nuts; stir. Cook until liguid thickens and coats nuts, stirring often, about 4 minutes. Divide nuts and syrup between sheets; spread in single layer. Bake until glaze is golden and crisp, stirring often, about 15 minutes. Cool on sheets.
- Store airtight at room temperature.

- Preheat oven to 350ºF. Toss 1 cup blanched almonds, 1 cup pecans, 1 cup walnuts, 1/4 cup raw pumpkin seeds, 1/3 cup pure maple syrup, 2 Tbsp. olive oil, 2 Tbsp. rosemary leaves, 2 tsp. crushed red pepper flakes, 1 tsp. hot smoked Spanish paprika, and 1 tsp. kosher salt in a medium bowl. - Preheat oven to 300°F and prepare baking sheet. I like to line a jelly roll pan with parchment paper, but you can grease your pan if you like.
- Combine brown sugar, cinnamon and cayenne, set aside.
