½ cup butter
1 ½ tablespoons garlic powder
1 tablespoon dried parsley
1 (1 pound) loaf Italian bread, cut into 1/2 inch slices
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan over medium heat, melt butter and mix with garlic powder and dried parsley.
  • Place Italian bread on a medium baking sheet. Using a basting brush, brush generously with the butter mixture.
  • Bake in the preheated oven approximately 10 minutes, until lightly toasted. Remove from heat. Sprinkle with mozzarella cheese and any remaining butter mixture. Return to oven approximately 5 minutes, or until cheese is melted and bread is lightly browned.

My wife and I always freeze our leftover baguettes and sometime they do not thaw quite as fresh, so I tried grilling the bread and used the abundance of fresh basil I have in my garden. It was a hit the first time we tried this and still is, and is now is our summertime favorite, for fresh and leftover bread alike.

1 cup olive oil
1 cup fresh basil, chopped
3 teaspoons minced garlic
1 (8 ounce) loaf Calabrese bread (crusty Italian bread), cut into 1/2-inch slices
salt and coarsely ground black pepper to taste

Steps:

  • Mix oil, basil, and garlic in a bowl.
  • Preheat an outdoor grill for medium heat. Cook bread slices on the grill until underside is toasted, 2 to 3 minutes. Flip bread over and baste the grilled sides with about 1/2 of the oil mixture. Grind salt and pepper on top. Grill until bottoms are toasted, 1 to 2 minutes.
  • Flip bread slices over once more; baste with remaining oil mixture. Season with salt and pepper and remove from heat.

1 loaf long French bread, sliced lenthwise
1/2 cup butter, softened
1/2 cup freshly grated best parmesan cheese
1/2 cup grated mozzarella cheese
1/8 cup freshly chopped Italian parsley
1 clove garlic, finely minced
1 tablespoon olive oil
1 teaspoon italian seasoning
1 tablespoon garlic salt
1 teaspoon paprika

Steps:

  • Blend together all ingredients and spread evenly on cut sides of bread.
  • Put the bread sides back toghether in the original shape, and slice through both making slices about 1 inch thick.
  • Keeping the shape together, wrap in foil and bake at 375 degrees for about 20 minutes.

So I texted my friend Leigh Ann, who knows what's good at Costco and always has fabulous food ideas. I heeded her advice and that evening made this garlic bread. Unreal!! The texture is wonderful, with a slightly crispy/chewy crust and soft, seed-laced insides. The spread gives it the most unbelievably buttery, garlicky flavor I've ever tasted on garlic bread.
