CROCKPOT SHREDDED BEEF BARBECUE



Crockpot Shredded Beef Barbecue image

Perfect for a summer cookout or potluck, this shredded beef barbecue recipe is made easily in the crockpot!

2 - 3 Tbsp packed light brown sugar
2 1/2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
1 1/2 tsp kosher salt
1 tsp black pepper
4 lb beef chuck roast
2 Tbsp yellow mustard
2/3 cup beef broth
1 tsp liquid smoke ((optional))
3 - 4 Tbsp unsalted butter ((sliced))
1 large yellow onion, finely minced
4 cloves garlic, minced
3 Tbsp butter
1 tsp olive oil
salt and pepper, to taste
20 - 24 oz bottle of ketchup
1/3 - 1/2 cup packed light brown sugar
1/4 cup apple cider vinegar
2 - 3 Tbsp molasses
1/2 tsp Worcestershire sauce

Steps:

  • Combine brown sugar, paprika, garlic powder, onion powder, salt and pepper in a small bowl. Set aside. Add chuck roast to slow cooker, drizzle with mustard and rub into the meat.
  • Sprinkle with half of the rub. Rub into the meat, flip the roast over and rub the remaining rub into the meat. Pour in beef broth and liquid smoke (if using), being careful to pour it around the roast, not over it. You don't want to wash away that rub and mustard! Top with butter slices. Cover and cook on LOW for 8-10 hours, or until roast is fork tender.
  • Remove roast from slow cooker to a large cutting board and shred, discarding large fat pieces. Drain cooking juices from the slow cooker and return shredded beef to the slow cooker.

3 -4 lbs chuck roast
1 (32 ounce) bottle ketchup
1/4 cup vinegar
1/2 cup brown sugar
1 large onion, chopped
8 dashes Worcestershire sauce
1 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)

Steps:

  • Combine all ingredients in dutch oven or other large pot and cook at low heat allowing to simmer slowly for about 4 hours, turning meat and stirring occasionally (If making in crock pot, cook on high for 5 to 6 hours).
  • Remove meat and shred with fork, discarding fat.
  • Put the meat back into the liquid and simmer for about 30 more minutes.
  • (If using crock pot just turn to low until ready to serve) Serve on your favorite buns or rolls.

1-1/2 cups chopped onions
2-1/4 cups ketchup
3 tablespoons prepared mustard
3 tablespoons Worcestershire sauce
2 tablespoons vinegar
2 tablespoons sugar
1 tablespoon salt
1 tablespoon pepper
18 hamburger buns, split

Steps:

1 cup barbecue sauce
1/2 cup apricot preserves
1/3 cup chopped green or sweet red pepper
1 small onion, chopped
1 tablespoon Dijon mustard
2 teaspoons brown sugar
12 sandwich rolls, split

Steps:

  • Cut the roast into quarters; place in a greased 5-qt. slow cooker. In a bowl, combine barbecue sauce, preserves, green pepper, onion, mustard and brown sugar; pour over roast. 12 ounces chili sauce
8 -10 crusty rolls, split
2 tablespoons chili powder
2 tablespoons brown sugar, packed

slivered jicama

1 boneless beef chuck roast (3 pounds)
1 can (14-1/2 ounces) beef broth
1 medium onion, chopped
1 celery rib, chopped
3/4 cup ketchup
1/4 cup packed brown sugar
2 tablespoons white vinegar
1 teaspoon salt
1 teaspoon ground mustard
1 teaspoon Worcestershire sauce
1 garlic clove, minced
1 bay leaf
1/4 teaspoon garlic powder
1/4 teaspoon paprika
3 drops hot pepper sauce
12 to 15 hoagie buns, split

Steps:

  • Place roast in a Dutch oven; add the broth, onion and celery. Bring to a boil. Reduce heat; cover and simmer for 2-1/2 to 3 hours or until the meat is tender. , Remove roast and cool slightly; shred meat with two forks. Strain vegetables and set aside. Skim fat from cooking liquid and reserve 1-1/2 cups.
