Sweet-and-Sour Black-Eyed Peas with Ham image

2 15.5-ounce cans no-salt-added black-eyed peas, rinsed and drained
1 cup low-fat, lower-sodium ham, all visible fat discarded, cut into 3/4-inch cubes (about 4 ounces)
3 tablespoons all-fruit black cherry spread
2 tablespoons light brown sugar
1 1/2 tablespoons spicy brown mustard
1 tablespoon cider vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons snipped fresh parsley (optional)

Steps:

  • In a medium saucepan, stir together all the ingredients except the parsley. Cook over medium heat for 5 minutes, or until warmed through, stirring occasionally. Sprinkle with the parsley.

Sweet and Sour Black-Eyed Peas image

This has become my new go-to recipe for black-eyed peas. I'm a Southern girl and never thought I would be able to stray from the tried and true meat-seasoned version, but this one wins! Delicious and low fat.

2 tablespoons olive oil
½ onion, chopped
1 clove garlic, crushed
3 cups water
1 (16 ounce) package dry black-eyed peas
3 tablespoons cider vinegar
2 tablespoons white sugar
1 teaspoon salt
1 dash red pepper flakes, or to taste

Steps:

  • Heat oil in a large saucepan over medium-high heat. Add onions; saute until softened and translucent, 5 to 7 minutes. Stir in garlic; cook until fragrant, about 2 minutes. Add water, black-eyed peas, vinegar, sugar, salt, and red pepper flakes. Cook until peas are tender, 60 to 90 minutes.
