This comes from my aunt who makes a GREAT homemade pesto. A great appetizer that goes very well with wine. If you're like me and not a huge fan of goat cheese-you can substitute the goat cheese with more cream cheese/try feta. If you're looking for a great pesto recipe I recommend #81307. cooking time is chilling time. the longer it sits, the better the flavours.

6 1/2 tablespoons extra-virgin olive oil, divided
2 1/2 pounds eggplant
1/2 cup oil-packed sun-dried tomatoes (3 ounces), chopped, plus 2 tablespoons tomato oil
1/2 cup chopped flat-leaf parsley
1/2 cup chopped basil
1 tablespoon fresh lemon juice
Accompaniment: toasted baguette slices

Steps:

  • Preheat oven to 400°F with rack in middle.
  • Cut off and discard top of garlic head to expose cloves. Brush top of head with 1/2 tablespoon olive oil. Wrap garlic in foil and roast until tender, about 45 minutes. Cool to warm, then squeeze garlic cloves from skins into a small bowl, discarding skins.
  • Meanwhile, cut eggplant into 1/2-inch pieces and toss with 1 1/2 teaspoons salt in a large colander. Let drain 30 minutes. Squeeze eggplant in a kitchen towel to remove liquid.
  • Heat 2 tablespoons olive oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then sauté one third of eggplant until browned and tender, about 6 minutes. Transfer to a bowl. Cook remaining eggplant in olive oil in same manner (in 2 batches), transferring to bowl.
  • Add 1 cup cooked eggplant to garlic and coarsely mash together. Stir into remaining eggplant with sun-dried tomatoes (without tomato oil), parsley, basil, lemon juice, and 3/4 teaspoon pepper. Season with salt and drizzle with tomato oil.

  • To roast the garlic: Cut top 1/4" off the heads, place on foil and drizzle with olive oil. Enclose in the foil and bake at 350 till soft, about 30 - 40 minutes.

2 tablespoons finely chopped fresh thyme

2 large portobello mushroom caps
3 banana peppers, stemmed, seeds removed and quartered lengthwise
2 medium yellow squash, sliced lengthwise into 1/4-inch strips
2 medium zucchini, sliced lengthwise into 1/4-inch strips
1 large red onion, cut into 1/4-inch slices
3 ounces goat cheese, at room temperature
3 ounces sun-dried tomatoes, minced
Salt and freshly cracked black pepper
8 pieces whole wheat naan
Olive oil, for brushing
2 cups packed fresh basil leaves

Steps:

  • For the marinated veggies: Mix the oil, vinegar, thyme, Dijon, honey and garlic together. Season with salt and pepper and set aside.
  • Clean the gills of the portobello mushrooms by using a spoon and scraping out the black gills from the underside of the cap.
  • Place all the vegetables in a baking dish and then pour the marinade over them and toss. Allow the marinade to work its magic for 15 to 30 minutes.
  • Heat a grill pan over medium-high heat.
  • Grill the vegetables, in batches if necessary, until nice grill marks appear, 3 to 5 minutes a side. Set the cooked vegetables aside until ready to assemble (you can place them back in the baking dish where they were marinating). Once the mushrooms come off the grill, slice them thinly on the diagonal.
  • For the spread: Mix the goat cheese with the sun-dried tomatoes and season with some salt and pepper.
  • For the naan-wich build: Lightly brush the naan with oil and grill on both sides, just until some grill marks appear, 2 to 3 minutes per side. Start by schmearing some of the goat cheese spread on each piece of the griddled naan, and then layer the grilled vegetables high and top with a generous amount of basil, closing the naan-wich with the other slice of naan. Slice the sandwich on the diagonal and then enjoy feeling healthier with each bite.

1/4 cup olive oil
2 garlic cloves, minced

1 green onion, chopped
1 teaspoon pepper
1/2 teaspoon salt
1 pinch sugar
4 ounces goat cheese
1 loaf French baguette, sliced into 1/4 inch slices
1/2 cup olive oil
2 teaspoons cayenne pepper
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon black pepper
1 teaspoon paprika
1 1/2 teaspoons garlic powder

Steps:

  • Prepare the sun-dried tomatoes if dried. To re-hydrate sun-dried tomatoes, place them in boiling water for 5 minutes, then drain.
  • Place the tomatoes and remaining ingredients; except goat cheese, in a container and refrigerate for 4 hours. Process in a food processor until smooth.
  • Prepare cayenne toasts by preheating oven to 200 degrees F. Combine ingredients, other than bread, in food processor, mixing well. Lay bread slices on a cookie sheet. Brush tops lightly with spread. Cook 1 hour until crisp. Cool.
  • To serve, place sun-dried tomato spread on cayenne toasts and top with a sprinkle of goat cheese.

3 tbsp. Extra Virgin Olive oil for baking the eggplant
3-4 oz Laura Chenel Sonoma Chevre your taste preference
3 oz Sun dried tomatoes in olive oil*
1 large clove of garlic
2 tbsp. chopped sweet onion*
1/2 tbsp. Fresh thyme finely chopped*
1 tbsp. Fresh Oregano finely chopped*
1 Anchovy filet
1/2 tsp. red pepper flakes or to taste without seeds
1 tbsp. Italian Parsely, finely chopped
1 tbsp. Balsamic Vinegar
1 tbsp. Virgin Olive Oil
May substitute prepared Sun Dried Tomato with Herbs and Oil.
May be prepared a day ahead and refrigerated.

Steps:

  • Cut the eggplant in 2 inch pieces lengthwise then cut in half. Brush the eggplant with 3 TBS of Extra Virgin Olive Oil and place long cut side down on a non-stick baking sheet. Bake in 325 degree oven for about 45 minutes until soft but not mushy. Eggplant flesh should be a roasted medium brown. Allow to cool to room temperature. Add everything except the goat cheese to a food processor and process to a fine puree. Add the Chevre and pulse to blend, leaving enough cheese texture so you can see chunks of white. Serve as an appetizer.

8 ounces sun-dried tomatoes
3 -4 garlic cloves, to taste
8 leaves basil, chopped (or more, depending on how much you like the taste)
salt, to taste
black pepper, to taste
1 tablespoon vinegar
1/2-1 cup water
2 tablespoons olive oil

Steps:

  • Cover the tomatoes in boiling water for about 30 minutes.
  • Squeeze dry and then slice on a cutting board.
  • Put them into a food processor with the garlic and basil and process for a minute or two.
  • Add the vinegar.
  • Start adding water, one tablespoon at a time, while the machine is running.
  • The mass should start to turn into a deep red paste.
  • Add one tablespoon of oil.
  • Taste and then add the salt and pepper as needed (some brands of dried tomatoes are very salty).
  • You may need more water to make it spreadable.
  • Spoon into a glass jar, pressing down with a spoon and then pour olive oil over top to keep out the air.
  • Always make sure that the top is covered with olive oil.
  • Keep refrigerated.

  • I buy the tomatoes in the shuk (outdoor market), it pays to shop around because they can be quite expensive.
  • I have also made this with lemon juice instead of vinegar but I think it spoils faster.

1/2 cup chopped sun-dried tomato (drain oil)
8 ounces cream cheese, softened
2 tablespoons sour cream
2 finely chopped garlic cloves
1 round focaccia bread
25 -30 slices deli roast beef
6 -8 slices mozzarella cheese or 6 -8 slices provolone cheese
2 tomatoes, sliced
red onion, sliced

Steps:

  • Combine ingredients for sun-dried tomato spread and chill for at least 30 minutes.
  • Slice focaccia in half (horizontally).
  • Spread sun-dried tomato spread on each half.
  • Layer all sandwich ingredients.
  • Cut into wedges (you might need fancy toothpicks to hold them together!).
