- Heat the olive oil in a Dutch oven or heavy pot over medium heat. Add the onion and garlic; cook, stirring occasionally, until soft and glistening, about 6 minutes. Add the paprika and 1 teaspoon salt; cook until the oil turns deep red, about 1 minute. Add the flour and cook until just toasted, 30 more seconds. Immediately whisk in 4 cups water. Add the kielbasa, carrots, parsnips, potatoes and 1 1/2 teaspoons salt.
- Bring the soup to a boil, then reduce to a simmer; cover and cook until the vegetables are tender and the broth has thickened, about 20 minutes. Add the vinegar and season with pepper.
- Combine about half of the parsley with the sour cream in a small bowl and season with salt and pepper. Ladle the stew into bowls; top with the remaining parsley, a dollop of herbed sour cream and a sprinkle of paprika. Serve with bread.

- In a 12-in. skillet, cook bacon until crisp; remove to paper towel to drain. Cook sausage and onions in drippings over medium heat until onion is tender; drain. , Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until vegetables are tender, stirring occasionally. Crumble bacon; sprinkle over stew.

Kielbasa and Cabbage come together to form a perfect Polish summer hunter's stew. It's made from young cabbage, that is at its peak at the begging of the summer, with the addition of smoky Polish sausage and fragrant dill. It makes for a delicious European treat.

- In a large braising pan or cast iron skillet, add one tablespoon of olive oil and chopped onion. Cook for 3-4 minutes until translucent;
- Add shredded carrot and chopped cabbage, broth, tomato paste, caraway seeds, and bay leave. Mix well, cover and cook for about 20 minutes. Make sure that all cabbage is covered. If not, add more broth or water;
- Check if after 20 minutes the cabbage is soft. If not, cook for a little longer until all cabbage is cooked through and soft. Season with salt and pepper to your liking;
- In the meantime, heat up another tablespoon of oil in the cast iron skillet, add sliced kielbasa and cook for a few minutes on each side until golden brown;
- Once your cabbage is cooked, add cooked kielbasa;
- In a separate pan add flour and cook for about 2 minutes, add the last tablespoon of oil and mix; Add about a cup of broth from cabbage pot, mix well; Add the mixture to the cabbage pot and combine; Let cook for two-3 minutes. Add dill and serve.

- Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
- Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. - In a 5 quart pot, start bringing 2 qaurt of water to a boil over Med/High heat. Add butter/margarine.
- Add cut potatoes. (They take the longest to cook.) Let them boil a minute or two.
- Add broccoli and stir.
- While waiting for a boil, I cut the onion and Kielbasa, then add.(You can cut the Kielbasa more 'bite size', we just like the big circles:).
- Check potatoes for tenderness. Do not over boil. If potatoes are ready, turn down heat to Low. Slowly stir in both cans of cream of mushroom soup 'till smooth. Stir for a minute or two, then serve.

- Place half the sausage in a slow cooker, and top with the sauerkraut. Cover with the remaining sausage, apples, and onion. Top with the potatoes. Pour chicken broth over all, and sprinkle with caraway seeds.

- 1. Heat a dutch oven, or heavy soup pot over medium low heat. Add bacon to pot and brown for 5 minutes until lightly browned.
- 2. Raise heat to medium. Add onions and stir with bacon. Stir occasionally until onions are lightly browned. About 5 minutes.
- 3. Add garlic, yellow and red bell peppers and stir. Stir occasionally and cook until slightly browned. About 5 minutes.
- 4. Add sausage, paprika and red pepper flakes. Stir and cook for about 3 minutes.
- 5. Add tomatoes and cook until tomatoes begin to break up and release their juices. About 5-7 minutes.
- 6. Add ale and bay leaf. Raise heat to high and bring pot to a boil.
- 7. Once pot has hit a boil, lower heat to medium-low again and cover pot. Simmer for about 20 minutes. Serve hot. I served it with toasted sour dough bread. The yeasty bread is excellent with this yeast inspired stew!
