This dessert is like an orange creamsicle in cake form, with a sugar cookie crust and a lemony whipped cream frosting.

Unsalted butter, for the pan
8 to 10 sugar cookies
1/2 cup marshmallow creme
1 quart orange sherbet, softened
1 quart vanilla frozen yogurt, softened
2 cups heavy cream
3 tablespoons lemon curd
2 tablespoons confectioners' sugar
1/2 teaspoon pure vanilla extract
1/4 cup toasted sliced almonds

Steps:

  • Butter a 9-inch springform pan and line the bottom with a parchment paper circle.
  • Cover the bottom of the prepared pan with the sugar cookies. Spread the marshmallow creme on top of the cookies. Scoop the sherbet and frozen yogurt onto the marshmallow layer, packing it in tightly and alternating the scoops to create a marbled or checkerboard effect. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
  • Unmold the cake by running a knife around the edge of it, then unhinge the springform and remove. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a plate on the bottom and invert once more.
  • Add the heavy cream, lemon curd, confectioners' sugar and vanilla to a large bowl and whip with an electric mixer until soft peaks form. (This makes enough frosting to cover the top and sides of the cake with additional to pipe decorations if desired.)
  • Frost the top and sides of the cake with the lemon whipped cream frosting and sprinkle with the almonds. If the cake begins to get too soft, put it back into the freezer for a few minutes.
  • Freeze another 1 1/2 to 2 hours or up to overnight. Before serving, let the cake sit at room temperature for about 20 minutes.

Steps:

  • For the blackberry-raspberry ice cream: Place the cream, milk, sugar and salt in a saucepan and bring to a low simmer.
  • Whisk the eggs in a bowl. When cream mixture reaches 130 degrees F on a thermometer, quickly whisk in the eggs. Cook, stirring constantly, until the thermometer registers 170 degrees F. Remove from the heat and pour the custard through a fine-mesh sieve.
  • Whisk the blackberry puree into the custard, then cool over an ice bath. Transfer to an ice cream maker and freeze according to manufacturer's instructions.
  • Meanwhile, combine the raspberry puree and sugar in a small saucepan. Bring to a boil and cook until reduced by one-third. Let cool.
  • When the ice cream is done churning, transfer it to a rectangular container. Drop spoonfuls of the raspberry mixture on top of the ice cream and swirl in with a butter knife. Freeze.
  • For the lemon-rosemary olive oil cake: Preheat the oven to 350 degrees F. Spray a 9-inch springform pan (or 8 individual springform pans) with vegetable spray.
  • Combine the sugar and eggs in a stand mixer with the whisk attachment; mix just to combine. With the mixer on low speed, slowly drizzle in the olive oil, making sure the oil is well incorporated and emulsified.
  • Meanwhile, whisk together the flour, salt, baking powder and baking soda in a bowl.
  • In a second bowl or a measuring cup, combine the milk, lemon juice, lemon zest and rosemary.
  • Add the flour to the stand mixer in three additions, alternating with the milk mixture (2 additions). Begin and end with the flour, and be sure to whisk well after each addition--the batter will be runny. Pour the batter in the prepared springform pan.
  • Bake until the cake is a deep golden brown and bounces back when lightly pressed, 45 to 55 minutes (20 to 25 minutes for individual pans).
  • Cool to room temperature on a rack, then remove the cake from the pan.
  • For the lemon-rosemary glaze: In a bowl, whisk together the confectioners' sugar, lemon juice, lemon zest and rosemary until a glaze consistency similar to heavy cream is achieved. Adjust the consistency with more lemon juice or powdered sugar as needed.
  • For the candied lemon peel: Combine the sugar and 1 cup water in a small saucepan over medium-high heat. Bring to a boil, then turn off heat.
  • Using a vegetable peeler, peel the zest from the lemons; slice thinly.
  • Blanch the lemon zest twice in boiling water, changing the water in between. After the second blanching, strain and add the lemon zest to the simple syrup.
  • Bring the simple syrup to a boil, then turn off the heat and let the lemon zest sit in the simple syrup until translucent and cooled.
  • For the black salt sugar cookies: In a stand mixer fitted with the paddle attachment, cream together the butter and confectioners' sugar until light and fluffy. Add the vanilla and egg and mix until combined. Add the salt and flour and mix until a dough forms.
  • Form the dough into a disk, wrap in plastic and refrigerate for 30 to 45 minutes.
  • Roll out the dough to a 1/4-inch thickness, then cut out cookies using a raindrop-shaped cutter.
  • Transfer the cookies to a parchment-lined baking sheet and sprinkle lightly with black sea salt and blue sanding sugar.
  • Bake in a 350-degree oven until golden brown at the edges, 12 to 14 minutes.
  • For the raspberry coulis: Combine the raspberry puree and sugar in a small saucepan. Bring to a boil and cook until reduced by one-quarter. Let cool.
  • For the passion fruit coulis: Combine the passion fruit puree and sugar in a small saucepan. Bring to a boil; cook until reduced by one-quarter. Let cool.
  • To finish: Glaze the cake with the lemon-rosemary glaze and top with the candied lemon peel.
  • Serve with the two coulis and the ice cream and cookies on the side.

1 cup pecans, chopped
4 large eggs
1 1/2 cups sour cream
1 tablespoon vanilla extract
2 1/4 cups unbleached all-purpose flour (11 1/2 ounces)
1 1/4 cups granulated sugar (8 3/4 ounces)
1 tablespoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
12 tablespoons unsalted butter, softened but still cool, cut into 1-inch cubes (1 1/2 sticks)

Steps:

  • Adjust the oven rack to the lowest position and heat the oven to 350 degrees. Grease the inside of a 10 inch pan.
  • For the Steusel - Place the flour, granulated sugar, 1/4 cup dark brown sugar, and the cinnamon in a food processor and pulse a few times to combine. Transfer 1 1/4 cups of the mixture to small bowl and stir in remaining 1/4 cup brown sugar; set aside (this will be the streusel for the inside of the cake). Add the butter and pecans to the remaining dry ingredients in the food processor bowl. Pulse the mixture about 3-4 times until the nuts and butter have been broken down into small pebbly pieces. Set aside. (The streusel with the butter and nuts will be for the top of the cake). If you do not have a food process, you could also do this with a pastry cutter but note it will take a bit more time.
  • For the Cake - In a small bowl, combine the eggs, 1 cup of the sour cream and vanilla and set aside. In the bowl of a standing mixer, combine the flour, sugar, baking powder, baking soda, and salt at low speed, about 30 seconds. Add the butter and remaining 1/2 cup of sour cream and mix at low speed until the dry ingredients are moistened. Increase to medium speed and beat 30 seconds. Scrape down the sides of the bowl with a rubber spatula. Decrease the mixer speed to low and slowly incorporate the egg mixture in 3 additions, beating for 20 seconds after each and scraping the sides of bowl as necessary. Increase speed to medium-high and beat for 1 minute (the batter should increase in volume and become aerated and pale in color).
  • Add 2 cups of the batter to the prepared pan. With an offset metal spatula or rubber spatula, smooth the surface of the batter. Sprinkle with 3/4 cup streusel filling (without butter or nuts). Drop 2 more cups of the batter over the streusel and spread evenly. Then add the remaining streusel filling. Top with remaining batter and then the streusel topping (with the butter and nuts).
  • Bakes until the cake feels firm to the touch and a toothpick comes inserted into the center comes out clean, about 60 minutes. Cool the cake in the pan for about 30 minutes. Then release the clasps of the springform pan and cool completely and serve.

Steps:

  • FOR THE CAKE:.
  • Preheat oven 350 degrees. Grease and flour a 10" (12-cup) tube pan.
  • Bake pecans in a single layer on a baking sheet 5 - 7 minutes or until lightly toasted and fragrant. (This can be done in a microwave-safe plate in 1 minute increments until the nuts are 'roasted'. Stir every minute for about 3 - 4 minutes total, allowing to sit 5 minutes.).
  • Beat softened butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating at medium speed with an electric mixer until creamy. Gradually add sugar, beating at medium speed until light and fluffy. Add eggs, 1 at a time, beating just until yellow dissappears after each addition.

  • BROWN SUGAR-PRALINE GLAZE.
  • Melt butter in a 1 quart saucepan over medium heat. Whisk in brown sugar and corn syrup; cook 1 minute. Add powdered sugar, milk and vanilla; whisk until creamy (about 2 minutes). Remove from heat and immediately pour all glazing mixture over cooled cake in a circular motion. Cut cake with a serrated knife. Makes 1 cup.
  • ALTERNATE POWDERED SUGAR GLAZE.
  • Stir together powdered sugar, milk and vanilla until smooth, stirring in up to 1 tablespoon additional milk, if necessary, for desired consistency. Pour all glazing mixture over cooled cake. Makes 1 cup.

Four 2.75-ounce packages chocolate wafer cookies
Three 2.75-ounce packages vanilla wafer cookies
Two 2.75-ounce packages strawberry wafer cookies
1 1/2 cups heavy cream
1/4 cup sugar
Pink, white and brown sprinkles, for decorating

Steps:

  • Line the inside of an 8-inch round (3-quart) baking pan with plastic wrap, leaving a 3-inch overhang of wrap.
  • Spread 1 pint of ice cream across the bottom of the prepared pan. Line the edge of the pan with a single layer of upright chocolate wafer cookies, pressing them all the way to the bottom so they sit firmly in the ice cream. Repeat with another circle of chocolate wafer cookies nestled against the first row. Arrange 2 circles of vanilla wafer cookies followed by 2 circles of strawberry wafer cookies. Fill the center hole with 2 to 3 strawberry wafer cookies.
  • Spread the remaining ice cream over the top, tapping the pan on the counter lightly to makes sure the ice cream fills all the nooks and crannies (the ice cream should be quite soft--almost melted is okay). Pull the plastic wrap up and over to cover the top and freeze at least overnight and up to 2 weeks.
  • When ready to serve, remove the cake from the freezer and let sit for 10 minutes to make unmolding easier. Beat the cream with the sugar until stiff peaks form. Put 1 cup of the whipped cream in a pastry bag fitted with a medium star tip.
  • Unwrap and invert the cake onto a serving dish. Frost with the remaining whipped cream, then use the whipped cream in the pastry bag to pipe stars on top and around the bottom of the cake. Decorate with the sprinkles.

Devil's Food Cake With Brown Sugar Cream Cheese Frosting image

We had a large neighborhood "birthday" party and I helped make the cakes. This is the recipe we used for the cakes, there was one of these cakes on each table as the center piece. The frosting is unusual with brown sugar! It is very tasty. And sweet. It is a very easy cake to put together. The sides of the cake are not frosted. You can see each cake layer and the frosting layer from the outsides of cake. In the cakes we made, we put 3 or 4 wooden kabob skewers down the center to hold the cakes in place. This is not a necessary step, just one to insure no sliding!!! Keep in fridge. Cooking time is for baking the cakes, making frosting and putting cake together. Cakes need to cool before cutting.

Steps:

  • Whip cream in a chilled bowl. Beat until stiff peaks, being careful not to make butter!
  • In a separate bowl, mix cream cheese, brown sugar, vanilla and salt until combined.
  • Fold the whipped cream into the cream cheese mixture. Leaving no streaks of the cream cheese mixture.
  • Slice each cake round horizontally making 4 layers.
  • Place the bottom layer of cake on a cake stand, put 1/4 of frosting on bottom layer, spreading to the edges. It is ok to have it extend over the edges a bit to show on the outside.
  • Place the 2nd layer of cake and apply the next 1/4 of frosting, pushing it out to edges. Repeat until all layers of cake are used. Spread the last 1/4 of frosting on top, making it look nice and swirly.
  • If you would like more decoration on the top, take a block of chocolate or a Hershey bar and make chocolate shavings with a vegetable peeler. Sprinkle on top.

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Lightly butter and flour cake pan, knocking out excess flour.
  • Make caramelized apples:
  • Peel and core apples, then cut into 1/2-inch-thick wedges.
  • Spread softened butter in an even layer over bottom of a 12-inch heavy skillet and sprinkle with brown sugar. Add apple wedges and cook over moderate heat, without stirring, until sugar is melted and apples start to give off liquid, about 10 minutes. Cook, stirring occasionally, until apples are just tender and juices become syrupy, about 30 minutes more.

2 cups heavy whipping cream

3 large egg whites
Cakes:
2 cups 3/4-inch cubes peeled seeded kabocha squash (from one 3-pound squash)
1 cup whole milk
1 vanilla bean, split lengthwise
Nonstick vegetable oil spray
2/3 cup (packed) golden brown sugar
6 tablespoons olive oil
1/4 cup lager (mild-flavored beer)
1 large egg
3/4 cup all purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • For brown sugar cream:
  • Place 1 tablespoon water in cup. Sprinkle gelatin over. Let stand 10 minutes to soften.
  • Stir cream and sugar in medium saucepan over medium heat until sugar dissolves. Add egg whites and whisk until mixture thickens, about 12 minutes (do not boil). Add gelatin mixture; whisk until dissolved. Strain into large clean bowl. Chill until cold. Cover and chill overnight.
  • For cakes:
  • Combine squash and milk in heavy small saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer over medium heat. Partially cover, reduce heat to medium-low, and simmer until squash is very tender, about 20 minutes. Remove vanilla bean. Drain squash. Place in processor and blend until smooth. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Preheat oven to 375°F. Spray six 3/4cup ramekins with nonstick spray. Place 1/2 cup squash puree in large bowl (reserve remaining puree for another use). Add sugar, oil, beer, and egg to puree and beat to blend. Sift flour, cinnamon, baking soda, and salt over; beat to blend. Divide batter among prepared ramekins.

2 cups flour
1 pinch salt

Steps:

  • Mix ingredients together.
  • Grease and flour a 9 x 13 pan.

  • For Brown Sugar Icing: In saucepan, add brown sugar, butter and whipping cream. Bring to a boil.
  • Boil 1 Minute.
  • Add 1 tsp Vanilla.
  • Beat with mixer until cooled.

2 cups white sugar
1 cup Crisco
5 large eggs
2 cups cake flour
1 teaspoon coconut extract
1 teaspoon salt
1 1/2 teaspoons baking powder
1 cup sour cream
1 cup sweetened flaked coconut
3/4 cup water
2 1/3 cups powdered sugar
1 1/2 teaspoons coconut extract
3/4 cup flaked coconut
3/4 cup mini marshmallows

Steps:

  • Preheat oven to 350°F.
  • Spray Bundt pan with non-stick baking spray.
  • In a mixing bowl sift together: flour, baking powder and salt; set aside.
  • Cream together ( using the Kitchen-aid) sugar, Crisco, eggs and coconut extract.
  • Add to egg mixture flour mix alternating with sour cream- use Kitchen-aid mixer on medium.
  • Turn mixer to low and mix in coconut.
  • Spoon into bundt pan.
  • Bake for 40 minutes or until toothpick comes out clean/top is brown--don't overbake.
  • Take bundt pan with cake out of oven and set aside for 10 minutes.
  • Make glaze- mix water, powdered sugar and coconut extract into saucepan over medium high flame- whisk constantly until sugar is dissolved then set aside.
  • Poke holes in cake bottom and 1/3 of glaze into holes.
  • Invert bundt pan onto plate, pour glaze over top then garnish with coconut (toasted) and mini marshmallows.
  • Let cool completely before cutting.

  • Preheat oven to 400'.
  • Boil water and margarine in a saucepan.
  • Remove from heat.
  • Stir in flour.
  • Add eggs, one at a time, mix well -- it will be sticky --( You may use an electric mixer).
  • Spread mixture into a 9 X 13 inch pan and bake 25-30 minutes or until lightly browned. Cool.
  • Combine pudding and milk.

2 teaspoon baking soda

1/2 cup vegetable oil
1/2 cup applesauce
4 large eggs
3 cups grated carrots
1 cup chopped pecans or walnuts
For icing:
1 stick butter, softened
8 ounce cream cheese, softened
2 cups confectioner's sugar
1 teaspoon vanilla extract

Steps:

  • For cake: Preheat oven at 350 degrees. Lightly grease 9x13 inch pan. Sift flour, baking soda, baking powder, salt, cinnamon and nutmeg together. Set aside. Mix oil and applesauce. Mix wet mixture with the sifted flour. Mix thoroughly. Add one egg at a time, beating thoroughly after each addition. Add in carrots and pecans. Pour into greased baking pan. Bake for 40-45 minutes. Check it with a cake tester, little crumbs should stick. Cool in rack for 30 minutes before spreading icing. For icing: Mix butter and cream cheese until well incorporated. Add in sugar and vanilla; mix thoroughly. Spread on top and sides of cake.

I wanted to be creative & add additional flavor to this boxed mix, & did just that, with a few simple INGREDIENTS. I garnished the cake with Sugar Free chocolate covered Raisins & fresh raspberries in addition to the Sugar Free frosting. I created this cake for a community Reunion in Arkansas where I was displaying a variety of desserts both regular & Sugar Free. Those that were looking for SUGAR FREE were pleasantly surprised to see that I had 3 cakes on the menu. All 3 were a big success.

3 large eggs, room temperature
1/3 cup(s) oil
1 cup(s) sour cream, room temperature

Steps:

  • Preheat oven to 325 degrees F. Assemble all the ingredients you will need to make the cake. I used a traditional size Bundt pan called Heritage. It holds about 12 cups but this recipe is smaller.
  • Prepare cake by adding cake mix to a mixing bowl, then adding eggs, oil, & milk and beating till blended
  • Then add the sour cream, crushed coffee granules, and the extracts, then beat till blended. Prepare Bundt pan by spraying with Bakers Joy, or using butter and dusting lightly with . Remove any excess flour.
  • Pour cake batter into prepared pan, and bake according to directions on box or until toothpick inserted into middle of cake comes out clean. Remove from cake and allow to cool for at least 10 minutes.
  • Invert cake onto cooling rack, cake board or platter.
  • Frost as desired, then garnish with fresh raspberries and Sugar Free chocolate covered raisins. I ordered them from Nuts.com, they come in both white, chocolate & dark chocolate, all SUGAR FREE at a very reasonable price.

This Sugar Free dessert was also featured at a community event, and was a big hit. Making it with cake mix makes it quick and easy. You can serve it with or without the fresh fruit. I frosted the cake with a Sugar Free Chocolate Frosting. Adding the lemon lime Kool Aid changed the flavor and color of the cake, and the addition of the Pistachio pudding and sour cream kept it very moist. I also used milk instead of water to add more body to the cake.

  • Preheat oven to 325 degrees F. This is the pan I used to make this cake, it is called the MARYANN BAKING PAN, it has a 10 cup capacity, and will hold this recipe. If you do not have a Maryann Pan, you can serve the fruit on the side. You can even use 2 Flan pans if you have them. I purchased this pan from Amazon.
  • These are most of the ingredients that I used in this recipe.
  • Add the cake mix to a mixing bowl, then add the oil, Kool aid, milk & eggs, and beat till blended.
  • Then add the sour cream & apple sauce, & beat just till blended into batter.
  • Spray Pan with Bakers Joy or butter and flour pan and tap out excess flour.
  • Pour batter into pan, make sure you leave at least 1 1/2 inch space from top of pan to allow cake to rise.
  • Bake in preheated 325 degrees F,. oven for about 40 to 45 minutes or until tooth pick inserted into center comes out clean. Remove from oven and allow to sit in pan for at least 10 minutes till cake pulls away from sides of pan.
  • Then invert onto a cake platter or cake board or cooling rack to cool completely before frosting cake. Can be served plain or with fresh fruit and no frosting, what ever you prefer. Can also add sugar free cool whip with the fresh fruit if desired. Please note to add fruit to cake shortly before ready to serve. I did not sweeten the fruit, because there was frosting on the cake. Frost as you desire.
  • Peel & slice Kiwi's wash, hull and quarter berries just before ready to serve and add to top of cake or serve on side.

  • Spread one can of rolls in an ungreased 9x13 pan.
