Dough for single-crust pie
1 package (8 ounces) reduced-fat cream cheese
1/2 cup egg substitute
3 tablespoons honey
1 teaspoon vanilla extract
3-1/2 cups sliced fresh strawberries
1 tablespoon cornstarch
1/2 cup cold water
1/2 cup reduced-sugar strawberry preserves
Fat-free whipped topping, optional

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 350°., Meanwhile, in a large bowl, beat cream cheese, egg substitute, honey and vanilla until smooth. Pour into crust. Bake until center is almost set, 15-18 minutes longer. Cool completely on a wire rack., Arrange strawberries over filling. In a saucepan, combine cornstarch and water until smooth. Stir in preserves. Bring to a boil; cook and stir for 2 minutes or until thickened. Spoon or brush over the strawberries. Refrigerate for 2 hours before cutting. If desired, garnish with whipped topping.

1 (8 ounce) package cream cheese, softened
½ cup powdered sugar
¾ teaspoon vanilla extract
1 (9 inch) baked pie crust
1 quart fresh strawberries, hulled and halved
¾ cup white sugar
3 tablespoons cornstarch
½ cup water

Steps:

  • Beat cream cheese with an electric mixer until creamy. Add a little powdered sugar at a time, and beat slowly until incorporated. Mix in vanilla.
  • Spread cream cheese mixture into the pie crust. Refrigerate until firm, 15 to 30 minutes.
  • Meanwhile, combine 3/4 cup of the strawberries, sugar, water, and cornstarch in a blender. Blend lightly. Reserve remaining strawberries.
  • Pour blended strawberry mixture into a saucepan over medium heat; stir constantly until boiling. Stir for an additional 2 minutes once it boils; it should thicken very quickly. Remove from the heat and stir a few times while cooling, about 3 minutes.
  • Remove chilled pie from the refrigerator and arrange reserved strawberries on top of the cream cheese layer. Pour thickened sauce over top. Return to the refrigerator for at least 2 hours before serving.

1 quart fresh strawberries
2 tablespoons minute tapioca
1/4 cup granulated sugar
9 graham crackers, crushed
1/4 cup butter, melted
1/4 cup granulated sugar
1 (4 ounce) package cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla
1/2 pint heavy whipping cream

Steps:

  • Combine strawberries, tapioca and 1/4 cup granulated sugar in 2 quart saucepan.
  • Cook on medium heat, stirring constantly until mixture thickens.
  • Remove from heat and let cool.
  • Combine graham cracker crumbs and 1/4 cup granulated sugar.
  • Add melted butter to the cracker/sugar mixture until evenly coated.
  • Press into pie tins.
  • Bake for about 10 minutes at 350 degrees.
  • Let cool.
  • Mix cream cheese, powdered sugar and vanilla until well blended.
  • Whip cream until stiff.
  • Fold whipped cream into cream cheese mixture.
  • Pour cream cheese filling into cooled pie crusts, spreading evenly on bottoms and sides, creating a shallow depression.
  • Store in refrigerator until strawberry topping is cooled.
  • Carefully spoon strawberry topping into the depression previously made in the filling.
  • Store in refrigerator until ready to serve.

1 ⅓ cups all-purpose flour
½ teaspoon salt
4 tablespoons shortening
2 tablespoons butter
3 tablespoons cold water
1 (8 ounce) package cream cheese, softened
¾ cup confectioners' sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream, whipped
½ teaspoon almond extract
¼ cup chopped almonds
4 cups fresh strawberries, halved
¼ cup currant jelly

Steps:

  • Combine flour and salt in medium bowl. Cut in shortening and butter until all the flour is blended to form pea-sized crumbs. Sprinkle with water one tablespoon at a time. Toss lightly with a fork until dough forms a ball. Chill dough 15 to 30 minutes.
  • Roll dough between two sheets of wax paper into an 11 inch circle. Remove top sheet of wax paper and lay into 9 inch pie pan. Prick bottom and sides of pie shell thoroughly to prevent shrinkage.
  • Bake at 425 degrees F (220 degrees C) for 10 to 15 minutes or until lightly browned. Cool to room temperature.
  • Combine cream cheese and confectioner 's sugar in medium bowl. Beat with electric mixer at medium speed until smooth. Beat in vanilla and almond extracts. Fold in whipped cream and almonds by hand until well mixed. Pour into cooled crust. Refrigerate until firm.
  • Decorate pie with strawberries fully or just around the edge. Heat jelly in microwave oven just until soft and brush carefully over strawberries until glazed. Refrigerate until serving.

3 ounces Philadelphia Cream Cheese
1 teaspoon milk
1 quart fresh strawberries
3/4 cup water
1 cup sugar

  • Blend cream cheese and milk together.

1 pkg strawberries, fresh
16 oz cream cheese
1 pkg strawberry gelatin (large) or 2 small packages
1 pkg flavorless gelatin small package
14 oz condensed milk (small can)
6 oz 4 graham cracker pie crusts (9 inch, ready to fill crumb crust)

Steps:

  • 1. Prepare gelatin according to package directions. DO NOT put in fridge to cool. Stir mixture until properly diluted.
  • 2. Add strawberries to blender. Cover blender and start at a lower setting (so as not to spill). Then add cream cheese packages and increase blender setting to mix strawberries and cream cheese well.
  • 3. Once the strawberries and cream cheese packages are blended well, slowly add gelatin solution. Adjust blender settings appropriately so as not to spill over pie filling.
  • 4. Just like gelatin, slowly add condensed milk to blender. Once container is empty, allow mixture to blend for approximately 30 more seconds. Mixture will be thick Turn Blender off.
  • 5. Pour contents evenly over 4 9-inch pie crusts. Cover filled pies with clear plastic cover and let sit in refrigerator for approximately 30-45 minutes. Pie filling will look slightly glossy when first poured in.
  • 6. Eat and enjoy!

1 1/2 c graham cracker crumbs
1/4 c sugar
6 Tbsp butter melted
PIE FILLING
1 box (8 ounces) cream cheese
3/4 tsp vanilla extract

STRAWBERRY TOPPING
2 Tbsp cornstarch
1/4 c sugar
2 Tbsp strawberry gelatin
1/2 c water

1 9 inch pie crust ( i made homemade) can use store bought
CRUST I USED WHICH WAS VERY GOOD WITH THIS PIE ( I DO THE CRUST IN MY FOOD PROCESSOR ) I DID THIS IN MY FOOD PROCESSOR..PULSED THE SALT AND FLOUR, THEN ADDED THE SHORTENING...PULSED ABOUT 10 TIMES..THEN ADDED THE LIQUID TILL FORMED A BALL.
REFRIDGERATE FOR ABOUT AN HOUR
1 - 1/3 c flour
1/4 tsp salt
1/2 c shortening
5 - 6 tsp milk
4 tsp water
CREAM CHEESE LAYER
1 pkg (8 ounces) cream cheese, softened
3 Tbsp sugar
1 - 1 1/2 Tbsp milk
GLAZE
1 3/4 c water
2 Tbsp corn starch
1 pinch salt
1/2 c sugar
1 - 3 oz box, strawberry gelatin
2 - 16 oz containers of fresh strawberries, washed and sliced

Steps:

  • 1. Have crust prepared and cooled. Wash and slice your strawberries.
  • 2. In a mixing bowl; mix the cream cheese, sugar and milk till smooth.
  • 3. Spread the cream cheese layer evenly onto the cooled crust. Refrigerate just till set up.
  • 4. In a medium pan, whisk the water, corn starch, sugar and salt. Bring to a boil, continue to stir until thickened. About 2 - 3 minutes. Remove from heat and whisk in the strawberry gelatin, blending well. Set aside to cool to about room temperature.
  • 5. After the glaze has had time to cool; blend it with the sliced strawberries. Stir to coat the strawberries well. I sometimes put this in the refrigerator till ready to fill the pie. Spread the strawberries over the chilled cream cheese layer.
  • 6. Refrigerate till ready to serve. I sometimes serve it with a dollop of whipped cream and a fresh strawberry. This is delicious..hope you like this pie as much as my family and friends do.

3 lb fresh strawberries, fully ripe
1 shortbread cookie pie crust, keebler ready made
4 oz cream cheese, softened
2 Tbsp milk
3/4 c white granulated sugar
2 Tbsp cornstarch

  • 1. Mix cream cheese and milk with small wire whisk until smooth and well blended. Spread on bottom only of ready made pie crust.
  • 2. Wash and cap strawberries. Drain well and pat dry with paper towels. Take half of the strawberries (leave whole) and arrange on top of cream cheese layer in pie crust, covering bottom of pie crust completely.

A recipe from my Great Aunt's recipe box, clipped from the local newspaper. From the red strawberry stains on the recipe, I am guessing this is a good one. Prep time does not include chilling time. The original version called for regular cream cheese, but these days I would use neufchatel.

12 ounces cream cheese or 12 ounces neufchatel cheese, at room temperature
3/4 cup granulated sugar, divided
2 large eggs
1/2 teaspoon vanilla extract
1 10 inch graham cracker pie crust
1 cup sour cream
1 quart fresh strawberries, washed,drained well,hulled
1 cup water
2 tablespoons cornstarch
1 tablespoon lemon juice
red food coloring, as needed

Steps:

  • Mix together the cream cheese, 1/2 cup of the sugar, eggs, and vanilla until light and smooth.
  • Spread into the prepared graham cracker crust.
  • Bake in a preheated oven at 350 F for 35-40 minutes (Cover crust with a pie shield or a ring of foil if it starts to overbrown).
  • As soon as the pie comes out of the oven, immediately spread the sour cream on top.
  • Cool completely.
  • Place the best looking whole strawberries (tips upward) across the surface of the pie (save some for the topping).
  • Mash any remaining berries and combine with 1 cup water in a small pan; cook for 5 minutes.
  • Pour through a sieve and return the sieved juices back to the pan.
  • Mix the remaining 1/4 cup sugar with the cornstarch and add to the berry juice, along with lemon juice.

1 unbaked pastry shell (9 inches)
11 ounces cream cheese, softened
1/2 cup plus 2 tablespoons sugar, divided
1/2 teaspoon vanilla extract
2 large eggs
1 cup sour cream
2 pints fresh strawberries, hulled
Confectioners' sugar, optional

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil and set shell aside. , In a bowl, combine cream cheese, 1/2 cup sugar and vanilla; beat until smooth. Add eggs; mix until combined. Pour into shell. Bake at 350° for 20-25 minutes or until center is almost set. Remove from the oven and let stand for 5 minutes. , Meanwhile, combine sour cream and remaining sugar in a bowl; mix well. Spread over filling. Turn oven off. Return pie to the oven for 15 minutes. Remove; cool on a wire rack. Refrigerate for 6 hours or overnight. Before serving, top with strawberries. Dust with confectioners' sugar if desired.

8 ounces cream cheese, softened
1/2 cup sugar
1 quart fresh strawberries, washed and cored
3/4 cup sugar
1 1/2 cups water
1 (4 ounce) package strawberry Jell-O gelatin dessert
2 tablespoons cornstarch
1 keebler shortbread pie crust

Steps:

  • In a small mixing bowl beat cream cheese and sugar until fluffy. Cover and put in refrigerator. Place several whole strawberries on the bottom of the pie shell and then fill in with sliced strawberries. Set aside. Bring water, sugar, cornstarch to boil over medium-low heat until thick and clear, about 2 minutes. Remove from heat and add Jell-O. Stir until dissolved and pour while hot over berries in pie shell. Let cool, then refrigerate for several hours or overnight. When pie is cooled, spoon the cream cheese topping on top of the pie and smooth over. Or, if you like you can pipe the cheese on with a frosting bag and tip. (a Ziploc bag with the corner snipped off works well too.) Refrigerate until ready to eat. Enjoy!

1 pie shell, baked (see Perfect Pie Crust, 9 or 10 inch)
250 g light cream cheese
2 tablespoons 1% low-fat milk
1/4 teaspoon almond extract
2 tablespoons sugar
4 cups fresh strawberries, halved
1/4-1/2 cup water, start with 1/4 cup
2 cups fresh strawberries, can be frozen
3/4 cup sugar
2 1/2 tablespoons cornstarch
1 tablespoon butter

Steps:

  • Mix cream cheese, milk, almond extract and sugar in a mixer until well blended. Spread in bottom of pie shell.
  • Place the fresh strawberries on top of the cream cheese mix.
  • In a sauce pan combine water (1/4 cup), 2 cups fresh/frozen strawberries, sugar and warm through until the strawberries are soft enough to mush. In a small bowl add a bit of water to the corn stach and stir until dissolved. Add to strawberry sauce and continue stirring over heat until the sauce thickens and turns clear. This may take 2-4 minute Add more water if too thick, Remove from heat and stir in butter.
  • Pour strawberry sauce over the cream cheese + strawberries. Let set and cool before serving.

2 6 oz. pie shells (oreo, chocolate ,graham) your choice
1 pkg 8 oz. cream cheese softened room temperature
1 pkg frozen pre sweetened strawberries (16 oz) thawed
3/4 c heavy whipping cream, (room temperature)
2 pkg 8 oz tubs each whipped topping thawed
2 pkg jello instant cheesecake pudding & pie filling
1 3/4 c milk
few drops red food color, optional
garnish of fruit and or candies of your choice

Steps:

  • 1. In a large bowl combine cream cheese with heavy whipping cream then beat till creamy.
  • 2. Add pie filling to a medium side bowl and pour in cold milk, then beat till thickened.
  • 3. Add pudding mixture to cream cheese mixture and stir to combine.
  • 4. Add thawed strawberries, and optional food coloring if desired. Then fold in till blended.
  • 5. Add tub of whipped topping.
  • 6. Fold till blended.
  • 7. Pour into pie Crust, and top with remaining whipped topping, and garnish with fruit or candies of your choice. Refrigerate for at least 4 hours or freeze and serve frozen.
  • 8. Serve and enjoy.
