Orange-Strawberry Salad image

A colorful salad, indeed! Lovely as part of a brunch buffet or terrific as a side to grilled poultry or beef.

1 teaspoon grated orange peel
1/4 cup orange juice
2 tablespoons sugar
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley
1 tablespoon vegetable oil

3 oranges, peeled, sliced
1 cup sliced fresh strawberries
6 cups salad greens

Steps:

  • In tightly covered container, shake all dressing ingredients.
  • Serve oranges and strawberries on salad greens. Serve with dressing.

This salad is a fan favorite featuring a sweet and tangy poppy sesame seed dressing.

8 ounces baby spinach (washed and dried)
2 cups strawberries (stemmed and sliced)
1 cup blueberries
½ cup chopped walnuts
½ cup olive oil
⅓ cup sugar
¼ cup distilled white vinegar
1 tablespoon sesame seeds
1 tablespoon poppy seeds
1 tablespoon onion, finely minced
½ teaspoon worcestershire sauce
¼ teaspoon kosher salt

Steps:

  • In a large bowl, combine the spinach, strawberries, blueberries, and walnuts.
  • In a medium bowl or mason jar, combine all of the dressing ingredients. Whisk or shake to combine. Pour half the dressing over the salad, and toss. Serve the remaining dressing on the side.

½ cup sliced almonds
3 tablespoons white sugar
⅓ cup vegetable oil
3 tablespoons apple cider vinegar
hot sauce
2 ½ tablespoons white sugar
1 teaspoon salt
1 dash ground black pepper
1 (12 ounce) bag spring mix lettuce
1 (11 ounce) can mandarin oranges, drained
1 cup sliced fresh strawberries
1 cup chopped celery
½ cup chopped red onion
2 teaspoons chopped fresh parsley

Steps:

  • Heat a heavy-bottomed pan over medium heat. Stir the almonds and 3 tablespoons sugar together in the skillet; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.
  • Whisk the vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons sugar, salt, and pepper together in a bowl. Toss the spring mix, oranges, strawberries, celery, onion, and parsley together in a large mixing bowl; drizzle the vegetable oil mixture over the lettuce mixture and stir gently to coat. Sprinkle the toasted almonds over the salad to serve.

1 can (11 ounces) mandarin oranges, drained
