STRAWBERRY BANANA OVERNIGHT FRENCH TOAST image

I made this recipe many years ago for a morning 65th wedding anniversary celebration. It is quick and easy, not to mention delicious. I serve this when i have overnight guests. The smell when it is baking, has my company running to the kitchen.

1 loaf of french bread
5 large eggs
1 1/2 c milk, 2%
1 Tbsp vanilla extract
1/4 tsp baking powder
1 Tbsp pure vanilla extract
20 oz bag frozen strawberries
4 ripe bannanas, sliced
1 c sugar
1 Tbsp apple pie spice
cinnamon sugar mixture (found in the baking isle) or make your own.

Steps:

  • 1. Cut bread into 8 thick slices. Place in an a 9X13 baking dish or any dish to refrigerate overnight. Combine milk,eggs,baking powder and vanilla. Beat until combined. Pour over bread.Continue to turn bread over several times, until all of the liquid has been absorbed.Cover and refrigerate overnight.In the morning, in a bowl, combine bannanas, frozen strawberries, sugar and apple pie spice. Stir until the fruit is coated. Pour into the bottom of a greased 9x13 baking dish and top with the prepared bread. Sprinkle with cinnamon sugar. Bake 20 to 25 minutes at 450 degrees. Place each toast on a dessert plate and top with the fruit mixture. Follow with a dollop of cool whip or ready whip out of a can.
