1/4 cup sugar
2 cups packed fresh mint leaves, and stems coarsely chopped, plus sprigs for garnish
1 cup heavy cream
1 quart strawberry, hulled and thinly sliced
1/8 cup toasted chopped macadamia nuts or 1/8 cup toasted chopped cashews

Steps:

  • In a medium saucepan over medium heat, bring sugar, mint, and 2 tablespoons water to a boil.
  • Remove from heat; steep 15 minutes.
  • Strain through a fine-mesh sieve into a measuring cup, pressing to extract as much liquid as possible.
  • Discard solids.
  • Let cool (makes about a cup).
  • Meanwhile, in a large bowl, whip cream until stiff peaks form.
  • Gently fold in cup of a syrup (store any remaining syrup); if needed, re-whip cream to stiffen.
  • Starting with strawberries, spoon alternating layers of strawberries and cream into four serving glasses. (You can use martini glasses or champagne flutes.).
  • Top each with a mint sprig and chopped toasted almonds (optional).
  • *You can also use the mint syrup to sweeten iced tea or lemonade. For a bracing cocktail, add a splash to a glass filled with seltzer, vodka, and lemon.

1 pint fresh strawberries, quartered
6 fresh mint leaves, finely chopped
ΒΌ cup water
2 tablespoons sugar
4 scoops vanilla ice cream
1 cup whipped cream for garnish
4 fresh mint leaves for garnish

Steps:

  • Mix the strawberries with the mint in a bowl.
  • Combine the water and sugar in a small saucepan and bring to a boil. Reduce heat to medium and simmer until mixture reaches a thin syrup consistency, about 3 minutes.
  • Drizzle syrup over the strawberries and mint and toss gently. Divide berries into four serving cups. Top each with ice cream and a dollop of whipped cream. Garnish with a mint leaf.

ROASTED STRAWBERRIES AND MINT CHANTILLY CREAM



Roasted Strawberries and Mint Chantilly Cream image

1 tablespoon butter
3 tablespoons granulated sugar
16 large, perfect strawberries, preferably with stems
1 cup chilled heavy cream
2 tablespoons green creme de menthe
4 fresh mint sprigs, optional

Steps:

  • Preheat the oven to 450 degrees. In an ovenproof skillet just large enough to hold the strawberries in one layer, melt the butter in the preheating oven, 2 to 3 minutes. Watch carefully so that the butter does not burn. Remove pan from oven and stir in 2 tablespoons of the sugar. The mixture will be grainy. Add the berries, tossing to coat with the butter and sugar. Spread in a single layer. Roast, stirring and turning once or twice, until the berries just begin to soften, about 5 minutes. Gently roll the roasted berries in the pan syrup to coat, then let them cool for about 5 minutes in the skillet.
  • While the berries are roasting, whip the cream with the creme de menthe and remaining 1 tablespoon of sugar just until soft peaks form. Divide the chantilly cream among 4 shallow dessert bowls. Arrange the lukewarm berries in the chantilly cream, pointed ends up. Using a teaspoon, dribble the red pan glaze over the mint cream. Garnish with mint sprigs. Serve immediately.

This Minimalist recipe is as basic as dessert gets, and especially in strawberry season it's just perfect. It is essentially fresh strawberries and whipped cream (substitute heavy cream, sour cream or yogurt). It can be eaten right away or refrigerated. Only a fool would pass this up.

1 pint strawberries
1/2 cup sugar, or to taste
1 cup heavy cream
1 teaspoon vanilla extract, optional

Steps:

  • Hull strawberries, then wash them and chop into 1/4-inch-thick pieces. Toss with half the sugar, and wait 10 minutes, stirring occasionally, until they give up their juices.
  • Place half the strawberries and all the juice in a blender, and puree. Pour puree back in bowl with chopped strawberries.
  • Whip the cream with remaining sugar and vanilla until cream is stiff and holds peaks easily. Fold berries and cream together, and serve immediately, or refrigerate for up to two hours.
