"Martha Stewart's Quick Cook" gets the credit for this dessert. I love creme de cassis! It is currant berry liqueur. Preparation time does not include chilling time.

2 pints strawberries, medium sized
1/4 cup creme de cassis
1 tablespoon sugar
1/2 cup water

Steps:

  • Stem and wash the strawberries and drain.
  • In a small saucepan combine creme de cassis, sugar and water.
  • Cook over medium heat until mixture is reduced to about half a cup. Chill.
  • Serve the berries in individual bowls and pour the syrup over them.

6 1-pint baskets strawberries, hulled and halved or quartered (depending on size of berries)
1 1/4 cups crème de cassis liqueur
1/3 cup sugar
2 tablespoons fresh lemon juice
3 cups chilled whipping cream
3 tablespoons powdered sugar

Steps:

  • Combine first 4 ingredients in large bowl. Let stand at room temperature 1 hour, stirring occasionally. (Can be prepared 3 hours ahead. Refrigerate.)
  • Whip cream and powdered sugar in large bowl until stiff peaks form. Spoon 2/3 cup berries and some juices into each of 20 balloon glasses. Top each with spoonful of whipped cream and serve.

1 1/4 cups creme de cassis or 1 1/4 cups strawberry liqueur
1/3 cup sugar
2 tablespoons fresh lemon juice

2/3 cup water
1/2 cup creme de cassis
1/4 cup sugar
2 tablespoons cornstarch
1 baked 9 inch pie shell
1/2 pint whipping cream (optional garnish)

Steps:

  • Mash 1 cup berries and simmer in water about 5 minutes.
  • Stir together cassis, sugar and cornstarch.
  • Add to cooked berries and cook over medium heat, stirring constantly, until thick and clear, about 6 to 10 minutes.
  • Arrange whole berries in pie crust and spoon glaze all over (Strain out crushed berries if you'd like).
  • Chill at least 4 to 5 hours before serving.

The soft, not too-sweet creams taste like a cross between an American-style pudding and a panna cotta. Keep in mind that the desserts need to chill at least eight hours.

1 1/2 cups plain whole-milk yogurt
1 3/4 cups fromage blanc*
1 vanilla bean, split lengthwise
5 tablespoons superfine sugar, divided
1 1/2 teaspoons finely grated lemon peel
1 large egg white
1 1/2 pounds strawberries, hulled, halved (about 5 cups)
2 tablespoons crème de cassis (black-currant liqueur)
Brown sugar

Steps:

  • Place 2 sieves over bowls; line sieves with cheesecloth or damp kitchen towel. Spoon yogurt into 1 sieve; spoon fromage blanc into second sieve. Cover; chill overnight. Scrape drained yogurt and fromage blanc into large bowl; whisk to combine. Scrape in seeds from vanilla bean. Gently mix in 3 tablespoons sugar and lemon peel. Whisk egg white in medium bowl until peaks form. Gently fold egg white into cheese mixture. Divide among 6 small bowls. Cover; chill at least 8 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • Toss berries, 2 tablespoons sugar, and cassis in large bowl. Let stand until berries release juices, stirring occasionally, at least 30 minutes and up to 2 hours.
  • Sift or sprinkle brown sugar evenly over each dessert. Spoon berries and juices over.
