5-Ingredient Grilled Salmon Burgers with Sriracha Mayonnaise image

Fresh wild Alaskan salmon (or even frozen fillets) produce delicious burgers perfect for every cookout. Once you taste a freshly made salmon burger, you may never want a frozen, premade patty again.

Number Of Ingredients 8

2 scallions, cut into 4 pieces
1 1/4 pounds wild Alaskan salmon, skinned, boned and cut into 6 chunks
1 lemon, zest finely grated, half juiced, half cut into wedges
Salt and freshly ground black pepper
Oil, for greasing
1/4 cup mayonnaise
1 1/2 teaspoons Sriracha
Hamburger buns or lettuce, for serving

Steps:

  • For the burgers: Cut parchment or waxed paper into four 6-inch squares. Chop the scallions in a food processor. Add the salmon, lemon zest and juice, and pulse until finely chopped, with some small pieces remaining. Divide the salmon into four mounds on the parchment squares. Shape the salmon into patties, about 4 1/2-inches wide, being mindful not to over handle. Either cook right away or cover and refrigerate the burgers for a few hours before cooking.
  • When ready to cook, preheat grill to medium heat, 375 to 400 degrees F.
  • Sprinkle the tops of the burgers with salt and pepper. Grease the preheated grill with oil and carefully flip the burgers onto the grill, parchment-side up. Peel off the parchment and sprinkle the other side of burgers with salt and pepper. Cook until the centers begin to turn pale pink and the burgers release from the grill, about 5 minutes. Flip and cook through, about 3 minutes. For the mayonnaise: Combine the mayonnaise and Sriracha.
  • Serve the burgers in buns or lettuce wraps. Top with the mayonnaise and serve with the lemon wedges.

3/4 cup Original Bisquick™ mix
1/2 teaspoon crushed red pepper flakes
1/8 teaspoon salt
1/2 cup milk
2 eggs
1/3 cup grated Parmesan cheese
6 slices precooked bacon, chopped
1/2 cup mayonnaise
2 teaspoons Sriracha sauce
Sliced green onions, if desired

Steps:

  • Heat oven to 375°F. Generously grease 24 mini muffin cups with shortening or cooking spray. Cook broccoli as directed on bag for minimum time. Chop broccoli.
  • In medium bowl, stir Bisquick mix, crushed red pepper, salt, milk and eggs with whisk or fork until blended. Stir in broccoli and cheese sauce, Parmesan cheese and bacon. Divide mixture evenly among cups. Cups will be full.
  • Bake 16 to 18 minutes or until toothpick inserted in center comes out clean and tops are light brown. Cool 5 minutes. With thin knife, loosen sides of puffs from pan; remove to cooling rack.
  • Meanwhile, mix mayonnaise and Sriracha sauce in small bowl until smooth. Top each warm puff with mayonnaise mixture; garnish with green onion.

4 grilled chicken breasts (tons of marinades and rubs on food.com or pre-packaged)
4 French baguettes or 4 buns
4 cheese, montery jack, swiss, etc. (your choice)
4 bacon, slices
1 cup fresh greens (such as romaine, spinach, etc.)
1 avocado, sliced
2 -3 jalapenos, cut into rings (keep some seeds)
1/4 cup cornmeal
1 egg
3 tablespoons real mayonnaise
2 tablespoons honey
2 teaspoons sriracha chili-garlic sauce (to taste)

Steps:

  • Mix together the ingredients for the sweet and spicy mayonnaise; refrigerate until ready to use.
  • Grill the chicken breasts.
  • Place the 1/4 cup cornmeal in one small bowl. In another bowl, whisk the egg. Slice the jalapenos and set aside. Pan fry the bacon strips until crisp and set aside on a paper towel. Dunk each jalapeno ring into the egg, followed by the cornmeal and fry in the bacon fat on both sides until golden brown; set aside.
  • Toast the baguettes or buns. Put a layer of greens on the bottom bun, followed by the chicken breast. Top with one bacon piece and the cheese. Next, place a few slices of avocado and 2-3 fried jalapeno rings. Spread the honey-sriracha mayonnaise on the inside of the top bun and place on sandwich.

1 lime , juiced
1 garlic clove , finely chopped
250ml rapeseed oil
1-2 tbsp sriracha , to taste
140g cornflour , plus a little extra for dusting
60g plain flour
1 tsp black peppercorns , toasted and coarsely crushed
1 tsp Sichuan peppercorns , toasted and coarsely crushed
160ml sparkling water , chilled
handful of crushed ice
500g sprouting broccoli , trimmed
sunflower oil , for deep-frying
1 tsp sunflower oil
3 spring onions , sliced diagonally
2 garlic cloves , finely sliced
1 red chilli , finely sliced into rings
1 lime , cut into wedges (optional)

Steps:

  • For the mayo, blitz the egg, lime juice and garlic in a food processor until light and frothy. With the motor running, add the oil in a thin, steady stream until the mixture thickens and emulsifies. Switch off, season, then fold in the sriracha. Chill until needed.
  • Slowly heat the oil to 175C in a wok or deep-fat fryer (a drop of the batter will sizzle and turn brown in 20 secs). To make the batter, mix the flours with 1 tsp sea salt and the peppers. Whisk in the sparkling water and crushed ice. Dust the broccoli first in corn flour, then dip each piece in the batter, shaking off any excess. Add the broccoli to the hot oil in batches and fry for about 2 mins or until golden and crisp. Scoop out using a slotted spoon, and drain on a plate lined with kitchen paper.
  • Heat the sunflower oil in a wok. Add the spring onions, garlic, onions and chilli, and stir-fry for 2 mins or until fragrant.
  • To serve, arrange the broccoli on plates or on a platter, scatter with the stir-fried aromatics, drizzle over the mayo and serve with some lime wedges, if you like.

Probably the sauce that you've noticed for years and years and always thought naaaaawwww. Well let me tell you, I, too, never thought to buy it until ZWT #6 Asian Tag and it's not too late for you, either. It's got a sweet heat that can easily become your secret weapon. Found this on recipes.com. It is a great Cooking Light recipe. Add meat or cheese to the fritters for the not-as-healthy take (I added Sausage, Mozzarella and Prosciutto) on the recipe. Add sour cream to the mayo to lessen the heat of the sauce if you like. One tip, make sure you use a non-stick pan for the fritters and some Pam. It definitely makes things easier. Enjoy!

1 (8 ounce) package Baby Spinach
1/2 cup panko breadcrumbs (Japanese breadcrumbs)

1 tablespoon minced garlic
1/2 teaspoon fresh ground black pepper
1/4 teaspoon baking powder
2 large egg whites
1 tablespoon olive oil, divided
5 teaspoons canola mayonnaise
2 teaspoons 2% low-fat milk
1 teaspoon sriracha sauce (hot chile sauce, such as Huy Fong)
1 teaspoon cider vinegar

Steps:

  • 1. Cut squash in half lengthwise. Scoop out seeds; discard. Place squash halves, cut sides up, in a microwave-safe bowl. Cover with a damp paper towel. Microwave at HIGH 20 minutes or until tender. Let stand 10 minutes. Scrape inside of squash with a fork to remove spaghettilike strands to measure 4 cups.
  • 2. Heat a large skillet over medium-high heat. Add spinach to pan; cook 2 minutes or until spinach wilts. Place squash and spinach on a clean dish towel; squeeze until barely moist. Coarsely chop squash mixture, and place in a large bowl. Add panko and next 4 ingredients (through baking powder), and toss well to combine. Place egg whites in a medium bowl; beat with a mixer at high speed until soft peaks form. Gently fold egg whites into squash mixture.
  • 3. Fill a 1/4-cup dry measuring cup with squash mixture. Invert onto work surface; gently pat into a 3/4-inch-thick patty. Repeat procedure with remaining squash mixture, forming 10 patties total. Heat a large nonstick skillet over medium heat. Add 1 1/2 teaspoons oil to pan, and swirl to coat. Add 5 patties to pan; cook 3 minutes on each side or until browned. Remove patties from pan; keep warm. Repeat the procedure with remaining 1 1/2 teaspoons oil and squash patties.
  • 4. Combine mayonnaise and remaining ingredients in a small bowl. Serve with fritters.
