1 pound chicken breasts
1 teaspoon olive oil
2 bell peppers, (seeded and chopped)
1 red onion, (peeled and chopped)
4 cloves garlic, (minced)
15 ounces black beans ((drained))
15 ounces fire roasted diced tomatoes
8 cups chicken broth
1 fajita seasoning packet
1/2 cup brown rice, (optional)
Possible Garnishes: reduced fat cheese, (scallions, avocado)

Steps:

  • Place a large sauce 6-8 quart pot over medium heat. Add the oil, chopped bell peppers, onions, and garlic. Saute for 3-5 minutes to soften.
  • Add whole chicken breasts, black beans, diced tomatoes, chicken broth, 1 fajita seasoning packet, and 1/2 teaspoon salt. If adding rice, stir it in with an additional 2 cups of water. Bring the soup to a boil. Lower the heat, and simmer for 20 minutes.
  • Use tongs to remove the cooked chicken breasts. Allow the soup to continue simmering to fully cook the rice, another 10-15 minutes. Allow the chicken to cool for a few minutes, then shred with two forks.
  • Once the rice is tender, add the shredded chicken back to the soup. Taste, and salt and pepper as needed.

2 tablespoons vegetable oil
1 pound skinless, boneless chicken breasts, cut into strips
1 (1.27 ounce) packet fajita seasoning
1 red bell pepper, cut into thin strips
1 green bell pepper, cut into thin strips
1 poblano pepper, cut into thin strips
1 large onion, cut into thin strips
1 (14.5 ounce) can fire roasted diced tomatoes
1 (15 ounce) can seasoned black beans
1 (14 ounce) can chicken broth
1 dash hot sauce
salt and pepper to taste

Steps:

  • Heat oil in a large soup pot over medium heat. Place chicken in the hot oil; cook, stirring only occasionally, until brown, about 10 minutes. Sprinkle fajita seasoning over the browned chicken and stir well to coat. Add the red and green bell pepper, poblano pepper, and onion to the seasoned chicken. Stir and cook over medium heat until the vegetables are soft, about 10 minutes.
  • Pour the fire roasted tomatoes, black beans, and chicken broth into the pot with the chicken and vegetables. Bring the soup to a boil over high heat, then reduce the heat to medium-low, and simmer uncovered for 30 minutes, stirring occasionally.
  • Season the soup with hot sauce, salt, and pepper to taste before serving.

Chicken fajitas in soup form! This is such a filling and flavorful soup and you'll love these tasty Tex-Mex flavors. It's loaded with chicken, rice, black beans and veggies.

1 cup dry long-grain white rice
2 bell peppers, (chopped into 1/2-inch pieces (3 cups))
2 cups chopped yellow onion ((2 small))
4 cloves garlic, (minced)
1 Tbsp olive oil
5 1/2 cups low-sodium chicken broth
1 (14.5 oz) can fire roasted diced tomatoes
4 tsp chili powder
1 Tbsp ancho chili powder
1 1/2 tsp ground cumin
1 1/2 tsp paprika
3/4 tsp oregano
Salt and freshly ground black pepper
1 lb boneless skinless chicken breast, (pounded evenly with flat side of meat mallet to 1/2-inch thickness)
1 (14.5 oz) can black beans, drained and rinsed
1/3 cup chopped cilantro
2 Tbsp fresh lime juice
Mexican cheese blend and sour cream for serving ((optional))

Steps:

  • Prepare rice according to directions listed on package.
  • Meanwhile, heat olive oil in a large pot over medium-high heat. Add bell peppers and onion and saute 3 minutes then add garlic and saute 1 minute longer.
  • Pour in chicken broth and diced tomatoes. Stir in chili powder, ancho chili powder, cumin, paprika, oregano and season with salt and pepper to taste.
  • Add chicken and bring to a light boil. Reduce heat to medium-low, cover and simmer until chicken has cooked through (chicken should register 165 degrees in center on an instant read thermometer), about 10 - 15 minutes.
  • Transfer chicken to a cutting board (while continuing to cook soup mixture to soften veggies) and let chicken rest 5 minutes, then cut into small strips.
  • Return chicken to soup, stir in cooked rice (see notes), black beans, cilantro and lime juice. Serve warm with cheese and sour cream if desired.

1 tablespoon canola or vegetable oil
1 cup diced red onion
1 1/4 pounds ground turkey breast
4 cups chicken stock
1 teaspoon crushed garlic
1 (4-ounce) can diced green chiles
3/4 cup tomato puree
1 tablespoon enchilada sauce mix (recommended: Lawry's)
1 avocado, pit removed, flesh chopped
1 cup shredded Mexican-cheese blend
3/4 cup crushed baked blue corn chips (recommended: Guiltless Gourmet)
1/4 cup sour cream
1/4 cup finely chopped fresh cilantro leaves

Steps:

  • Heat a large pot over medium-high heat, add oil, the onions and ground turkey. Saute until turkey is just cooked; stirring frequently to break up clumps.
  • Add the chicken stock to the pan and stir in garlic, chiles, tomato puree and enchilada sauce mix. Bring to a boil then reduce heat and simmer for 10 minutes. Put some of the chopped avocado in the bottom of each bowl and ladle the soup on top; stir to combine. Top with cheese, crushed chips and sour cream. Garnish with cilantro.

1 medium onion, chopped
1 medium green pepper, chopped

1 can (10 ounces) diced tomatoes and green chiles
2 tablespoons chili powder

Shredded cheddar cheese

Steps:

  • In a Dutch oven, cook the pork, onion and peppers over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer., Drain., Stir in the V8 juice, beans, tomatoes, chili powder, seasoned salt and seasoned pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until slightly thickened. Serve with cheese., Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.

2 lbs beef, cut in small cubes
2 tablespoons safflower oil
1 large onion, diced
3 garlic cloves, minced
2 tablespoons fajita seasoning mix (1 pkg)
1 teaspoon chili powder (or to taste)
2 teaspoons cumin powder
2 (14 ounce) cans diced tomatoes (I use fire roasted)
1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
4 cups broth (I use mushroom broth)
3 red bell peppers, roasted and diced
2 jalapeno peppers, fresh and diced (to taste)
1 cup spinach (I use baby spinach)
salt
2 cups corn
3 tablespoons fresh cilantro
water (as needed)

Steps:

  • Cook onions until light brown.
  • Add garlic.
  • Add beef and spices. Brown beef.
  • Add tomatoes and cook till juice is gone.
  • Add broth.
  • Cook till beef is almost cooked.
  • Add all other ingredients except cilantro. Cook for 15 more minutes or until all vegetables are ready.
  • Add cilantro. Cook 5 minutes more.
  • You can garnish with avocado, cilantro, pico de gallo, lime juice or Monterey jack cheese. You can even add a little cooked rice.
  • Note: You can leave the spinach out but it adds to a more healthy and balanced meal.
