This recipe came from a Ukrainian Cook Book. My son who is a vegetarian loved it You may also make soy balls instead of patties for a variety. I added more bread crumbs than the recipe called for. I added crumbs till the mixture no longer felt sticky. I used my blender to mash the beans. You can serve these patties without the mushroom gravy accompanied on a bun. I doubled the recipe. I made 12 good size soy patties. I'm going to make it again and next I'll try adding grated carrot, and oatmeal. I'll let you know how it turns out.

2 cups dried soybeans, cooked
1 cup breadcrumbs
1/2 cup chopped onion
1 tablespoon oil
2 eggs
salt and pepper
1/2 cup chopped mushroom
1 1/2 cups milk
1 tablespoon flour
1/4 cup chopped onion

Steps:

  • Soak soybeans over night; change water.
  • Cook soybeans until tender the following day.
  • Mash cooked beans.
  • Sauté the onion in 1 tablespoon oil.
  • Add onion to the beans.
  • Add beaten eggs, bread crumbs, salt and pepper to taste; mix well together.
  • Form into small patties or balls and place in pan; brown on both sides.
  • You can now serve your patties as is or you can put in a casserole.
  • In a pan, in 1 tablespoon oil.
  • Partly fry a medium chopped onion.
  • Add the chopped mushrooms and sauté.
  • Add flour; stir and add milk.
  • Mix and bring to a boil, stirring until smooth.
  • Pour over patties, or soyballs.
  • Cover and bake at F350°F for 30 minutes.

Soy Burger Patties image

Great for vegetarians, but tasty enough to please meat eaters. I adapted this from a conventional hamburger patty recipe. The Grapenuts is there to add a nice malty flavor and extra nutrition. Mushroom bouillon, if you have it, is nice too. But be creative - the joy of cooking is what you do to make it your own.

1 (12 ounce) package soy crumbles (I like Morningstar)
1 cup breadcrumbs
1/2 cup Grape-nuts cereal or 1/2 cup additional breadcrumbs
1 bouillon cubes or 1 package onion soup mix
2 eggs
2 tablespoons ketchup
1 teaspoon salt or 1 teaspoon soy sauce
1 teaspoon onion flakes (optional)
1 teaspoon parsley or 1 teaspoon tarragon (optional)
1 teaspoon Mrs. Dash seasoning mix or 1 teaspoon your own blend seasoning (optional)
pepper, to taste (optional)
liquid smoke, to taste (optional)
vegetable oil, for frying

Steps:

  • Mix all ingredients in medium-sized bowl (be sure to crumble the bouillon cube); let sit for 5 minutes so liquid is absorbed.
  • Heat oil in skillet.
  • Form patties about the size and thickness of your palm; or, drop large spoonfull of mixture into oil and flatten with spatula.
  • Fry patties on both sides until golden.
  • Serve as entree or with buns.

1/2 lb canned or fresh soybeans
2 Tbsp oil
1 large onion, diced
1 large garlic clove, mashed
1 c millet, cooked
2 Tbsp soy sauce
1 Tbsp miso paste
1 Tbsp tomato paste
2 Tbsp ketshup
1 egg
1/4 c wheatgerm
1/2 c flour
3 Tbsp parsley
4 basil leaves, chopped
1/2 tsp rosemary, dried
salt & pepper to taste

Steps:

  • 1. Mash soybeans
  • 2. Saute other veggies in oil.
  • 3. Cook until ingredients are dry.
  • 4. Add beaten egg, wheat germ, flour and herbs.
  • 5. Make into patties and fry in oil.

Basic Soy Burgers image

If you like Boca burgers you will absolutely adore these yummy, homemade soy burgers. You can cook your own soybeans or find canned soy beans in the health food section of your grocery store. I make double or triple batches of these and freeze them for a quick lunch

1 (15 ounce) can soybeans, rinsed and drained
1/2 cup tofu, mashed
1 teaspoon salt
1 -2 garlic clove
1 cup onion, minced
2 scallions, minced
1/4 cup parsley, to taste
2 teaspoons dried dill
2 tablespoons cider vinegar
2 teaspoons dried mustard
2 cups fine breadcrumbs

Steps:

  • Place everything except bread crumbs in a food processor or blender and puree until fairly smooth.
  • Transfer to a bowl, and add the bread crumbs. Stir until well combined.
  • Form into patties abut 4 inches in diameter and 1/2 inch thick, using about 1/2 cup of mixture for each patty.
  • Heat a heavy, non stick skillet and brush with oil. When pan is hot, add burgers and turn the heat down to medium, and cook for about 10 minutes on each side. Watch them carefully so they get nice and brown but don't burn.
  • Serve burger style.
