Steps:
- Add all the dry ingrediants and sift.
- Beat the egg yolks and add them to the milk.
- Stir the liquid ingrediants into the dry ones.
- Add your melted butter.
- Beat the egg whites until they are stiff and add them to the batter just before making.
- Pre-heat the waffle iron for 2 minutes.
- Add batter, cook and enjoy!
BACON, CORN AND CHEDDAR WAFFLES
These waffles are delicious and you could use either fresh corn or canned. It comes from Cafe 222 in San Diego.

Steps:
- Melt butter in small skillet and saute corn for 3 minutes.
- Set aside.
- Sift together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
- Slowly add the buttermilk, milk, eggs and melted margarine.
- Gently stir until combined but not smooth.
- Fold in the bacon, corn and cheddar.
- Cook in waffle maker.
CORN WAFFLES
From the book that came with my waffle maker. I make the whole batch, then freeze any leftovers, which become a quick breakfast during the week. These taste like cornbread, so you could have them for lunch or dinner with chili on them, etc.

- Place all ingredients in large mixing bowl.
- Combine until well-blended and smooth.
- Let batter sit for 5 minutes and rest.
- Pour 3/4 c.
- of batter onto waffle iron, spread with rubber spatula.
- Let batter bubble for 5-10 seconds, then close lid.
- Repeat until batter is finished.

- In large bowl, combine the flour, oats, baking powder, cinnamon and salt; set aside. In small bowl, whisk the eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended.
- Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly; do not open during baking. Use fork to remove baked waffle. Top with fresh fruit and yogurt.

MESQUITE BELGIUM WAFFLES
My friend Nancy came to visit from Tuscon, AZ this weekend. I made these for our brunch today. They were really tasty and Nancy said she really enjoyed them and would have a full tummy all the way back home :) I put strawberries, Tru whip and organic chocolate syrup on mine. I think the Yum Factor on these was definitely a 10!

Steps:
- Turn on the waffle iron and let it heat up.
- Whisk all the dry ingredients in a large bowl.
- Whisk the wet ingredients in a medium bowl.
- Add the wet ingredients to the dry ingredients.
- Whisk until just combined.
- Spray the waffle iron with oil. I used coconut oil because it doesn't go rancid when heated up.
- Using your 1/3 cup measure pour the batter on to each of the waffle spaces and let it cook.
- My waffle iron has an indicator switch that tells me when it's done, but some don't so usually when the steam stops the waffles are cooked.
- I served mine with organic strawberries, whipped cream and chocolate syrup. What a delicious treat!

Steps:
- PREHEAT waffle iron to medium.
- IN A LARGE BOWL, combine oats, flour, cornmeal, brown sugar, baking powder and salt. Add eggs, cream, milk and butter, stirring to combine. Let stand for 2 minutes.
- POUR approximately 1 cup batter onto hot waffle iron. Bake until waffles cease to steam, approximately 2-3 minutes. Keep an eye on waffle iron; these waffles crisp up quickly.
- SERVE with maple syrup, yogurt, and fresh fruit on the side, if desired. I like sweetened ricotta and fresh fruit on top with the syrup.
