BEN & JERRY'S HEATH BAR CRUNCH ICE CREAM

Number Of Ingredients 6

4 Heath bars (1 1/8 ounces each)
2 large eggs
3/4 cup sugar
2 cups heavy cream
1 cup milk
2 teaspoons vanilla extract

Steps:

  • Using a sharp knife, cut the candy bars into 1/4- to 1/2-inch chunks. You should have about a cup. Place the chunks in a bowl, cover and freeze overnight.
  • Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in the sugar, a little at a time, and continue whisking until completely blended, about 1 minute more. Pour in the cream, milk and vanilla extract, and whisk to blend.
  • Transfer the mixture to an ice cream maker and freeze, following the manufacturer's instructions.
  • After the ice cream stiffens (about 2 minutes before it is fully frozen), add the candy (broken up into pieces), then continue freezing until the ice cream is ready.

I adore Ben & Jerry's ice cream, and I adore Skor bars. This marries two of my favorite foods into one uber-ice cream!

5 hershey's Skor candy bars (if you can bear to part with them)
3 eggs
1 cup sugar
3 cups whipping cream
1 1/2 cups half-and-half
3 teaspoons vanilla extract (splurge on the real stuff)

Steps:

  • Freeze the Skor bars.
  • Beat the eggs until fluffy.
  • Slowly beat in the sugar.
  • Add the cream, the half-and-half and the vanilla and mix well.
  • Pour the mixture into your ice-cream maker and freeze.
  • While the ice cream is freezing take the frozen Skor bars and put them in a plastic bag and break them into small pieces with a knife handle or a meat tenderizing mallet.
  • When the ice cream is done, remove it from the container and mix in the Skor bar pieces.
  • Pour into a Tupperware and freeze.
  • Note: Most of the Skor bars should be crushed into crumbs, but stop abusing the candy when there are still some 1 inch and 1/2 inch chunks left.
  • Another note: Ben& Jerry's ice cream is known for it's denseness and lack of air.
  • The less air in the ice cream, the thicker the consistency.
  • You may find that this recipe fills up your ice cream maker more than you are used to.
  • One last note, I promise: You can try experimenting with this recipe, substituting Heath bars, Reese's Peanture Butter Cups, Oreos, Kit Kats, M&m's and any other fun stuff for the Skor bars.

24 regular salted soda crackers
1 cup butter
1 cup brown sugar
1 cup semi-sweet chocolate chips

Steps:

  • Preheat ove to 350. Line a 13 x9 inch pan with Parchment paper for easy clean up. Arrange crackers evenly in pan.
  • In saucepan over medium heat melt butter. Stir in brown sugar until melted and smooth. Bring mixture to a boil stirring constantly until mixture is smooth and bubbly. Boil for 2 minutes and then pour mixture evenly over cracker.
  • Bake in oven for 5 minutes.
  • Sprinkle chocolate pieces evenly over caramel mixture. Return to oven just long enough for chocolate to melt. Spread chocolate evenly with spatula.
  • Place pan in refrigerator or freezer until chocolate is firm. Cut or break into pieces.
  • Cooking time is cooling time.

It doesn't get any easier! I got this recipe from a co-worker before Christmas and I was amazed that anything this easy could taste so good. The bar is very rich so cut into tiny squares.

1 (250 g) box Ritz crackers
1 (14 ounce) can sweetened condensed milk
1 (225 g) package Skor English toffee bits (baking aisle next to the chocolate chips)

Steps:

  • Grease a 9" square pan.
  • Dump Ritz crackers into food processor and grind finely or crush finely with a rolling pin.
  • Mix with Skor bits and can of sweetened condensed milk.
  • Press firmly into prepared pan.
  • Store in refrigerator and cut into small squares.

BEN & JERRY' S RASPBERRY SORBET

This recipe is from Ben & Jerry's Homemade Ice Cream and Dessert Book and it got many ooo's and ahhh's at a dinner recently. It is sized for a countertop freezer but you can double or triple the recipe for a larger ice cream freezer. The "cooking" time is an estimate for chilling and a "soft" freeze. It will take longer if you want it hardened. I use only 1 cup of sugar and still find this sorbet plenty sweet. Also I prefer using a blender or food processer to process the raspberries, sugar, lemon juice and water. I refrigerate the result and add the wine and corn syrup just before freezing. You can't taste the wine but I think the tannins add to the complexity of the flavor which is truly excellent in my book.

12 ounces fresh raspberries (can substitute frozen, unsweetened)
1 1/2 cups sugar (I prefer using 1 cup)
1/2 lemon, juice of
1 cup cold water
1/4 cup dry red wine
1/4 cup light corn syrup

Steps:

  • Combine the raspberries, sugar and lemon juice in a mixing bowl and refrigerate covered at least 1 hour.
  • Add the red wine, corn syrup, and water when you are ready to freeze and stir gently until blended.
  • Transfer the mixture to the ice cream maker and freeze following the manufacturer's instructions.

2/3 cup Oreo cookies (coarsely chopped)
2 large eggs
3/4 cup sugar
2 cups whipping cream
1 cup milk
2 teaspoons peppermint extract

Steps:

  • Place the cookies in a bowl, cover and refrigerate.
  • Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes.
  • Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
  • Pour in the cream and milk and whisk to blend.
  • add the peppermint extract and blend again. Transfer the mixture to an ice cream maker and freeze following manufacturer's instructions.

1 cup milk
3 1/2 tablespoons instant coffee, good quality, freeze-dried
1 tablespoon ground cinnamon

Steps:

  • Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes.
  • Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
  • Pour in the cream and milk, and whisk to blend.
  • Add 2-1/2 tablespoons of the coffee and cinnamon, and whisk to blend again.
  • Transfer the mixture to an ice cream maker and freeze following the manufacturer's directions.
  • After the ice cream stiffens (about 2 minutes before it is done), add the remaining 1 tablespoon coffee, then continue freezing until done.
  • Makes 1 quart.
