CHICKEN SLOW BRAISED IN GREEN PEPPERCORNS AND COCONUT JUICE



Chicken Slow Braised in Green Peppercorns and Coconut Juice image

3 1/2 tablespoons fresh green peppercorns, plus more for garnish
2 tablespoons finely chopped garlic
3 teaspoons salt
2 teaspoons sugar
1 chicken (about 3 1/2 pounds), cleaned and chopped into quarters
2 tablespoons vegetable oil
2 tomatoes, diced
1 carrot, cut into cubes
1 tablespoon annatto oil*
8 whole red Asian shallots, peeled*
1/2 onion, cut into wedges
8 1/2 cups young coconut juice*
4 tablespoons fish sauce
4 crisp baguettes, for serving

Steps:

  • Lightly bruise half of the peppercorns in a mortar and pestle. Remove and transfer to a large mixing bowl. Add 1 tablespoon garlic, 2 teaspoons salt, 1 teaspoon sugar, and then add the chicken. Mix and coat the chicken pieces well. Cover and marinate in the refrigerator for 1 hour.
  • Bring a large pot to high heat and add the oil, remaining garlic, remaining peppercorns, and fry until fragrant. Now add the marinated chicken and sear both sides until slightly browned. Add the tomatoes, carrots, and annatto oil. Stir to combine, and then add the red shallots, onion, coconut juice, fish sauce, and remaining sugar and salt.
  • Bring the mixture to the boil and skim off and discard any impurities that rise to the surface. Turn the heat to medium-low and allow to simmer for 40 minutes uncovered.
  • Transfer to a deep bowl, garnish with peppercorns and serve with crisp baguette.

VENSION MEDALLIONS WITH GREEN PEPPERCORNS



Vension Medallions with Green Peppercorns image

Number Of Ingredients 10

1 to 1 1/2 pounds venison leg meat or fillet cut into 3 ounce medallions
2 tablespoons olive oil
1 tablespoon whole butter
3 tablespoons chopped shallots
1 to 2 tablespoons rinsed green peppercorns
1/4 cup brandy
1/4 cup red wine
1 cup game or beef stock
1/4 cup creme fraiche or sour cream
Salt and freshly ground pepper to taste

Steps:

  • The venison should be cut into medallions of 3 to 4 ounces, 1/2-inch thick and 3 inches across. Have all ingredients at the ready as this is a very quickly cooked saute method and the venison will over cook very quickly.
  • Heat the olive oil and butter in a large heavy skillet over medium heat until hot and foaming. Season the medallions with salt and pepper, and lay them in a single layer in the pan. Depending on the size of your skillet, you may need to do this in 2 batches. Char or sear quickly on each side for medium-rare.
  • Place the cooked venison on a warm platter and keep it warm while you make the pan sauce. Add the chopped shallots to the hot pan and saute for 2 minutes. Add half the green peppercorns and smash them quickly with the back of a spoon while sauteing with the shallots. Carefully add the brandy and de-glaze the pan. Observe caution when adding brandy to a hot pan and do this away from open flames to avoid flaming the brandy dangerously. Cook the brandy over low heat for 1 minute before adding the wine. Reduce the wine by half, add the stock, bring quickly to the boil and then swsirl in the cream for 1 minute. Add the medallions back to the finished sauce along with the remaining psppercorns and re-heat for 1 minute. Serve immediately.

These green beans with bagna cauda flavors make a wonderful accompaniment to any meat, fish or chicken dish. The beans are simple to cook and fairly effortless, so do resist the urge to stir too often. Allow them to sit, caramelize and shrivel to bring out all of their natural sweetness. Anchovies are tossed in at the end for a bright, salty hit that complements the sweet beans and shallots. These beans can be made ahead, and are equally delicious warm or at room temperature.

3 tablespoons extra-virgin olive oil
1 large shallot, thinly sliced (about 1/2 cup)
3 garlic cloves, thinly sliced
1 pound green beans, trimmed and patted dry
Kosher salt and black pepper
3 anchovies, minced

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium. Add shallot and cook, stirring occasionally, until golden, about 5 minutes. Stir in garlic until fragrant, 1 minute. Using tongs or a slotted spoon, transfer mixture to a small bowl.
  • Add the remaining 2 tablespoons oil to the skillet. Add green beans, season with salt and pepper and toss to evenly coat in the oil. Leave undisturbed over medium heat for 2 minutes to encourage charring, then stir and cook, tossing every 2 minutes, until most of the beans are shriveled, about 6 minutes longer.
  • Reduce heat to low and add the shallot mixture and anchovies. Cook, stirring, until well incorporated and anchovies dissolve, about 2 minutes. Season with salt and pepper.
  • Transfer to a serving platter and serve warm or at room temperature.
