SIMPLE SCRAMBLED EGGS
Slow and steady wins the race! Cooking over low heat ensures soft and luscious scrambled eggs. If you like, at the very end stir in 1/2 cup of your favorite shredded cheese, such as aged Cheddar or Gruyere.

- Lightly beat the eggs, 3/4 teaspoon salt and a few grinds of black pepper in a medium bowl.
- Melt 1 tablespoon of the butter in a medium nonstick skillet over low heat; swirl to coat the bottom and sides. Add the eggs, and cook slowly, scraping them up with a rubber spatula occasionally, until most of the liquid has thickened and the eggs are soft, about 10 minutes. (If you like your eggs a little firmer, cook them for an additional 2 to 3 minutes.) Remove them from the heat, and gently fold in the remaining 1 tablespoon of butter. Serve hot.

I saw a recipe here for Greek Scrambled Eggs and wanted to make them at work, but realized I didn't have all the ingredients so I simplified it. These are a pretty good seller when I put them up on the Specials Board.

- In a small bowl beat eggs. Add green pepper, green onion and olives (if using).
- Heat pan and coat with cooking spray or coat with oil.
- Scramble fry eggs, season with greek seasoning, when almost done top with feta, I usually add a couple tablespoons of water and cover so the feta starts to melt.
- Serve with toast and or hashbrowns or even rice.
- When I first started making this I didn't have the greek seasoning, and you can use any color peppers. I think the olives are optional, mostly because I don't like them and I find people around here don't like them either.

- In a small bowl, whisk all the eggs together, well. Set aside.
- Pour the milk, salt and butter in a small saucepan. Por the eggs in slowly.
- Cook on medium heat. After 5 minutes, mix the mixture. Wait another 2-3 minutes. Mix again. Scrambled eggs will start to form. Continue cooking and mixing until there is no or little runny eggs. If there is runny eggs, drain in the sink.
- Serve! Is good with toast, bacon or just by itself.

- Spray a pan with olive oil spray.
- Crack one full egg into the pan, adding only the egg whites of 2 other eggs.
- Sprinkle dried garlic and black pepper to taste (garlic salt can be added instead if you prefer that).
- When the egg has just hardened on the bottom (the eggs on the top should still be in liquid form), scramble the eggs.
- Squeeze any excess water from the spinach leaves and add them to the eggs. Let the spinach leaves cook until it's time to stir the scrambled eggs again.
- Cook until the spinach leaves are wilted.
- Add the goat cheese (you can use crumbles if you prefer) to the SIDE of the plate and use as a "dip". I find if you mix the goat cheese into the scrambled eggs, it dilutes the flavor of the goat cheese greatly.

When I was a newlywed 15 years ago, I burned eggs every time I made them and the only way to get GOOD scrambled eggs was to go out for them. My own mother who is a great cook extraordinaire loves these and when she just recently learned the secret was shocked at how simple it is. - In a medium mixing bowl crack 6 large eggs into the bowl and then add 6 tablespoons of cold tap water. Beat together, then add to a non stick pan with 2 tablespoons of margarine or whipped butter.
- Cook over medium heat and be vigilant by constantly stirring. When done, sprinkle with your desired amount of salt and pepper.
- * Tip for lesser eggs or more eggs per batches.
- The key is to always add one tablespoon of water per egg and one teaspoon of margarine or whipped butter per egg.
