1 boneless skinless chicken breast half, cut into thin strips
2 teaspoons canola oil
7 snow peas
1 cup fresh broccoli florets
1/3 cup julienned sweet red pepper
3 medium fresh mushrooms, sliced
3/4 cup chopped onion
1 tablespoon cornstarch
1 teaspoon sugar
1/2 cup cold water
3 to 4 tablespoons soy sauce
Hot cooked rice
1 teaspoon sesame seeds, toasted

Steps:

  • In a large skillet or wok, stir-fry chicken in oil for 6-8 minutes or until juices run clear. Remove chicken and set aside. In the same skillet, stir-fry peas, broccoli and red pepper for 2-3 minutes. Add mushrooms and onion; stir-fry for 3-4 minutes. , Combine cornstarch and sugar; stir in water and soy sauce until smooth. Add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Return chicken to the pan; cook until mixture is heated through and vegetables are tender. Serve over rice. Sprinkle with sesame seeds.

½ cup low-sodium soy sauce
½ medium orange, juiced
2 teaspoons sesame oil
2 teaspoons stevia powder
½ teaspoon garlic powder
⅛ teaspoon ground ginger
1 tablespoon vegetable oil
2 (8 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
1 cup broccoli florets
½ cup canned bamboo shoots, drained
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
½ cup chopped orange bell pepper
½ cup thinly sliced green onion
1 tablespoon black sesame seeds
1 cup cooked long-grain white rice
1 cup cooked wild rice

Steps:

  • Combine soy sauce, orange juice, sesame oil, stevia powder, garlic powder, and ginger for teriyaki dressing in a small saucepan. Bring to a boil over medium-high heat, stirring constantly; continue cooking until the mixture thickens slightly. Remove and set aside.
  • Heat a large skillet over medium-high heat. Add vegetable oil and heat until shimmering, 1 to 2 minutes. Add chicken and garlic; stir-fry for 2 to 3 minutes. Add broccoli and continue to stir-fry, 4 to 6 minutes. Add bamboo shoots and bell peppers; cook for an additional 4 to 6 minutes.
  • Carefully pour the teriyaki dressing into the skillet (watch for splattering); cook until chicken is no longer pink in the center and juices run clear, and the vegetables are tender, about 5 minutes more.
  • Remove from heat and stir in green onion and sesame seeds, reserving some of each for garnish. Serve immediately over cooked white and wild rice with the reserved green onions and sesame seeds.

1 tablespoon cornstarch
3 tablespoons hoisin sauce

1 pound boneless skinless chicken thighs, cut into bite-size pieces
2 garlic cloves, finely chopped
2 teaspoons vegetable oil
1 medium yellow summer squash, cut lengthwise in half, then cut crosswise into slices (1 1/2 cups)
6 ounces fresh mushrooms, cut in half (2 cups)
6 ounces snow (Chinese) pea pods (1 1/2 cups)
1 small onion, cut into thin wedges
Hot cooked Oriental noodles or hot cooked rice, if desired

Steps:

  • Mix broth, cornstarch, hoisin sauce, soy sauce, lemon juice and sesame oil.

There is no sauce to this recipe, and you may omit the sesame oil if desired, the chicken is still great with just the added soy sauce, but I suggest to increase if you are not using the sesame oil --- unless you have a huge wok you will need to make this in two batches so the chicken will cook evenly --- this is quick and very easy to make, to save time you may slice the breasts up 24 hours in advance --- my family like lots of heat so I most always add in 1 teaspoon crushed chili flakes, do not make this omitting the cornstarch it will not be the same --- all ingredients may be adjusted to taste, serve with cooked rice or noodles :)

8 boneless skinless chicken breasts (sliced into bite-size pieces, about 1-inch or a little larger or cut into strips)
1/4 cup cornstarch
4 tablespoons vegetable oil

Steps:

  • Place the chicken cubes in a large bowl.
  • Sprinkle cornstarch over the chicken; using clean hand toss together to coat the chicken with the cornstarch until well coated.
  • Heat 2 tablespoons in a wok over high heat.
  • Add in HALF of the chicken, then sprinkle with about 1/2 teaspoon seasoned salt and black pepper; stir-fry for about 5 minutes or until JUST cooked (do not overcook the chicken, it will cook in very little time, I use 2 smaller heat-proof spatulas for stir-frying).
  • Add in 1 tablespoon (or more) of soy sauce and continue cooking and tossing until coated with the sauce.
  • Remove the wok from heat then drizzle about 1 teaspoon seasme oil over the cooked chicken; toss until very well to combined.
  • Place the chicken in a bowl.
  • Heat the remaining 2 tablespoons vegetable oil in the wok.
  • Repeat the process with remaining chicken, seasoned salt, soy sauce and sesame oil.
  • Sprinkle lightly with sesame seeds, then chopped green onion.

3 tablespoons olive oil
3/4 lb chicken breast, cut into strips
1 lb frozen cocktail shrimp, thawed and de-tailed
1 bunch scallion, chopped into 2-inch pieces
4 -5 ounces mushrooms, sliced (original recipe calls for Shiitake)
1/2 red bell pepper, seeded and cut into pieces
6 garlic cloves, pressed
2 inches fresh ginger, peeled and grated
1 teaspoon coarse black pepper
1/3 cup soy sauce (original recipe calls for tamari (dark soy sauce)
2 tablespoons sesame oil
2 tablespoons toasted sesame seeds

Steps:

  • Cook spaghetti until al dente. Drain in colander.
  • While noodles cook, heat olive oil over high heat until rippling in a large nonstick skillet.
  • Add chicken and stir fry till golden. Add scallions, mushrooms, red pepper, garlic and ginger and stir-fry 2 minutes. Add shrimp after 1 minute. Season with salt and pepper and keep warm.
  • While spaghetti drains, add sesame oil and soy sauce to pasta pot. Add spaghetti and toss to coat.
  • Either add stir-fry to noodles and toss to mix or serve stir-fry on top of noodles.
  • Top with toasted sesame seeds.

1 tablespoon cornstarch
2 1/2 teaspoons oil
1 bunch bok choy, stalks and leaves cut in half lengthwise then in pieces crosswise. leaves and stalks separated
2 small red peppers, cut into strips
1/3 cup stir-fry sauce
1/3 cup orange juice
1/3 cup water
1 teaspoon orange zest

Steps:

  • Cook sesame seeds on large nonstick pan over medium heat until golden. Set aside. Cut chicken into chunks.
  • Put chicken and cornstarch into a ziptop bag. Seal and shake to coat chicken.
  • Heat 2 tsp oil in the same pan until hot and add chicken. Stir fry 5 minutes until opaque in center. Remove to large plate.

2 tablespoons rice vinegar (not seasoned)

3 tablespoons vegetable oil
1 large onion, halved lengthwise, then thinly sliced lengthwise
3/4 pound fresh shiitake mushrooms, stems discarded and caps quartered
1 1/4 cups frozen peas, thawed
2 tablespoons sesame seeds, toasted
Accompaniment: steamed rice

Steps:

  • Pat chicken dry and season with salt.
  • Stir together water, vinegar, soy sauce, sugar, and red pepper flakes in a small bowl until sugar is dissolved.
  • Heat a wok or 12-inch skillet over high heat until a bead of water dropped onto cooking surface evaporates immediately. Add 1 tablespoon oil, swirling wok to coat evenly, and heat until hot and just smoking. Add onion and stir-fry until golden and crisp-tender, about 2 minutes. Transfer onion to a large bowl.
  • Add 1/2 tablespoon oil to wok and heat until just smoking, then stir-fry half of chicken until just cooked through, about 1 1/2 minutes. Transfer to bowl with onion and stir-fry remaining chicken in 1/2 tablespoon oil in same manner, transferring to bowl.
  • Add remaining tablespoon oil to wok and heat until just smoking, then stir-fry mushrooms until just tender, 3 to 4 minutes. Add peas and stir-fry until heated through, about 1 minute, then transfer to bowl.

1 3/4 ounces chow mein noodles

Steps:

  • Mix vinegar, soy sauce, tomato ketchup, orange juice and honey together. Add the cornflour and stir until well combined.
  • Heat the oil in a non-stick frying pan and stir fry the chicken strips for 3-4 minutes. (If you don't use a non stick pan the chicken will stick to the pan).
  • Add the vegetables and stir fry for 4-5 minutes.
  • Add the cornflour mixture and bring to a boil.(Another tip-Don't use an overly large pan like I did or you will find the cornflour mix spreads too thin and there won't be enough liquid cook the vegetables.).
  • Meanwhile prepare the noodles according to the packet instructions, drain and add to the pan along with the sesame seeds. Mix well.

3 tablespoons Japanese soy sauce, plus more if needed (shoyu or tamari)

1 tablespoon Dijon mustard (whole-grain is nice)
1 tablespoon fresh ginger, grated
2 large garlic cloves, minced
1 tablespoon toasted sesame oil
1 teaspoon molasses or 1 teaspoon dark brown sugar

1/4 teaspoon ground star anise (optional) or 1/4 teaspoon Chinese five spice powder (optional)

Steps:

  • First make the sauce:.
  • In a bowl, combine the sherry, soy sauce, vinegar, mustard, ginger, garlic, sesame oil, molasses and red pepper flakes.
  • Slice the chicken into thin strips along the grain and place them in a small bowl. Add 3 tablespoons of the sauce and toss the chicken to coat. Set aside.
  • Cut the broccoli florets from the stalks. Reserve the stalks for another purpose. Cut the florets into small pieces about 1 1/2 inches across the top.
  • Heat a large wok or skillet over high heat. Add the peanut oil and swirl to coat the surface. Add the broccoli and stir-fry for 30 seconds.
  • Stir in the chicken, water chestnuts, cooked barley, and remaining sauce. Cook uncovered, stirring frequently, until the chicken is cooked 3 to 4 minutes.
  • Stir in sesame seeds and scallion greens. Add more soy sauce, if needed.
  • Chenin Blanc is the recommended wine to drink with this dish.

1 head of broccoli, cut florets, steamed until crisp tender 4- 5 min.

Steps:

  • 1. in a medium bowl whisk together 3 Tbsp. of soy sauce, 1 tsp sesame oil and 2 tsp. honey. add cut up chicken, toss then marinate for 20 minutes. 2. cook chicken in skillet or wok in hot canola oil for 6 minutes until browned through.transfer to serving plate. 3. in same scillet heat 2 tsp. canola oil. add white parts of onions, ginger, and garlic. cook and stir 1 to 2 minutes at medium high. 4. make sesame sauce in small bowl; wisk together broth, remaining soy sauce, remaining honey, cornstarch, vinegar and chili paste. add sauce to skillet. cook and stir for 3 min. until thickened and darkend in color. stir in remaining 1 tsp sesame oil. pour sauce over chicken. serve with steamed broccoli. sprinkle with sesame seeds and green onion tops.

  • Stir in broth mixture. Cook and stir about 1 minute or until thickened. Stir in chicken; cook, stirring constantly, until hot. Serve over noodles. Sprinkle with sesame seed.
