CORN PUDDING WITH CHIVES image

Number Of Ingredients 11

2 cups fresh corn kernels (about 4 ears)
4 eggs, beaten
1/2 cup grated monterey jack cheese
1/2 cup grated cheddar cheese
1/3 cup all-purpose flour
3 tsp sugar
1/2 tsp salt
1 cup milk
1 cup heavy cream
2 tbsp melted butter
chopped chives for garnish

Steps:

  • 1. Preheat oven to 350F. 2. In a large bowl combine corn, eggs and cheeses. 3. In a separate bowl, mix together flour, sugar and salt. 4. Add dry ingredients to egg mixture. 5. Stir in milk, heavy cream and melted butter. 6. Pour into a lightly oiled gratin dish. Make a water bath by placing the dish in a larger pan and adding water halfway up the sides. 7. Place in oven and bake for 1 hour or until a tester inserted in the center comes out clean. 8. Garnish with chives.
