Pan Seared Tilapia with Spicy Pineapple Salsa image

The Crew and I really liked the flavor and ease of preparing this fish. The varied ingredients meld extremely well... thanks, in good part, to Monika's wonderful Spicy Pineapple Salsa.

Number Of Ingredients 6

2 lb tilapia
2 clove garlic, crushed
1 Tbsp paprika
1 tsp cayenne pepper
1/2 c olive oil
salt/pepper to taste

Steps:

  • 1. Cut each tilapia piece in half.
  • 2. In a large bowl put all the ingredients, combine well, place fish pieces and coat well, marinade in fridge 30 mins.
  • 3. In a hot non-stick pan, cook 3 mins each side, don't overcrowd pan, maintain hot... top with my Spicy Pineapple Salsa (recipe posted)

4 (4 ounce) fillets tilapia
salt and pepper to taste
½ cup all-purpose flour
1 tablespoon olive oil
2 tablespoons unsalted butter, melted

Steps:

  • Rinse tilapia fillets in cold water and pat dry with paper towels. Season both sides of each fillet with salt and pepper. Place the flour in a shallow dish; gently press each fillet into the flour to coat and shake off the excess flour.
  • Heat the olive oil in a skillet over medium-high heat; cook the tilapia in the hot oil until the fish flakes easily with a fork, about 4 minutes per side. Brush the melted butter onto the tilapia in the last minute before removing from the skillet. Serve immediately.

Found in Cooking Light Magazine, April 2007, Kate Washington. Use fresh pineapple chunks with this dish, serve with coconut rice (use light coconut milk for some water to cook) & add toasted coconut flakes; & a salad of baby greens with tossed lime dressing to round out your menu.

2 teaspoons canola oil
1 teaspoon cajun seasoning
1/4 teaspoon kosher salt
1/4 teaspoon red pepper flakes
4 (6 ounce) tilapia fillets
1 1/2 cups chopped fresh pineapple chunks
1/3 cup chopped onion
1/3 cup chopped plum tomato
2 tablespoons rice vinegar
1 tablespoon chopped fresh cilantro
1 small jalapeno pepper, seeded and chopped
4 lime wedges

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat.
  • Combine Cajun seasoning, salt, and pepper in a small bowl.
  • Sprinkle fish evenly with spice mixture.
  • Add fish to pan, and cook for 2 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
  • Combine pineapple, onions, tomatoes, rice vinegar, chopped cilantro & chopped jalapeno in a large bowl, stirring gently.
  • Serve pineapple mixture with fish.
  • Garnish with lime wedges.

Yield 8 servings (2 cups salsa).

Number Of Ingredients 10

2 cups cubed fresh pineapple
2 green onions, chopped
1/4 cup finely chopped green pepper
1/4 cup minced fresh cilantro
4 teaspoons plus 2 tablespoons lime juice, divided
1/8 teaspoon plus 1/4 teaspoon salt, divided
Dash cayenne pepper
1 tablespoon canola oil
8 tilapia fillets (4 ounces each)
1/8 teaspoon pepper

Steps:

  • For salsa, in a small bowl, combine pineapple, green onions, green pepper, cilantro, 4 teaspoons lime juice, 1/8 teaspoon salt and cayenne. Refrigerate until serving., Mix oil and remaining lime juice; drizzle over fillets. Sprinkle with pepper and remaining salt., Grill fish, covered, on an oiled rack over medium heat or broil 4 in. from heat until fish just begins to flake easily with a fork, 2-3 minutes on each side. Serve with salsa.
